I think I had the heat too high and I kept stirring it outwards. You give really good advice and tips for making the caramel and your voice is very relaxing to listen to. Best caramel making thing I've seen. The comparisons are perfect to show what to do to get what you want from something that is so simple yet so complex.
Aya !!....It never occurred to me to pre heat the cream. Outstanding idea. I've always made caramel sauce using white sugar and only cream as an extension of making inverted-sugar syrup which is like the wet recipe you showed, and then using brown sugar, the cream, and the butter to make butterscotch (the flavors are very similar but ARE different. I use more butter than you and the extra water in the additional butter loosens the sauce up a bit). But the addition of the cream to halt the caramelization was always a nerve wracking time to keep things fluid and not have it spit all over me. Heating the cream is brilliant. Thanks a bunch! (Make yourself a caramel or butterscotch cheesecake [replace half the sugar with 2/3 equivalent caramel sauce and add 1t of starch to compensate for the extra moisture] and you will thank me.) Great video.

Very good video. I made caramel for the first time using a dry recipe from someone else’s video. I let it get too dark, which made it bitter. Than, I found different recipes that used water and dry recipe. I didn’t know which one would be best. I’m glad I found your video, it answered my questions very clearly. I wasn’t going to try making it again since the first time was such a failure but after watching your video, I am anxious to give it another try. Thank you.

1st time I made salted caramel I made it using the dry method with butter. It came out great. I eventually tried the wet version only because I was following a recipe. While it came out fine I didn't like how long it took to get to the amber stage. Last week I followed another recipe using the wet method because hers came out VERY thick. I needed that because this caramel was going on a Banoffee flavored Pavlova. Ugh, I should have stuck to making it the way I know works best because that caramel ran off the Pavlova like it was lava 🤦♀️ Cleaning up my fridge was a chore, lol. As for your video. I was surprised to see you move the pan when making the wet caramel because the video I just followed said not to touch it at all. Also the cream. I've never seen a recipe call for it to be heated. In fact another pastry chef said to use it straight from the fridge. Doing so will stop the caramel from continuing to cook. It's crazy how everyone does specific baking tasks differently. Thanks for the video though. I'm going to try making a batch using your wet instructions... 👍

Yes, it’s crazy how we do so differently sometimes! - I heat cream for two reasons; one so that it won’t bubble/spill too much because of the temperature gap for safety reason, and also because the caramel does not get harden rapidly with the cold cream: It’s just easier to let it melt completely later. Not that other ways are wrong, we all have different things to value, I think. You can pick whichever you feel resonated and comfortable with😊

Very well done video and thank you for the comparisons. I have always hesitated to add just sugar to a pan and turn on the heat-- I have always been sure it would scorch my pan and ruin it. Now I understand how to control it. I do have one question. All the recipes for caramel require heavy cream. But I have to avoid fat as much as I can. Is it possible to make this with fat-free milk?
