I watched your pie crust video yesterday and decided to attempt to try making a homemade crust. (For the 100th time in my life) I usually do store bought crust because I suck so bad. My pie crusts shrink so bad that the crust walls are not even at all. They have cracks and one time it was so thick it broke a spatula when trying to cut a slice of pie. 😂 Anyway. I followed your recipe, tips, and hacks. I opened my oven to find a whole pie crust. It had sides intact to where I could actually add a filling to it. Although I didn’t have a filling because I wasn’t expecting to have a usable pie crust. I ended up making a chicken pot pie filling and then made a top crust which also turned out. 😂 It’s not beautiful like yours but it tasted so good. I couldn’t believe I was able to transfer it to a pie plate. It usually tears up and I normally have to toss it. I even took a picture and posted it to fb. 😊 I’m so glad I came across your videos. Thank you!!

FYI if your bread is too moist or drenched then it’s because you need to squeeze out as much zucchini liquid as possible. A great brown sugar substitute I’ve used often is coconut sugar. It’s a milder flavor of brown sugar but it’s perfect and stores well. It can get stiff just like brown sugar but is easy enough to break it up. That’s what I’ll use in my zucchini bread and I recently learned you can mix or swap summer or yellow squash!

I made this tonight, flavour is beautiful, but I probably squeezed out the zucchini too much and is was too dry. I made one loaf, and used bob's 1:1 GF flour. In my experience, GF baking sweet bread often ends up gluggy, so I thought reducing the moisture in the zucs was necessary, unfortunately it wasn't. So I'll have to make another one!

I just had to have the thermostat replaced in my oven. When the tech was testing the repair I noticed that when first started up and the readout would say 350 it wasn’t there on the digital test thermometer. I questioned the tech and he said when you first turn oven on to preheat the readout will say one thing but it really won’t be that temp yet. The oven has to heat up the walls, racks, etc. to get a true reading. I found after a true preheat the reading on the oven thermometer is true and holds.

People usually store frozen shredded zucchini by cup amounts in ziplock bags in their freezers. Most zucchini bread recipes use cup amounts of zucchini with fractions of a cup amounts if necessary. Do you weigh the zucchini before or after you shred it. Before would be more accurate, but I don't think anybody freezes it by pound chunks to shred later. How many cups are in a pound of shredded zucchini? I hate weighing stuff if I don't have to, even though it's more accurate. In this case an unnecessary pain in my opinion. Recipe seems great, but still wondering how much zucchini to use in it. I don't want to use "baker's percentages"
