      Date syrup is not nearly as thick and sticky as coconut nectar. Also, since date syrup is essentially just dates and water, the caramel will more or less taste like dates.

    i’ve been wondering , i saw you had another caramel recipe few years ago, how would you compare these two?
    ps what was wrong with just dates + milk /bit of nut butter as most people do ? and another ps coconut nectar is kind of hard to find here , would maple be suitable substitute ?

      Great questions! You could totally make caramel just using dates, cashew butter and a splash of nut milk. However, I find that the flavor is not as complex as when you add another sweetener. I love coconut nectar because of its viscosity. Maple syrup is more liquid-y and not as sticky. However, you can experiment with maple syrup and see if you like it :) And thank you for the kind words! So glad you like my recipes :)

      @@NutritionRefined thank you so much for your detailed answer ! hmm i’m afraid i cannot find coco nectar anyway here and it’s interesting you say so mosg describe maple quite caramel ~ y !
      Back to it ~ i either see date ~ nut butter as you mentioned Or just maple nut butter (without dates have you tried that one as well?) Or the one you haven’t talked about i think coconut sugar and coconut milk however that one has to be cooked.
      Do you know that option?:)
      Anyway i love how many types of caramel you can make in this vegan and healthier worlds and so many recipes use them i guess i was on a mission to find the most authentic but also simple one , with just few ingredients !
      But probably the complexity of your recipe makes up for the divine taste thooo😄🫶🏼

      Possibly, but I haven't tried it. If you don't like coconut milk, I would make cashew milk and try to match the consistency of full-fat coconut milk.

      Hi Elsje - as I write on my blog - "Coconut nectar is one of the stickiest liquid sweeteners and works incredibly well here. Brown rice syrup is a good one too. Other liquid sweeteners, such as maple syrup, agave, yacon syrup, etc., are too thin to create a sticky caramel." You could still give it a go using maple syrup or agave; just know that the consistency of the caramel won't be the same.

      Hi Cecilia - you can keep the caramel in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.

      Hmm, a great question. I would say it does not taste like coconut, but I like coconut, so I might not be sensitive enough to taste it. You could replace the coconut nectar with brown rice syrup (which is another really thick and sticky sweetener) and try cashew cream instead of full-fat coconut milk.

      @@VanillaAttila Yea, date syrup would have pretty good consistency, but then the caramel would taste too much like dates, in my opinion. The coconut nectar just adds a different type of sweetness. I have never tried combining maple syrup with molasses, but you could give it a go :)
