Okara Sea Burgers [gluten-free + vegan]

  • Is this a fishless burger or more like a no-crab cake? You decide. This savory patty is pan-fried crispy on the outside but tender on the inside. A little bit of nori helps to bring that fishy flavour while leaving our fishy friends in the ocean!
    I imagine this is what a crab cake is like as they are kind of delicate, but then, I have only had crab cakes once in my life. The flavour though, is very much like a deep-fried “filet o’ fish,” but the texture is something else. Not at all in a bad way, I actually love them! Okara is full of fiber though, so just one small sea burger is quite filling.
    WHAT THE HECK IS OKARA?
    Okara is the pulp leftover from making soymilk. It's actually full of protein, fiber and other nutrients. You can also sometimes buy it from Asian markets, usually frozen.

    OKARA SEA BURGER RECIPE
    Makes 6-8 patties

    INGREDIENTS
    1 1/4 cup Okara (leftover pulp from making soymilk) [215g]
    1/4 sheet nori, cut into confetti (about 1 tablespoon) [15 ml]
    1 tablespoon miso paste [15 ml]
    1 small potato, cooked
    1-2 stalks green onion, minced (about 1/4 cup) [60 ml]
    1 teaspoon onion powder [5 ml]
    1 clove garlic, minced [about 5 ml]
    1-3 tablespoons double strength vegetable broth, or as needed [30-90 ml]
    2-3 tablespoons of cornstarch, or as needed [60-90 ml]
    Cooking oil as needed
    Pinch of salt
    DIRECTIONS
    Combine all the ingredients except for the broth and cornstarch.
    Mix the ingredients very well.
    Test the mixture to see if it will form a patty without breaking apart. If the mixture is too dry, add double strength vegetable broth a tablespoon at a time until the desired consistency is reached.
    Take 2 to 3 tablespoons of the mixture and squeeze it into a ball. Pat it down on the top and along the sides to form a burger shape. You may make your patties larger or smaller.
    Coat the patties in cornstarch by pressing them gently in a plate with some cornstarch on it.
    Heat a non-stick pan on medium high heat, along with one tablespoon of cooking oil.
    When the pan is hot, sprinkle a pinch of sea salt all over the surface.
    Add the okara patties, leaving at least once inch of room around each patty.
    Cook for 2 to 3 minutes per side, until nicely golden brown.
    Remove and serve!
    Enjoy!
    NOTES
    The ingredient amounts are approximate. Feel free to add or take out any of the spices or flavouring ingredients, however the potato acts as a binder so keep that in there or use another binding ingredient.
    If you have issues with the okara still tasting raw, you may want to steam the okara first before making these burgers.
    Also, make sure you cook the patties thoroughly. Uncooked okara tastes nasty. Seriously.

    You could actually make tempeh from okara. We normally do that in Indonesia. It is called tempe gembus or tempe menjes (okara tempeh). Just steam the okara for about an hour than roast it using a skilet until dry. Let it cool. Once cool, sprinkle the tempeh starter and mix it well. And the rest is just as simple as making the soy bean tempeh. You can use the okara tempeh for burger, stirfry and many other delicious food. Or you can just make tempura.

    I added some Thai herbs into the mix (julienned lime leaves, chilli, a couple of teaspoons of tom yam paste, a lot more garlic and a chopped onion) and threw in the zest of a whole lemon AND IT WAS SO AMAZING!!! And okara is so filling, I'm still feeling satiated from eating 3/4 of that palm-sized patty from my taste test 4 hours ago. Told my family that they were Thai styled 'fish cakes' and they all thought it was delicious -- and they aren't even vegetarian! Thank you for opening up a whole new world for me :') might be adding some dried shiitake powder for that ultimate umami bomb in future.

    OK, had to share. Because, I don't cook with oil, I did a trick to make my Sea Burgers crispy on the outside. I got extra strong veggie broth "Better than Bouillon" paste, only 1/2 tsp. Mixed it with 3 Tbsp water and a tsp of cornstarch. Coated my Sea burgers on the outside with this mixture and then immediately pressed my Sea Burgers in Panko bread crumbs. I put my oven on at 350 F/180 celsius and baked on parchment for 60 minutes. I could have put the oven on at 450 F/230 celsius for 30 minutes, but... I was making home made buns from your other recipe at the same time. So.. I put my buns in there after they rose for the second time for 15-20 minutes until golden.     I just made and ate these, after making your soy milk round 2! These. Are. Delicious. I can't believe it! I made some "quick" homemade chips by putting whole potatoes in the pressure cooker, letting them cool & cutting them into thick chips & frying them with the okara cakes. I made the PETA tartar sauce to go with it....freaked out. So good. SO GOOD.

      I am a newbie vegan and so far I'm so proud that I've made my own soya bean burgers (hopefully they're gonna taste okay), used the milk for tofu and now I found this..... Omg. Meal prep has never been so much fun!!

    Okay, I made this last week. Delicious!! It's been a while since I had a crab cake too, but it definitely tasted like a seafood patty made with a mild tasting fish. I had to add a little flour to keep mine together but if memory serves me correct, my real crab cakes used to fall apart in the pan all the time anyway. Definitely a keeper!

    I made this for lunch today and loved it! I had potatoes that needed using up and also frozen okara from making soy milk, and also had all the other ingredients at home. This is a great recipe for using leftovers and getting a lovely meal out of it. Thank you!

    Holy crap, this flavor combination was incredible! I put a lot more nori in mine, and my okara was a little course, because my blender sucks, so they didn't hold up as well, but they were delicious none the less. I served mine with some ponzu sauce on the side. New addiction! Thanks for creating this recipe 🙌🏼

    This looks great, I can't wait to try it. Old Bay seasoning would probably be a good addition (maybe instead of the salt or in place of some of the miso) to get that crabcake taste.

    What editing program do you use Mary? I want to have more options to click on at the end, like many people do, but window live movie maker is really basic and doesn't offer that option. I'm afraid to experiment with other programs since I am technology challenged and it will probably take me soooo long to figure out how to use it. Maybe one day though....

      I use Adobe Premiere Pro. It's kind of an expensive program but I do need it for my day-job. I have used Windows Movie Maker before (loved the XP version) and really got frustrated trying to use the Live version so I'm not sure how to accomplish this in that program. The one thing I think might work, is to add a clip of your past/next video at the end of your vlogs and add a "title" layer on top of that to indicate what it's for. Then you can just add the Spotlight annotation with RUclips after you upload it. Good luck!

    perhaps dill would make a great additive. coating them in panko/polenta would also make them more crispy, like conventional fish burgers!

    I just made these but I swapped the miso paste with gochujang because that's what I had on hand and it's really delicious!
    I must say though way more than 1 tbsp of oil is needed to fry these babies !

    I was wondering if I can replace the okara and the potato for white beans.. I want a burger that tastes like fish but I can’t eat soy for awhile cause it increased my thyroid:( I tried the original recipe a couple of years ago and I loved it. You’re very creative with food!! Congrats

    i'm high as fuck, it's 3 am, and from tonight on i'll be making soy milk, yuba, and tofu myself instead of buying it. anyways
    you should do something with this recipe where you cook it like you would salmon in aluminum foil? (i'm vegan but...) something like: make a few of the patties, and lay them out side in a row in the middle of a sheet of aluminum foil, fold the ends in so the middle holds liquid, then pour some olive oil and lemon juice. you may have to figure out a way to bread them without cornstarch (maybe like roll the patties in bread crumbs or grinded nuts... idk)

    I wanted to make these, but didn't find any dry soybeans at my store, so I had to skip the DIY milk and use canned soybeans. Had to thicken the mix with some breadcrumbs, but still turned out very yummy and fishy :) plus I had the aquafaba to make mayo (I used less oil that your recipe and blended in part of the potato as well) - a perfect pairing!

    reminds me of my falafel recipe. i just soak split peas and garbanzos and then grind them(with other ingredients of course, potato flakes being one), then fry. the legumes get cooked in the oil. i will try okara in them next time. i didnt see your soy milk recipe yet but i strain out the okara b4 boiling the milk.

    so.. I ended up mashing up your recipe for okara burgers with the mushroom dumpling one, (leaving out the potato), Im going to fill them in an hour, so hopefully they will turn out nice but the batter tasted awesome already!

      it was a huge success! even the non-vegans who usually hate veggie mixes and healthy stuff LOVED it and ate everything! i also put it in spring rolls and chinese bakery buns and its so amazing! and the awesome thing about it? no need for flour, cornstach, etc the consistency will never be too wet so you can just add some broth if needed, and you can play around with the consistency a lot from the okara, i love to pair it with seitan, mushrooms or tofu, and when i make it crumbly it is such an amazing texture experience! it pairs amaingly with any other texture! it makes anything super juicy yet solid if that makes sense? it wont make things suopy and wet, neither too dry! and ofcourse super healthy! thank you so much for all the amazing recipes and inspiring me to get super creative and mad scientist-like again in the kitchen haha

    When I made the tofu milk, while heating it became thick like custard. It did not curdle as shown, but when I made it was good. Want to know it become custard consistency.

    This looks great, but is the cooking time enough to cook the okara, because it's basically raw soybeans? I've heard people say you can throw it into smoothies. Is it safe to eat raw like that?

      My okara pulp was precooked, because i steamed the soybeans for 45 min before using it to make soymilk. I do not think the panfrying is enough to cook the pulp, and raw okara is hard to digest.
      Also, if I make this patty again, as a healthier option I would bake it and use no oil.

    I did mines a bit different based on hat I had. Instead of a potato I used a sweet potato. They had a bunch of them at the salvation army. And I had to use them for something. Instead of nori I used kombu. The stuff you dont know that's in instant ramen. It's a bit fishier in my opinion but hard to cut up in a processor. Use scissors. I wanted more fishyness so I added a bit of fish sauce. I also added a chilli to mines. I like it spicy. And instead of wet onions I added dry minced onions and garlic powder. It's only cause it's what i had on hand and man. I didnt think I'd be eating salmon croquettes today because that's exactly what it taste like

    Since you said this was a delicate burger could you perhaps use a substitute egg mixture like flaxseed and water or chia seed and water or the Vegg, etc. to bind it?

      It's not necessary if you use a gentle touch but feel free to experiment. The taste and texture is really good the way it is though. :-)

      Rocky s Mum Wheat flour might make these hold together a bit better since the gluten content would make it sticky. It would make these a bit tougher in texture though. Happy experimenting!

      Mary's Test Kitchen Oh! one more question, i make soy milk yesterday(my first time), the taste is different, which is okay. The smell is so different comparing store brand. How can i get rid of of the smell?

      Rocky s Mum homemade soy milk does smell a certain way. I find the smell pleasant and sweet, but that's probably because I grew up smelling that from the soy milk stands at Chinese festivals and it's associated with fun memories for me. Store bought stuff has flavourings/aromas that alter the smell. Try experimenting with adding vanilla or almond extract. :-) Good luck, dear.

    Is the okara more or less the same texture/flavour of crumbled tofu? This looks delicious but I'm not planning to make soy milk any time soon.

      Erin A Okara and tofu are from the same soy bean but they aren't anything alike in taste or texture. To make a similarly flavoured patty, I'd use mashed white beans in place of the okara but add a binder such as some wheat flour or a flax egg. I hope that helps!

    Thank you for the recipe. I tried it but unfortunately, I didn't really like it. It was quite some work and then the taste was just..not gross or anything but not that tasty either and not that very fish like. And there was no bite, at all. For other people reading this: I think in a few weeks i'll give it another try and i'll add even more spices and nori on top of what I already added outside the recipe, make extra small patty's, steam them first, make my own sauce that takes away the dryness of the burger more and add some caramelized onion on top of the burger.

      I tripled the amount of nori seaweed, and my soybeans were steamed for 45 minutes before making the soymilk so the pulp was precooked for the patties.

    Is this okara precooked? I have seen so many recipes for okara, some make the soy milk with just the soaked beans then strain, which is what I have done. I have also seen recipes where the okara and the soy milk are cooked together before straining. I just want to make sure I do this correctly

      I recommend pre cooked okara. It's possible using raw but you will have to ensure the patties are thin enough and you cook for enough time (longer, lower temp)

      Mary's Test Kitchen omg thank you so much for the tips. I did a few slight tweaks. I added maybe a TB of reconstituted wakame seaweed and diced finely, and I used Penzeys Justice spice. No lie this was so freakin good. We aren’t vegan and my kids were fighting for it. I made a 2nd batch and added Dashi powder which gave it a more fishy flavor for those who aren’t vegan. They were both amazing. The second batch we shaped like fish fillets and made tacos with them. AH-MAZING! Thank you!!!

      You can leave it in the fridge for a couple days or just freeze it.

    i like okara, but it's really low in protein...does making soymilk really take so much of the sotbean protein content?

      +Lukychrm42 Okara still has 3 - 6 grams of protein (depending on how much milk is extracted). Okara also contains calcium, traces of other minerals, and lots of fiber which is good for digestive health. The rest of the protein in the soy beans goes into the milk. So if you have both products, you're getting all the protein from the beans. :-) I hope that answers your question.

    Do you use raw Okara? Because I know a lot of recipes cook after blending the soybeans okara+milk then filter it and that would give you a cooked okara but in your recipe the okara is left raw and the milk is cooked alone and my milk took ages to cook and didn't cook that well so I'm afraid the okara won't cook enough for this recipe. Help?

      You can steam the okara before using it in this recipe.

    When ever I make okara burgers the outside will cook, become hard, and the inside will stay soft and mushy. What can I do to fix this? I've baked it, grilled it, and pan fried it. Same result every time.

      noxonexthere I'm not sure there is anything to fix. These Okara burgers are much like crab cakes in the sense that the interior stays fairly delicate though should hold together fine. To ensure that they aren't waterlogged (mushy) make sure that your potato is not over boiled (if using that method for cooking) and that the okara itself is well drained.

      Yes BUT I recommend steaming (put it in a bowl, steam for 5 to 10 minutes on high heat) or boiling (just let it simmer in water for a few minutes, then drain) the okara first just to make sure it gets completely cooked. I developed this recipe using raw okara but if you make the patties a little larger than mine, it's easy to undercook. And undercooked okara is really not good

      mohamed ahshraf I have added okara to fried rice and to my breakfast congee before. I believe there are lots of ways to use okara and this is just one of them. Try a little at a time to experiment and don't forget to "google" for other vegan okara recipes :-) I find it is important to cook it well and thoroughly. Also it is very high in fiber so I eat it with foods that are less high in fiber for ease of digestion. I hope that helps, dear. Happy experimenting!

    in Japan, although the okara is consumed, it remains a very high residue. They are even investigating making a okara "plastic"

    I can't find white soybeans anywhere! I can only find edamame, I've looked for them in the frozen aisle and there not there. I've been to Asian stores but I don't know where to look. I'm not allowed to shop online.Could edamame beans turn white or where should I look for them?

      GurlyScarlett Sorry, edamame beens are immature soy beans and they will not work. To find dry soy beans, look for them where you would find other dry beans. I find them in my local supermarket's bulk bin section. If your supermarket has an ethnic or health food aisle, it may be in there too. Lastly, the best place to find dry soy beans is usually in Asian grocery stores, especially Chinese or Japanese shops. Japanese shops may even sell you the Okara in frozen pouches for quite cheap. Asian shops will usually have the best prices as well. Good luck, dear!
