A good thing to do with a large zucchini is to slice it in half, scoop out the seeds, and stuff it with Italian sausage, bread crumbs, cheese, and some other seasonings, and then bake it at 350° until soft and browned on top. 😋
I was a Director of a day care center with 120 kids when I had a huge crop of zucchini from my home garden. Luckily I had a fantastic cook who made tons of zucchini bread with cinnamon spices and a chocolate zucchini cake that the kids loved! She used so much zucchini in them that they actually legally counted as a serving of vegetable! She also made a summer vegetable side, basically using whatever I brought in, with zucchini summer squash tomatoes carrots etc.

I really hate commenting with warnings, but if your zucchini are this big, especially with the US heat waves, taste a little bit before you do anything with it. If it the taste is bitter, they are poisonous because of their curcubitacine (?) levels. That poison can be lethal. The poison has been mostly bred out of industrially grown zucchini, but it can sometimes occur in homegrown zucchini, e.g. because of cross-breeding or heatwave growth spurts. The brownies look so amazing and I hugely enjoyed the video! I just want you to take care. ❤❤❤
I don't think people need to worry. The worst that could happen with homegrown zucchini would be a bit of a stomachache. (And the brownies would be very bitter.) The few reported cases of poisoning in the US have been from eating wild gourds, or from hybrids of wild gourds and squash.

One of my favourite ways to use up excess zucchini (especially ones that have gotten huge like these) is in...pretty much any dessert recipe that calls for chopped apples, I guess? Emmy, I made carrot cake muffins with shredded zucchini. The shreds disappeared in the baked muffins. I also squeezed the water out of the zucchini before I put it in the batter. They were moist and very good. You could not even tell the zucchini was in there, at all.
You describing the difference in cocoa powder using science reminds me of Alton Brown. He explained the differences as well. You're the female Alton Brown. Or a version of Ms. Frizzle. 😉 Yes, it's healthy now. The zucchini cancels out the calories and fat in the brownies. 😉😄
Was not expecting to wake up and learn the difference between natural and dutch processed cocoa powder and when to use each today...Emmy is a constant delight!
Hello Fresh flat out lies about being less wasteful. Their experiment had dorm students buy full size groceries, make a single meal, and trash the rest.
Subtitles at 6:23 as Emmy pours the mixture into the pan: "[Applause]" Oh my word, literally SAME, haha. My taste buds are absolutely applauding the looks of that batter.
Yeah when we would do a garden those suckers would grow and multiple like crazy! We made lots of zucchini bread, muffins and fried tons too. We'd also shred it and then freeze it so we could make bread with it in the winter. Even still we'd usually have to give a bunch away because there was just so much. But it's always nice to get to share with others. Never heard of using it in brownies though!
My zucchini brownie recipe is very different, and it is a family favorite, so I am sharing. Zucchini Brownies 1/2 cup soft butter 1/2 cup cooking oil 1 3/4 cup sugar 2 eggs 1 tsp vanilla 1/2 cup sour milk 2 1/2 cups flour 4 Tbsp cocoa powder 1 tsp baking soda 1/2 tsp ground cloves 1/2 tsp salt 2 cups finely chopped zucchini (not blended!) 1/4 cup mini chocolate chips (semi sweet is what I use.) 1/4 cup finely chopped nuts Cream together butter and sugar, add eggs, vanilla, and sour milk. Sift in flour, cocoa powder, baking soda, and spices. Stir. Fold in zucchini pieces. Pour into a greased and floured 9x13x2 pan. Sprinkle tops with nuts and chocolate chips. Bake in preheated 325° oven for 45 minutes. These are more cakey, but very moist and almost a spice cake.
If you run out of ways to use zucchini, an old fashioned English recipe (probably 'hard times') is marrow and ginger jam where a marrow was/is a variety of summer squash. I have used overgrown zucchini to make it. The zucchini, which has hardly any taste, is flavoured by the ginger and it's delicious. I also made a small batch using rose scented geranium leaves, beautiful!
Those zucchini are fabulous! When my husband and I started growing our eggplant-sized zucchini we found a recipe for zucchini fritters that we make essentially as a substitute to chicken or eggplant parm and pair it with pasta and garlic bread. It's delicious and uses a ton of shredded zucchini. The juice you squeeze out makes the compost happy too! You should try making zucchini fritters. I think you'd enjoy them.
Zucchini makes a really great parmesian. It's not as tender as eggplant but it's also doesn't require all the prep that eggplant does. It's pretty much just good to go.
My family has a garden and we make zucchini fries, zucchini noodles for pretty much all pasta stuff, and cut them in zucchini disks and fry them, lots of things to do with it and all super yummy!
One of our families favorites is zucchini loaf it's super good. Also chocolate beet cake is awesome and are all great ways to use extra veggies from the garden
My husband planted three zucchini plants so we have been making a ton of zucchini baked goods. I also shred and dry it in my dehydrator to add to soups and sauces later in the winter.
My family has been making my aunt's chocolate zucchini cake recipe for as long as I can remember, over 30 years. It has to happen at least once a year. I plant 4 plants and it's just my daughter and I, I process them and freeze shreds and slices. Will definitely try these!
I have 8 zucchini plants, I have way too much in my house so I'm glad you posted this. I've been making it into zucchini bread but there's only so much of that you can eat lol definetly going to try this recipe!
Google Anne Willian's Tian de Courgette recipe, it's a zucchini Gratin but I cut out 1 egg and top it with herbed breadcrumbs I've made for years now favourite summer recipe. Great as leftovers....
Hi Emmy! When I looked at the printed recipe on your web site, the butter is missing from it - good thing I paid attention to your video! I made a few swaps with mine - didn’ t have espresso power, so I used a T. of Kahlua (yes!), and added a 1/2 c. or so of walnuts, plus another couple T. of flour. The flour made the batter a tiny bit thicker, and the brownies were still very moist. Thanks for sharing your recipe, and as always, I really enjoy your videos!
There's a recipe that calls for natural cocoa and for almond or some other type of nutt flower so that the end result is completely sugar free! I prefer to use monkfruit powder when I make that but you can successfully use splenda. I call them healthy brownies because they have no carbs and no sugars but taste absolutely awesome.
I RAN to your comments as soon as I saw a video on Facebook of something called Ghewar! I thought of you immediately, this is so up your alley! Definitely worth looking into! Again it’s Ghewar! Looks to be an India sweet!
I'm curious, are you guys a frosting or no frosting when it comes to brownies? Growing up we never did frosting and I didn't even know people did til I was probably a teenager. I personally prefer no frosting as the brownie is rich and moist all on it's own I don't think it needs anything added to it. But I know it's an essential for some people.
If the brownie is fudge-like then no, if it's cake-like then yes, I add frosting. Some brownies are more like a rich cake, so I wonder if it's a regional thing to call it a brownie.
@@ellep2290 huh never thought about it! Now I'm kinda curious if you went to different regions and asked people what their definition of a brownie was, what they'd say. Also wondering if depending upon their answer, would there be a direct connection to whether they say frosting or no frosting.
I tried this recipe yesterday. As you mentioned at 9:07 it does taste a bit cake like. I personally would consider this recipe to be more like a cake than a brownie. With that being said it is absolutely delicious! I would definitely make it again and it's a great way to use up extra zucchini. It's definately better tasting than a lot of recipes I've tried and definitely better than chocolate box mix. This will be my go to recipe for the summer when I'm swimming in zucchini. Thanks Emmy!
Zucchini makes an amazing lemon drizzle cake too. My lovely neighbour is always baking for us and she made us one, I think she grates the zucchini, though 🤔. The brownies look delicious 😋. If you want to make it even healthier, store them on a high shelf - it's a well known fact that calories are frightened of heights and will jump out of any food left on a high shelf. 😉 😄
Emmy, I absolutely adore how you always include the chemistry of baking in your videos. 💕 Years ago; before I went to culinary school (I’m a pastry chef), I entered a baking contest at a local fair. There were several categories, but the one I most wanted to enter and win was an original recipe bake off. I (and all the other potential contestants) had to submit an original recipe I’d developed on my own. Then I had to take a sample of the baked good to the 4H committee a week before the contest. (All of the agricultural contests were run by the local 4H). If you were accepted, the committee would decide in which category your baked good belonged and notify the accepted recipients. I won the blue ribbon for my category! Yes this is relevant to your video...😂🤣 I developed a chocolate cake recipe that revolved around using molecular gastronomy, which at the time was a brand new concept, yep I’m that old. 😆 Anyway, while developing my recipe I came to the conclusion that I absolutely could not use Dutch processed cocoa powder. It took me FOUR sunken in the middle and half baked cakes to finally realize my mistake. Trial and error since I wasn’t lucky enough to have an “Emmy” at my fingertips back in the day. ✌🏻😆😊
Costco sells zucchini-based muffins in various flavors: carrot, blueberry, chocolate, etc in their freezer section, which I often eat with my breakfast. All of them Are 'Da Bomb'!
with the massive zucchini my mom grows every year, we get a roll of hot pork sausage, brown it up in a pan, chop up 3 or 4 bell peppers of different colors, throw those in to soften a little, and chop up half a giant zucchini to add to the peppers and sausage. drain the liquid, then add a can of tomato sauce and serve over pasta with mozzarella and parmesean cheese
Honestly, I kinda yawned when you first said "Dutch Processed," but as always, you delivered a lot of info I hadn't heard before. This is a confession of guilt. I'm sorry for doubting you 😂

Or a version of Ms. Frizzle. 😉
Yes, it's healthy now. The zucchini cancels out the calories and fat in the brownies. 😉😄
She def gives Ms. Frizzle vibes
@@nononodontphunkwithmyheart
Yep.
Emmy "takes chances, makes mistakes and gets messy". 😄
I’ve often wondered about how they figured it was less wasteful. How do you know this is what they did? I’d love to learn the details.
Lol fine Emmy I’ll eat my vegetables! Jeez!!!
I have a zucchini in my fridge… I hope that my brownies will turn out delicious 👩🏻🍳
Subtitles at 6:23 as Emmy pours the mixture into the pan: "[Applause]"
Oh my word, literally SAME, haha. My taste buds are absolutely applauding the looks of that batter.
Definitely have done this and loved it- I made zucchini pineapple before- that was pretty fun!!!!
I just have to ask - what in the world is zucchini pineapple, is it like you're making zucchini taste like a pineapple?? :O
@@michanforever yes that is it- you chop it up and can it with pineapple juice- it is quite fun and great on ice cream!!!!!
One of my summer favorites is chocolate chip zucchini bread!
Not having the best day, but here comes Emmy to brighten me up right on cue ☺️
Yeah when we would do a garden those suckers would grow and multiple like crazy! We made lots of zucchini bread, muffins and fried tons too. We'd also shred it and then freeze it so we could make bread with it in the winter. Even still we'd usually have to give a bunch away because there was just so much. But it's always nice to get to share with others. Never heard of using it in brownies though!
Is that a zucchini or are you happy to see me? 🤣
My zucchini brownie recipe is very different, and it is a family favorite, so I am sharing.
Zucchini Brownies
1/2 cup soft butter
1/2 cup cooking oil
1 3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup sour milk
2 1/2 cups flour
4 Tbsp cocoa powder
1 tsp baking soda
1/2 tsp ground cloves
1/2 tsp salt
2 cups finely chopped zucchini (not blended!)
1/4 cup mini chocolate chips (semi sweet is what I use.)
1/4 cup finely chopped nuts
Cream together butter and sugar, add eggs, vanilla, and sour milk.
Watching Emmy brings me comfort always.
"Because it makes it more delicious" is such a good thing to say about an ingredient.
I’ve seen this thumbnail before, but in person and the woman was holding a mini zucchini. It didn’t break my heart. She still had a smile.
I love fried squash and zucchini. Flour, egg, breadcrumb, fry, eat. Such yum!
You're just Great, and I love the Little Emmy Illustration, so Cute!
@@maven7550 ohhhhh thank you!!! I'll check that out :)
That fun fact about type of cocoa powder was very interesting! I feel like I should remember it for future use
Ive always loved zucchini bread but now I have got to try this zucchini brownie recipe
I can NOT wait to try this recipe! So cool Emmy.
Yes! One of my favoutires "cheating" recepies!😋😈 The faces of my friends when I tell them what's inside those chocolate gooey goodness!😂
You dont know how much I've been hoping for this recipe!!
I just made these! I doubled it with no issues. The texture is interesting but it’s still really good. 😄
These look super yummy!
No frosting! I agree, they are rich enough
Yummy! I love zucchini relish/chow chow. The joke is, don't answer the door because it's zucchini season! All it takes is one good plant.
I LOVE zucchini brownies! I hope you had some left over to try the next day as they're always so much nicer the day after you baked them
When she cuts the huge zucchini and make the "haa" sound at 2:58. LOL This is awesome! I can make turn this receipe into a keto version brownie.
Emmy, I absolutely adore how you always include the chemistry of baking in your videos. 💕
Years ago; before I went to culinary school (I’m a pastry chef), I entered a baking contest at a local fair.
Yes this is relevant to your video...😂🤣
I developed a chocolate cake recipe that revolved around using molecular gastronomy, which at the time was a brand new concept, yep I’m that old. ✌🏻😆😊
I made this tonight and it is PHENOMENAL. THANK YOU EMMY. Made a great “guessing game” too 😂 my family had no idea zucchini’s could taste so good
I reached out suggesting this but in cake form! Great to see it ! : D
Emmy, you make me feel like everything is okay.
Emmy’s videos always make me happy
I love zucchini brownies! The best ones I've done had a frosting made by adding melted chocolate to whipped yam & it was sooooo good!
Costco sells zucchini-based muffins in various flavors: carrot, blueberry, chocolate, etc in their freezer section, which I often eat with my breakfast.
All of them Are 'Da Bomb'!
Thanks for sharing... surprised at the texture. I'll have to try these.
Have a blessed weekend.
with the massive zucchini my mom grows every year, we get a roll of hot pork sausage, brown it up in a pan, chop up 3 or 4 bell peppers of different colors, throw those in to soften a little, and chop up half a giant zucchini to add to the peppers and sausage. drain the liquid, then add a can of tomato sauce and serve over pasta with mozzarella and parmesean cheese
Nice one as always. I always enjoy watching you.
Every time Emmy say itadakimasu I ALWAYS remember this girl asking in the comments "what etaraky ball mean??" LOL
Honestly, I kinda yawned when you first said "Dutch Processed," but as always, you delivered a lot of info I hadn't heard before. This is a confession of guilt. I'm sorry for doubting you 😂
thorughly enjoyed the mini food science lesson on dutch vs. natural cocoa powder❤️
This is so cool! My grandma always makes an apple pie.. but no apples just zucchini and it’s fantastic!
Never tried Zucchini brownies but I have made Fudgy Beet Brownies and they are actually delightful. The beets have a sweet and earthy flavor that pairs very nicely with dark chocolate.
Fried zucchini sticks are so good at the local Greek restaurant. The batter is light yet crispy and with tzatziki sauce a perfect snack.
I tried it today and i highly recommend it,its soooo fudgy and moist, thank you so much
