5 ways to use okara in japanese recipes (vegetarian and plant based)

- ever wondered what to do with your okara after you've made soy milk? 😛 in this video i'll share 5 of my favorite ways to use okara in plant based japanese dishes.

okara has a ton of nutrition left over after extracting soy milk from the soy bean pulp. and because of that, okara is something that you should consider repurposing in some way. otherwise, it's kind of a waste if you just throw it out.
because it has a mild flavor (most was extracted in the soy milk), okara is one of the most versatile ingredients you can use in your japanese cooking.
okara makes a great replacement for potatoes for example, or a filling for gyoza or korokke as well as hambaagu (japanese style hambuger). and even better, if you LOVE your baked goods like bread, cake, cookies etc okara is the perfect way to make each of those things more nutritious than they could ever be without okara!
some of my favorite ways to use okara are as follows-
🤸♂️hambagu with okaraハンバーグ
mixed with a little bit of brown rice and or tofu kinda like what i made in this video
japanese hamburger steak with tofu okara and shiitake (plant based)

all you need to make this a complete meal is a bowl of miso soup, some steamed veggies and maybe a side of rice or roasted potatoes. oishisoona!
🤸♂️ unohana or vegetables with okara 卯の花
this okara recipe gets it's name from the flower it resembles, if you've seen both, do they look alike? while there are many ways to make unohana, some of my favorites call for dashi and a mix of vegetables for a very refined and complex mixture of flavors and textures.
🤸♂️ korokke with okara コロッケ
deep fried korokke (croquette), while you CAN bake this, nothing is quite as good as the real thing fried in oil, might be worth a try if you've never had it before, especially if you love savory fried foods!
🤸♂️ potato salad with okara ポテトサラダ
a lot of different ways you can leverage the power of okara in salads, and one of my favorite is in a 'potato' salad, with which you can replace all of the potato 100% of it with okara or just a portion like 30-50 or 70% without much of an impact on flavor or texture
🤸♂️ baked goods with okaraパン
if you've seen any of my live japanese cooking videos before you might have noticed i really loved baked goods - cookies, cakes, and bread or some of my favorite things to eat and okara helps to add moisture, texture and a little bit of density on top of the excellent nutritional value it adds to your food. how about that?
did you also know if you can't use the okara right away, there are 2 ways to preserve it?
🤸♀️dry the okara. you can dry your okara in the oven on low heat, but the faster way to do it is in the microwave, on high 1-2 minutes and removed in between to mix and crush any lumps (which may become hard if you dont).
once completely dry it will have a light and fluffy texture like fine panko (japanese bread crumbs)
🤸♀️ freeze the okara in a freezer safe glass container or ziplock with air removed. use within 2-3 weeks.

ah this was so helpful!! made homemade soy milk for the first time and had a bunch of soy pulp leftover that i didn't want to throw away. ended up making hambagu and it was delicious!

How did you find your tofu-making experience?
@@alldayieatlikeashark I tried it 3 times before it coagulated. I got it for right now and really enjoy fresh tofu! I tried okara burgers with black beans and veggies and they turned out very tasty!
Also I use it as a thickener in gravies and sauces.
Glad you enjoyed the process! Nothing beats good homemade tofu (and okara as bonus ingredient!)
Thanks for some really good recipes! My family produce tofu and we haven’t found any way to use the Okara. Most of it goes to the garbage.. we talking tons! In Finland we have really strict rules and standards on the food that is being sold to for example stores and restaurants. But my parents have been using the okara as much as they can as nutrition in the garden. Works really good, if you also like a vegan substitute for your plants ;)

I think you can also feed it to cattle and other farm animals, maybe you could donate it?
It can probably used to feed cattle or pigs or chicken.
At the very least compost it instead of garbage.

i usually add some sugar and toppings, so it’s kind of like a sweet porridge or smoothies bowl... it’s a good dessert! but i’ll try to make dishes so i’m not eating too much sugar:)
edit: you should cool it on the fridge first before eat it

A couple of ideas I have had. Mix it with mashed potatoes. Another thing I want to try is using it 50/50 with gluten to make seitan.

Hello! I'm new to your channel and I'll admit, I'm not vegetarian, I love meat. However, I'm mindful of my health and of the environment so I'm making changes to the way I eat. I've only recently started making my own tofu, I was wondering about the waste pulp. Currently I use it as a thickener for soups and casseroles. My husband has recently taken up food smoking, we've had some success, and some not so successful lol. I have struggled with the okara as I can't eat egg white. but I've had some success with xanthan gum as a binder instead of egg...it's hit and miss mostly, but I try! I'm so pleased to come across your video, thank you!

I either grind okara into flour so I can make it into pancakes, or leave it as it is, and add a tablespoon of it into my smoothie, after I roast it of course.

Hello! I tried drying soy okara / pulp in the oven and microwave, after such drying okara loses its ability to absorb. Even if he just lies on the table for a couple of days, he still loses the ability to absorb water. I use Laura brand organic large soy beans, and after I make the soy milk which I ferment with keffer on the counter with grains I store in Freezer, I then ferment the okara with natto at 100 f covered in dehydrator

This week I have started a ketogenic diet, so I was looking for ingredients that I can buy in Japan and don't have lots of carbohydrates, and I discovered okara. I love eating 卯の花, until now I didn't knew it is made from the leftover of the soymilk! Is okara available in supermarkets? If not, I guess that maybe in 豆腐店 they have, but I don't know if they would sell it...

Yes, Amazon would sell okara but usually dried okara. The fresh ones from soymilk byproduct is still the best option--fresh and sure to be no preservatives.

Absolutely, you can dehydrate okara in the oven! No microwave is needed! 🌟🔥 Just spread it on a baking sheet, low and slow, until it turns crispy and delightful! 😉👌 So, let's get baking and enjoy that homemade goodness!

@@alldayieatlikeashark I just bought a Soyajoy and have been making my own tofu, I've tried to use the okara just by adding it to food, but I'm very interested in trying your suggestions. I don't use oil but I would love more suggestions on what to use okara for. I'm also making nut milks and need to figure out what to do with the pulp from that. So far I've added them to my smoothies.

Hello :-) I make my own Tofu on a regular basis so I have a lot of okara left over. I usually make the hamburger pattys and fry them in a pan with lots of oil. Sometimes I make them for breakfast mixed with oats, flour, nut-flour and sugar and sometimes I make them with grated carrots or other veggies in the okara hamburger-dough. There are really no limits of how to prepare these okara hamburgers :-) But unfortunately my attempts to freeze or dehydrate the okara to preserve it failed :-( When I deepfroze it it turned out to taste like sawdust and was really disgusting :-( maybe it was because I only put it in a box? When I tried to dehydrate it the okara never became a dry poweder but a bunch of sticky lumps that were also not edible :-( But I'll try again to freeze it in a bag without additional air in it. Maybe try to freeze in a glass container as the okara is hot from cooking put it in the container and close it up let it steam a little in there and when it’s at room temperature put it in the freezer that should preserve it for a month

@@alldayieatlikeashark Well Pat my husband and I began thinking about making our own soymilk. we bought a soymilk maker from a thrift store and got non GMO soybeans at our local Asian Market in Colorado Springs. I read up on recipes of how to make it. We figured out how much soaked soybeans to put in the machine and made some. I soaked more soybeans and used a recipe for a blender and made more. Then I thought this okara can be used and found a couple of recipes for that. I did make some what is called Sea burgers without the Nori as my husband is allergic to most sea food and shell fish. I made some biscotti, and some simpler okara cookies. I like them because they are not really sweet like the American style of sweet level.
I grew up in a military family but no one made their own soymilk, neighbors we had who were Japanese American, made dishes, we got exposed to Japanese treats which i still love today but with High Blood Pressure I have to be selective in what I eat and try to balance out the sodium levels. One thing I did find helpful was taking the Okara and putting it in an oven to dry it out some. a recipe called for 1/2 cup of okara put in a shallow pan and in an oven 340 degrees F for 20 mins. That worked well but depending on where you live the altitude, if higher may take more time. The interesting thing is it helps to cook the Okara before you make something with it and then when you use it in a food that you cook it is similar to when you make raw soymilk you heat it up to cook it before using it for consumption.
