Some great ideas. My husband loves crab cakes and I pair them with my lobster or crab bisque. I’m always looking for new recipes and will try yours. I bake them in a very hot oven (450-475) in a cast iron or stainless steel skillet. At this temperature and with the rack set higher in the oven I’ve found it unnecessary to flip the crab cakes. Another option if you don’t have crab is to use shrimp. I made them on a whim and they were delicious. You might fiddle with the recipe a little but they were a winner. Thanks for your great advice.
Totally loved your video.. Since I am allergic to crab but love salmon, my wife loves crab but so so for salmon, make a double batch and split the recipe easy to do. On fish night make crab cakes for her salmon for me.

Great recipe. One note: The reason crab cakes in oven is dry you are overcooking it. Remember your crab meat is already cooked, it only needs 8 minutes in the oven and should be at 375 degrees. Instead of whole egg use egg whites of 2 eggs. To sear it use pan first.

Welp. after making crab cakes and having them fall apart- I found this video. I have the remaining crab in the fridge and will make "balls" and freeze and let you know what happens- but I think I used too much liquid- still, I will try to squeeze some of the liquid out tomorrow before I freeze & pan fry and let you know. I am very picky about food and presentation and I have to say this is one of the most-professional videos I've seen and easy to follow, I wrote everything down- and I like the alternate ideas for recipes/cooking. Great job! You should be on television. Oh yeah, - and some of the other comments- I too appreciate no b. s. in the video or music. Excellent.
also- I like the parm addition. Tomorrow I will cook the balance and add fresh parm. And one more thing- your video was exactly what I was looking for so when I scrolled for more videos I decided not to bother. I will update you tomorrow.
So update, my crab cakses had more ingredients and I added the parmesan and put them in the freezer for 25 minutes and they came out perfect!!! Thank you!

@@marieskitchen Last night's meal was a success! The crab cakes were a hit! I even have a few more in the freezer for another meal. One thing I added which I think really sealed the deal - a teaspoon of liquid smoke. Since I was serving the cakes with grilled steak it seemed like a good fit and really brought the two foods together. Thanks for the vid and easy to follow recipe.

Hi! Great question. I usually find crab near or in the seafood case. It’s either stored on ice or in the refrigerated area. There is often some crab stored next to canned fish like tuna as well, but I prefer the fresher option at the seafood counter. Hope that helps and thanks for watching ❤️, Marie

I take the crab out into a steel bowl and flip it listening for shell rattle against the bowl, and also look for any cartilage. If it smells a bit, rinse with lemon water and drain well while cold. If it still smells throw it out.
Hi Carolyn! Hi! Thanks for watching and for your great question! I prefer to freeze the (raw) crab cakes if I plan to cook them a day or two later. Freeze them on a flat cookie sheet lined with parchment (or a plate if not enough room for a sheet pan), coveting gently with Saran Wrap. Once frozen, you can leave them there or transfer frozen crab cakes to a large zip top bag. When you are ready to cook them, simply let them thaw about 15 minutes at room temp before cooking. You can also use canned white chicken meat. We call these Poor Man's Crab Cakes. They're very delicious and a decent substitute if you don't have crab meat.
Living in the PNW where salmon is easily available and very fresh, my mother always made salmon cakes instead of crab cakes but she called them salmon patties. Crab is just as available and fresh here, too, but it's more expensive. I HATE the taste of Old Bay seasoning, will have to find something else. There's just something in Old Bay that I can't even stand the smell of.
Hello! So lucky to have fresh salmon! I love this recipe with salmon. 🙌🏼 That’s interesting about Old Bay! There’s a company called Paul’s that makes good seafood seasoning, you might try one of those. Even a simple garlic salt might work, plus a little paprika for color. I also live in PNW and I also find that Old Bay flavor is just horrible! To me the nasty smell seems to be used to cover smell of fish or shellfish that are not fresh. Ugh! Needless to say, I don’t eat shellfish or other fish on east coast. I’ll continue eating fresh salmon, fresh Dungeness crab, and other wild Alaska caught fishes.

WOW. I'm learning to cook, and this video is so inspiring. Awesome and it looks really good.
Welp. after making crab cakes and having them fall apart- I found this video. I have the remaining crab in the fridge and will make "balls" and freeze and let you know what happens- but I think I used too much liquid- still, I will try to squeeze some of the liquid out tomorrow before I freeze & pan fry and let you know. I am very picky about food and presentation and I have to say this is one of the most-professional videos I've seen and easy to follow, I wrote everything down- and I like the alternate ideas for recipes/cooking. Great job! You should be on television. Oh yeah, - and some of the other comments- I too appreciate no b. s. in the video or music. Excellent.
also- I like the parm addition. Tomorrow I will cook the balance and add fresh parm. And one more thing- your video was exactly what I was looking for so when I scrolled for more videos I decided not to bother. I will update you tomorrow.

@@marieskitchen Last night's meal was a success! The crab cakes were a hit! I even have a few more in the freezer for another meal. One thing I added which I think really sealed the deal - a teaspoon of liquid smoke. Since I was serving the cakes with grilled steak it seemed like a good fit and really brought the two foods together. Thanks for the vid and easy to follow recipe.

Hi! Great question. I usually find crab near or in the seafood case. It’s either stored on ice or in the refrigerated area. There is often some crab stored next to canned fish like tuna as well, but I prefer the fresher option at the seafood counter. Hope that helps and thanks for watching ❤️, Marie

I take the crab out into a steel bowl and flip it listening for shell rattle against the bowl, and also look for any cartilage. If it smells a bit, rinse with lemon water and drain well while cold. If it still smells throw it out.

Can the uncooked cakes be refrigerated for a day or two prior to cooking?
Hi Carolyn! Hi! Thanks for watching and for your great question! I prefer to freeze the (raw) crab cakes if I plan to cook them a day or two later. Freeze them on a flat cookie sheet lined with parchment (or a plate if not enough room for a sheet pan), coveting gently with Saran Wrap. Once frozen, you can leave them there or transfer frozen crab cakes to a large zip top bag. When you are ready to cook them, simply let them thaw about 15 minutes at room temp before cooking. You can also use canned white chicken meat. We call these Poor Man's Crab Cakes. They're very delicious and a decent substitute if you don't have crab meat.
Do you ever use an egg with your crab cakes to help hold things together like You do with salmon patties?
Living in the PNW where salmon is easily available and very fresh, my mother always made salmon cakes instead of crab cakes but she called them salmon patties. Crab is just as available and fresh here, too, but it's more expensive.
I HATE the taste of Old Bay seasoning, will have to find something else. There's just something in Old Bay that I can't even stand the smell of.
Hello! So lucky to have fresh salmon! I love this recipe with salmon. 🙌🏼 That’s interesting about Old Bay! There’s a company called Paul’s that makes good seafood seasoning, you might try one of those. Even a simple garlic salt might work, plus a little paprika for color. I also live in PNW and I also find that Old Bay flavor is just horrible! To me the nasty smell seems to be used to cover smell of fish or shellfish that are not fresh. Ugh! Needless to say, I don’t eat shellfish or other fish on east coast. I’ll continue eating fresh salmon, fresh Dungeness crab, and other wild Alaska caught fishes.
