tbh the main mistake people make in cooking is under-salting things before they cook them or over-salting them afterwards. It won't taste that salty if you salt it that early

Chinese-American here. I've eaten tofu all my life. I must admit that I bristle whenever I see people complaining about how tasteless it is; chicken is equally as bland if you don't season it or otherwise impart some kind of flavoring to it, and tofu is no different. Also, tofu isn't typically frozen before it's used in cooking, although that would make sense if you want to make it spongy or chewy.
Long time, hard core, meat eater. I've had tofu before and wasn't too impressed. Just tried this tofu recipe ( my first time cooking with tofu) with the family and we give it a 5 star review. Thanks for this video, this was the first time I cooked tofu and liked it! But I think I have come across a simpler way of prepping the tofu - its essentially the same steps, just a different order, but for me its easier: 1. Freeze the tofu straight away when I bring it home from the supermarket. 2. The night before I want to cook it, I take it out of the freezer. 3. Next day before I start cooking, i cut it into pieces and use my fingers to squeeze out the liquid. Then do your method of soy sauce, oil and cornflour. Because the tofu has been frozen, its consistency has already changed and doesnt fall apart easily. This makes it easy for me to squeeze the water out instantly and dont have to use books or wait a long time for the water to drain.

Freezing tofu isn't a must unless you want it to have a spongy or chewy texture. There are many ways of cooking tofu that don't require freezing it beforehand but still produce delicious results. Take it from an Asian who's eaten tofu all my life.

Ive been vegetarian for literally a week. If anyone wants like an easier version: Get firm tofu. Crumble it with your hands, making it the size of like a cube in a rubix cube. (My first time doing it, i made them really small like ground beef and it just wasnt the right move. I like biting and chewing.) Get a baking pan and put parchment paper or foil. Grease it if youre using foil. Then for 30-45 minutes, or until light brown color, bake it at 350 Fahrenheit. You just dried it out, meaning no need for pressing your tofu. Make sure you stir it occasionally in the oven. If you dont for the entire duration, it wont char and burn. But we want to stir at the very least halfway at cookin time to get all sides equally crisped up. At the end, it will be dehydrated. If you eat one, it will be chewy. But to rehydrate it a little bit, throw in something saucy. Ive used it for vegan chili and vegan sofritas. Do whatever. Bam, chewy, meaty tofu. Ive never tried it in my air fryer. If anyone tries it out in their sir fryer let me know Update: I have been vegetarian for 2 months now, almost 3. I do this every time I make tofu. Get an air fryer. Spray the cooking pan with oil. You do not need to put oil on the tofu. Cut tofu to whatever size you want. I have tried cutting it small to put in wontons. I have also tired cutting it really big for pad thai. All sizes work. Do not crumble it with your hands. Use a knife. Air fry at 400° until your desired texture. For me, it is usually 15-20 minutes. Air fryers cut baking time in half. I was shocked. The texture is great. Cooking is quick. Clean up is more, but the texture of the tofu is worth it. If your looking to make fried chicken though, I swear on everything oyster mushrooms will change your life! Oyster mushrooms, not king oyster mushrooms. Look up Fried Chicken oyster mushrooms by Fineapple Vegan. The mushrooms has strands like chicken. It smells like chicken and the marinade is fantastic. Its chewy. It not fool anyone because the shape, but the taste and texture is definitely there

My Asian supermarket actually sells deep-fried, freeze-dried tofu in cubes (3x3x3 cm) or in a whole block (which is up next on my shopping list). As you said the texture is amazing. It is not like “regular” tofu at all. I cut them up and add them to different warm dishes and even salads. They add a cheese like texture too. The deep-frying keeps the flavour neutral and they take on any flavour in a sauce or a salad dressing. I’m glad you posted this because your ingenuity is amazing - from the homemade tofu press to the homemade microwave tofu drainer. You’re a true kitchen “MacGyver”!

Richard Ian Tracy I just had a salad and added the deep fried/freeze dried tofu which I cut up like you would cheese. It absorbs the salad dressing well and adds a meat like texture to the salad. I hope your lucky enough to find some. Good luck!

I was skeptical but this actually made me like tofu so I cant thank you enough. If anyones worries about no having corn flour, yes regular flour works just fine.
But corn flour (corn starch) is known to make fried foods super crunchy. That's why it's used for Korean and Japanese fried chicken. And it doesn't get soggy under the sweet hot sauce. Even some American cooks have added it to the traditional flour.

Most vegans/vegetarians grow up eating animal products, becoming accustomed to the taste and texture. You May ask, "Why not just eat the real thing?" Vegans/vegetarians don't eat meat due to most of the meat industry's messed up way of treating animals. Also, some people become vegan/vegetarian because they cannot digest meat properly. We miss the taste and texture of meat, not the way animals are being treated and the health issues it gives us. it looks like the "dried tofu" in Taiwan. there are many sorts of vegan food in Taiwan, especially soy food. if u come to Taiwan, don't forget to try our traditional vegan restaurant. u will love it !
I had to comment. This tastes amazing!! I kind of followed your steps, except: 1. I let the tofu press over night. 2. Left remaining tofu in soy sauce mixture( I made it up with what I had). 3. Did not bake due to prolonged pressing. 4. Pan seared after dusting with seasoned flour until I thought they were good and crispy. 5. Tofu was sliced thinly. This tastes so good!! I am shocked honestly. I thought I was going to trash it. Tofu has seemed like a hard ingredient to cook these past years, but this has given me a TON of ideas. I'll be coating this in egg roll wrappers to make a fried "chicken" next. Thank you so much.

You seem like a optimistic and positive version of "you suck at cooking" that is also vegan. I'm not vegan myself - not even vegetarian - but if I get to make tofu again sometime, I might try out some of your tipps. Tofu should not just be part of vegan/vegetarian diets, but just for everyone - not even necessarily as a replacement for meat, but as an addition.

WHY all these “just eat chicken!” “It’s still not chicken!” comments? Guys, the channel is called the easy VEGAN, it is obvious it’s going to offer alternatives to the real thing. Simply, not everyone is fine with chickens being killed for us to eat, but it tastes good so why don’t try to recreate it with non-animal products? It is as simple as that.
ウルトラLRinstinct well, it’s definitely not the same. They have no central nervous system, so probably can’t feel pain, or at least can’t feel it the way animals do. Then, a lot of vegetable products would have “died” anyway, like fruit: even if no one picked it, in a few days it would have fallen from the tree. And I would kill even more plants if I ate animal products, since crops are needed to feed the animals, so if I really cared about plants the only thing I could do is starve to death...which is quite ridiculous. So, due to the lack of alternatives, I prefer to eat something that doesn’t bleed, scream and oppose itself when killed.

This is one of the best RUclipss I've ever seen and I've been on the tube for 15 years. Not just because I love tofu and am vegetarian but the commentary, explanation, and the fact that when I made those they were delicious AF. But most importantly you made me laugh, but at the same time, the whole video was about eating healthy. It shows you can be funny, and realistic at the same time. Nowadays the internet is so damn serious, it's good to laugh and talk about health at the same time without shaming it.
I'm not even vegan, but my boyfriend is pescatarian and I tried this out for him. He loves it, and honestly... I do too! I could snack on those pre-sauced little chicken tofu squares for ages... thank you for this!
I would love to shorten this process for you drastically, and have better results for a chicken texture.... Drain tofu, (don't press yet because you want the water for the freezing process), cut up, freeze. When you want to make your 'chicken', defrost and press (I use my hands and then a tea towel, it will only take about 5 mins instead of 20 because of the new crystallized texture from freezing). Now flavor it and cook. :) Tah-dah!

I made it, thinking it better be worth the effort. It definitely was. I ate them dry(after the oven part) and they were mad crunchy. Finished 2 boxes in 10 min.

Tofu is like chicken, in that it is a blank canvas. It has no taste really, you have to have to play around with it to achieve whatever texture/flavour you desire. How good it tastes, depends on how you prepare it, season it, etc. Great fun video! New subscriber!

You want credit for a “How to make...” title? Beware of DIY sites and books! And I didn’t see a recipe here. I saw a DIY technique. I seriously doubt your source originated the idea of press and freeze and dust with cornstarch.
A much easier way to do this is to just throw the unopened package of Tofu into the freezer and then let it thaw in the fridge on it's own. Then drain from there. I use my hands to squeeze out water and then just wrap in a towel for a bit while I prepare a flour mix to coat it. Much less work than draining for ever, cutting, freezing, draining again, etc.
I've been getting into Tofu lately so will use this in future. My reasons are cost more then anything since meat here has shot up A LOT in past 3 years so looking for areas I can reduce my cost of living. 450g Tofu $3; 500g Mince beef $8-12 (They both have similar protein content)
@Juli Brown be easy on the liquid smoke. It can overpower things easily. I think smoked paprika can help too but don't use both at the same time. Also, Worcestershire sauce works wonder (if you're a vegetarian or vegan, there are vegan versions of it).

I was so hesitant in making this. I’m new vegan and was so excited to try tofu and although it was a tremendous process it turned out amazing. I couldn’t get it as firm as possible before I started baking bc it started to crumble a bit. I did half the tofu using the method you did. The other have I used Just Egg as a batter and panko bread crumbs as a coating. It was delicious. Thank you. I’m going to definitely remake this again.
You might just want to use "Gan Doufu" or "Dry Tofu" to skip some of your preparation process. It is much more dense than the tofu you're using. It should be light brown on the outside and is available in small slices. You should get it in the chinese/asian market. In China you actually rarely see the type from the video.

HayGurl that's true, you can get pressed tofu at Trader Joe's, Whole Paycheck, Sprouts... but the price is ridiculous, and at the Asian stores, who knows what they really throw into their odd brands, or if they were clean. Besides, it's fun to cook and personalize food.
But all the animals that are saved would really appreciate us putting in a little bit more work. I myself will not put in all that work. Cutting up my tofu, wrapping it and paper towels and putting it in the refrigerator overnight to begin the drying process.

Finding out that tofu must be frozen changed my life. I always wondered why "restaurant tofu" was so great and my tofu was so cardboard
Freezing tofu isn't a must unless you want it to have a spongy or chewy texture. There are many ways of cooking tofu that don't require freezing it beforehand but still produce delicious results. Take it from an Asian who's eaten tofu all my life.

Ive been vegetarian for literally a week. If anyone wants like an easier version:
Get firm tofu. Crumble it with your hands, making it the size of like a cube in a rubix cube. (My first time doing it, i made them really small like ground beef and it just wasnt the right move. I like biting and chewing.) Get a baking pan and put parchment paper or foil. Grease it if youre using foil. Then for 30-45 minutes, or until light brown color, bake it at 350 Fahrenheit. You just dried it out, meaning no need for pressing your tofu. Make sure you stir it occasionally in the oven. If you dont for the entire duration, it wont char and burn. But we want to stir at the very least halfway at cookin time to get all sides equally crisped up.
At the end, it will be dehydrated. If you eat one, it will be chewy. But to rehydrate it a little bit, throw in something saucy. Ive used it for vegan chili and vegan sofritas. Do whatever. Bam, chewy, meaty tofu.
Ive never tried it in my air fryer. If anyone tries it out in their sir fryer let me know
Update: I have been vegetarian for 2 months now, almost 3. I do this every time I make tofu.
Get an air fryer. Spray the cooking pan with oil. You do not need to put oil on the tofu. Cut tofu to whatever size you want. I have tried cutting it small to put in wontons. I have also tired cutting it really big for pad thai. All sizes work. Do not crumble it with your hands. Use a knife. Air fry at 400° until your desired texture. For me, it is usually 15-20 minutes. Air fryers cut baking time in half. I was shocked. The texture is great. Cooking is quick. Clean up is more, but the texture of the tofu is worth it.
If your looking to make fried chicken though, I swear on everything oyster mushrooms will change your life! Oyster mushrooms, not king oyster mushrooms. Look up Fried Chicken oyster mushrooms by Fineapple Vegan. The mushrooms has strands like chicken. It smells like chicken and the marinade is fantastic. Its chewy. It not fool anyone because the shape, but the taste and texture is definitely there

My Asian supermarket actually sells deep-fried, freeze-dried tofu in cubes (3x3x3 cm) or in a whole block (which is up next on my shopping list). As you said the texture is amazing. It is not like “regular” tofu at all. I cut them up and add them to different warm dishes and even salads. They add a cheese like texture too. The deep-frying keeps the flavour neutral and they take on any flavour in a sauce or a salad dressing. I’m glad you posted this because your ingenuity is amazing - from the homemade tofu press to the homemade microwave tofu drainer. You’re a true kitchen “MacGyver”!
I was already thinking that SURELY much of this process could be mechanised and sold frozen. Now I know! I'll look for that deep-fried / freeze-dried tofu.
Richard Ian Tracy I just had a salad and added the deep fried/freeze dried tofu which I cut up like you would cheese. It absorbs the salad dressing well and adds a meat like texture to the salad.

I was skeptical but this actually made me like tofu so I cant thank you enough. If anyones worries about no having corn flour, yes regular flour works just fine.
But corn flour (corn starch) is known to make fried foods super crunchy. That's why it's used for Korean and Japanese fried chicken. And it doesn't get soggy under the sweet hot sauce. Even some American cooks have added it to the traditional flour.

I kind of followed your steps, except:
1. I let the tofu press over night.
2. Left remaining tofu in soy sauce mixture( I made it up with what I had).
3. Did not bake due to prolonged pressing.
4. Pan seared after dusting with seasoned flour until I thought they were good and crispy.
5. Tofu was sliced thinly.
This tastes so good!! I am shocked honestly. I thought I was going to trash it. Tofu has seemed like a hard ingredient to cook these past years, but this has given me a TON of ideas.
I'll be coating this in egg roll wrappers to make a fried "chicken" next.

And I would kill even more plants if I ate animal products, since crops are needed to feed the animals, so if I really cared about plants the only thing I could do is starve to death...which is quite ridiculous. Not just because I love tofu and am vegetarian but the commentary, explanation, and the fact that when I made those they were delicious AF. I would love to shorten this process for you drastically, and have better results for a chicken texture....
Drain tofu, (don't press yet because you want the water for the freezing process), cut up, freeze. When you want to make your 'chicken', defrost and press (I use my hands and then a tea towel, it will only take about 5 mins instead of 20 because of the new crystallized texture from freezing). Now flavor it and cook. :) Tah-dah!

Tofu is like chicken, in that it is a blank canvas. It has no taste really, you have to have to play around with it to achieve whatever texture/flavour you desire.
How good it tastes, depends on how you prepare it, season it, etc.

A much easier way to do this is to just throw the unopened package of Tofu into the freezer and then let it thaw in the fridge on it's own. Then drain from there. I use my hands to squeeze out water and then just wrap in a towel for a bit while I prepare a flour mix to coat it. Much less work than draining for ever, cutting, freezing, draining again, etc.
I agree :) that's how I do it! However I refreeze it a few times to get an even meatier texture (only firm works - soft will always be mushy).

Instead of just soy sauce, I'd add a tiny bit of liquid smoke and some apple cider vinegar to make as close to bbq as I can get.
@Juli Brown be easy on the liquid smoke. It can overpower things easily. I think smoked paprika can help too but don't use both at the same time. Also, Worcestershire sauce works wonder (if you're a vegetarian or vegan, there are vegan versions of it).
I use liquid aminos instead of soy sauce, it’s a healthy vegan alternative.

I haven't been vegan for a long time and you can't ever believe how helpful this is.
I was so hesitant in making this. I’m new vegan and was so excited to try tofu and although it was a tremendous process it turned out amazing. I couldn’t get it as firm as possible before I started baking bc it started to crumble a bit. I did half the tofu using the method you did. The other have I used Just Egg as a batter and panko bread crumbs as a coating. It was delicious. Thank you. I’m going to definitely remake this again.
You might just want to use "Gan Doufu" or "Dry Tofu" to skip some of your preparation process. It is much more dense than the tofu you're using. It should be light brown on the outside and is available in small slices. You should get it in the chinese/asian market. In China you actually rarely see the type from the video.

Well I may be a tofu convert. Im not vegan or vege but I like eating plant based a couple of times a week and Ive never been able to get into tofu but this recipe looks like a game changer. That stir fry you made is making me salivate!

actually i just bought some tofu from aldi, and it seems pretty pressed already. Its a good price with 1,8€ for 400g. But it was in aldi sued not nord
HayGurl that's true, you can get pressed tofu at Trader Joe's, Whole Paycheck, Sprouts... but the price is ridiculous, and at the Asian stores, who knows what they really throw into their odd brands, or if they were clean. Besides, it's fun to cook and personalize food.

That seems like a lot of work.
Just freeze a batch ahead of time. Cooking in general is a lot of work.
But all the animals that are saved would really appreciate us putting in a little bit more work. I myself will not put in all that work. Cutting up my tofu, wrapping it and paper towels and putting it in the refrigerator overnight to begin the drying process.
