This reminds me of my mother.She made the best zucchini bread.She would get the recipe from her old cook book.Love her cooking.I hate she died in 2011.I really missed her cooking and baking.The way she cooked she could of been a chef or owned her own restaurant.

I researched several videos before I decided to try and because I am not a baker; however, my 2 zucchini breads came out perfect just like you instructed. You are very informative and explained the purpose for the ingredients as well as options. For example, no other videos share info about draining vs not draining the zucchini! I was able to determine the type of texture I prefer than to hit or miss. I even added an additional tsp of vanilla because I too love vanilla! Lol Thank you for sharing your family's recipe.

I have almost never baked a day in my life. That being said, when I couldn't get anyone to make this, I came to youtube and was led here because of the simple instructions. Needless to say, this has been a hit for everyone who has tried it and they can't believe I made it, so despite being chuckled at a few times for watching a RUclips video to do it, I had a 100 percent approval rating😂. Dear Gina...your baking techniques are remarkable! I made your coconut poke cake last weekend for my Son's new home cookout...my sons said "mom that cake was gone" they said it was a hit! So thank you...I did not get to taste it, because you know, you can't cut it! Lol! But I felt comfortable that it was enjoyable. The ingredients were so fresh. The sweetened coconut was so moist and it smelled delicious...my husband and I didn't stay because it started at four, and our bedtime was approaching! Lol! But we took the cake over around two along with potato salad, and the young folks had a very nice time. Thanks again. We have a new family favorite! Geesh! Can't wait to taste it for myself...
Diane here. You said you were afraid to coat. Your pans with cinnamon well I did it. With sugar and it turned out real well ,but I don't know if I would try try the cinn. It seems a little to much cinn. I love your recipes keep up the good work.

How do I freeze the second one?
Yumandme!!!..I used coconut sugar for the brown sugar and white monkfruit sugar for the white. Will make again using almond flower and coconut flour. Thanks soooooo good.

I made 10 batches this summer, and vacuum sealed & froze grated zucchini for 12 batches during the winter. My recipe calls for a can of crushed pineapple, which is delicious! I did both individual loaf pans & 1 lb loaf pans. My family & friends want me to enter my zucchini bread in the CA state fair next year...we’ll see!! And your right...it is BEST with butter on it!!!

I made this last night and OMG it turned great and I had never made Zucchini bread before. I must say that I woke up the next day eating a slice with a banana 🤣. I thought I was the only one that love vanilla and I added some too before I mixed it all up. I will be making this over and over again and also adding bigger pecans. My nuts did blend in as well with your trick. Thanks again and God bless
Hi Gina, I just finished making your recipe for the bread and it is great!!! Very moist! I was so worried about all the sugar that your recipe called for but it is not too sweet at all. It's perfectly sweetened. I did add the raisins even though you couldn't because of your family not caring for them. It's great and moist! Thanks!

Thank you so much for this recipe! I just HAD to try the cinnamon dusting on the pan you mentioned and it’s just delightful, it doesn’t make the bread too cinnamony, and gives a wonderful toasted, lightly spicy cinnamon nuttiness to the browned outside of the bread. If you try it I recommend dusting the oiled pan with sugar first, and then dusting with cinnamon if you aren’t a fan of in your face spices like I am, plus it makes a wonderful, thin crispy coating on the outside of the crust. Try 1 drained 8 ounce can of pineapple added to your zucchini batter before baking. This is so good and moist.
I tried your recipe and I love it. I added the additional vanilla extract, but I also added almond extract, 1 tsp of ground ginger and allspice. My family loved it. Thank you for sharing and God bless you. I also loved the powerful prayer at the end too. ❤️
It DOES LOOK amazing! ! I usually like to ADD some chocolate chip's as well. With either MILK or DARK chocolate chips. YUMM-Y !! (And...I also smother my piece with a layer of butter as well). 😉😛

I use dried cherries instead of raisins. Superior flavor. Watching to convert my oven recipe to air fryer.

My Mom use to make this a lot. I love it. I would always pick out the nuts. If she would make a cake that had frosting she would leave the nuts off half of it. I love cashews but no other kind. I know this is an older video but I some how missed it. I actually have a big zucchini that I was trying to figure out what to do with it. I now know. Thanks!
