Ingredients:
The Zest of One Lemon
Sugar 1 Cup ( 200g)
Extra virgin Olive Oil 1/3 Cup ( 85 ml)
Milk 1/3 Cup ( 85 ml)
Eggs 2
Pinch of Salt
Lemon juice 2 tbsp
Vanilla Extract 1 tsp.
Flour 2 Cups (280g)
Baking powder 1 tsp.
Baking Soda 1/3 tsp.
Zucchini grated and lightly squeezed 1 1/4 Cups. The weight of a whole zucchini was about half a pound ( 220g)
1/2 Cup Powdered Sugar
1 tbsp Lemon Juice
The size of my cake mold is 9x5x2 inches (24x13x5.5 cm)
