    We use the same recipe! Our zucchini bread sells out every week at the Farmer's Market. If you have a food processor, you can use the shredding blade to shred your zucchini. Thanks for sharing!

    Actually it was another dough for making 2 loaves. I went a little bit further and made Zucchini Muffins putting this dough into the muffin or cupcakes tins. Thank you! They turned out really well! Great recipe! I baked at 325F but with Convection.

    I know I mentioned your Pyrex before but I love it!!!! I made so much zucchini bread and I think I have some in the freezer still, I think I need to thaw it out and eat some tonight, LOL!

    I LIKE you recipe I Will modify a bit, no sugar, but use bananas, applesauce & MAYBE some agave... AND I'll add in 1+ cup of each walnuts and raisins... I MIGHT need to tweak other ingredients but your starting point is great. Thanks for posting ! ! !

      RECIPE FOR MOIST ZUCCHINI BREAD***
      3 Cups Flour
      1 t Baking powder
      1 t baking soda
      1 t salt
      3 eggs
      1 c cooking oil
      3 t cinnamon
      2 &1/4 cups Granulated Sugar
      3 t vanilla Extract
      2 C Shredded Zucchini
      1 C chopped walnuts (optional)
      Preheat your oven to 325 * Grease 2 8x4 inch bread pans
      ~In a bowl, mix flour , baking powder, baking soda, cinnamon and salt together
      ~In another bowl, mix together eggs, oil, sugar and vanilla extract. Pour the mixed dry ingredients into the wet ingredients and mix.
      ~Add zucchini and nuts and mix thoroughly. Pour mixture into both pans
      ~Bake for 45 minutes and check. If not done, continue baking until your knife comes out clean.
      ENJOY

    My husband would never eat zucchini bread because he hated vegetables; I made the batter into a slightly thicker batter and dropped heaping tablespoons amounts on the a cookie tray and baked them. They flattened slightly with a rounded top and were absolutely delicious. I left them on the counter and my husband did not know what they were, tried them and loved them!!! From then on, he would eat the zucchini cookies but still never would eat the bread. Maybe the consistency???

    This was the best zucchini bread I’ve made. I cut the sugar down to one cup and it was perfect. I made one big loaf.

    you can quarter a large zuke lengthwise before shredding to make it easier for little hands

    I'm just gonna go ahead and say "Go ahead and"... Did something change in the recipe between making the large loaf and the smaller ones? The batter in the smaller ones looked like it was thinner.

      Recipe was the same but the smaller ones was a different batch since we had to make more. All the same recipe but maybe the zucchini I used in smaller ones maybe were juicier?? All turned out the same.

      It so happened a neighbor gave me 2 zucchini today.I am going to make one tomorrow.Glad the recipe doesn't call for milk cause I ran out of it.I only had zucchini bread once and it was good.Thanks to you I can make it now .     I got a small loaf of zucchini bread at an Amish stand at a farmers market. It was the moistest that I've ever tasted, mine is usually dry:-( What am I doing wrong?

      Have you tried this recipe yet? Sometimes, people drain their zucchini first... that could be why. I didn't drain mine, and it turns out Moist and yummy.

    Makes 2 loaves -1 large or 5 mini
    2c zucchini
    3c flour
    t salt, baking powder, cinnamon
    3 eggs
    1-c avocado oil
    Sugar 2 1/4 white sugar
    3t vanilla
    Mix dry & wet ingredients
    Oven 325 degrees
    Mix in 2 c shredded zucchini
    Grease loaf pans
    Bake 45 minutes

    You should try my recipe it is moist & delicious. To start off I shred my zucchini several hours before I make the bread so the moisture can drain off. 3c.unbleached flour,1c.ground oats, 2t.each baking powder,baking soda,cinnamon
    & all spice, 1t.salt. In a separate bowl mix four large eggs, 1c.granulated sugar,1c.brown, 1cube melted cooled butter, 2T. Lemon juice, 2 pounds shredded zucchini. Mix well and add to the flour.Gently fold the dough do not over mix.
    Grease bottom & sides of 2 loaf pans.Put parchment paper on bottom & up sides.Bake temp.375 time 50 minutes. Add raisins or nuts.

    Instead of vanilla I put shedder lime peel and add some walnuts, no cinnamon

    You ladies need to buy yourselves a food processor making zucchini bread would be much easier. After shredding my zucchini I lay it out on kitchen towels to lessen the moisture.

    You should just keep the end part for easier holding when shredding since you are cutting such a big chunk out! Too much waste!
