- Homemade Creamy Caramels
4 sticks salted Land O Lakes Butter
2 pound bag Domino light brown sugar
Dash of salt
2 cups Karo light corn syrup
2 cans sweetened condensed milk
2 teaspoons vanilla
Butter a 9“ x 13“ glass dish.
Melt the butter on low in a 6 - 8 quart stainless steel pot then stir in the other ingredients one at a time, EXCEPT for the vanilla.
Once all the ingredients are in and blended well, turn the heat up to medium. Gently, and nonstop, stir the caramel for 30 to 40 minutes until it reaches 243° to 245° on a candy thermometer.
Remove the caramel from the heat and stir in the 2 teaspoons of vanilla. Stir well. Pour into the buttered dish. Allow to set overnight.
Cut the caramel into long strips on a glass cutting board and cut into small squares. Wrap each square in a cellophane wrapper and twist each end tightly.
