Caramel can be made with basically any type of sugar though, so now I'm starting to think of this as the old rectangle square phenomenon which is "a square is always a rectangle, but a rectangle is not always a square".... Butterscotch is always caramel, but caramel isn't always butterscotch 😄

I’ve lived all over the U.S. , but being originally from the south I like to draw it out and say ‘care-ah-mayels’. You can drop the e in care and say car ah mayels, but the s on the end is very important. 😂 Now I’m goin to the Walmarts to get the supplies to make this. ❤😂 P.S. salty comments go the best with careamayels. 😉🤣
I don’t have a solid time frame but once wrapped the biggest concern would still be drying out. I’d guess a couple of weeks but after that if you still like the texture then they’re still good!
I have a caramel question. I was making candy centers earlier and trying for a sort of brown sugar fudge (i know it has a name i just cant think of it, think something between maple candy and fudge) and ended up with a sticky, chewy caramel. It's delicious, just not what i was aiming for. Does it sound like i got it too hot? I wasnt using a thermometer although i clearly should gave been! Laziness. This recipe looks great! I'll definitely have to give it a try!

@@BrittneeKay that's pretty much what I thought had happened. I was trying an old southern recipe that uses condensed milk, butter, and brown sugar. I don't know if you're at all familiar with See's candy but if you've ever had one of their butterscotch squares the center is pretty much what I'm after. It's like a grainy fudge without chocolate. I know this has an actual technical term I just can't remember it for the life of me. If I could I could likely solve my own issue with a little reading. I've been thinking about it for 2 days now. It's sure to hit me just as I'm falling asleep 😂

I am glad that you mentionned that altitude can affect the degree of température. At our country house, up north, we had to adjust the cooking and confirming with the water test. Do you know about « honey moon » candies. They are done with honey and cream , mostly. They taste like heaven. By the way, in french, we say « ca-ra-mel », pronouncing thé three syllabées!

Sounds like chocolate bloom! Many things like improperly tempered chocolate, improper storage or handling, unclean mold. Check out my other videos for a bunch of tips!
Nobody can officially know the shelf life of anything unless the item is officially tested, so I cannot tell you either. But caramels have a high shelf life because of all the sugar and low water content. These will definitely be good for a couple weeks if not longer, and enrobed in chocolate could last even longer. You have to test it yourself and try them every so often to see if you are still satisfied with the quality of the product.
Here in Missouri I say it like you do and most people I know here do too. Doesn't matter how it is pronounced, it's yummy either way. You say it however you want, thank you for sharing your Mom's wonderful recipe.

I use a silicon dish which makes it easy to remove (and no need for Pam).
