My name is Oliver, 86 years old. I have an interesting story about the Texas Chocolate Sheet cake.Years ago, I believe it was in the 60's, My Mother and Father-in law lived in the Dominican Republic. A Dominican lady made them a chocolate cake. It was delicious. My mother-in-law asked for the recipe. The lady refused, said it was a secret family recipe handed down. She finally relented and gave it to my mother-in-law. My mother-in-law gave it to my wife. My wife gave it to whomever wanted it. No longer a secret. In the 1980 I was working in Texas. My wife gave the "Secret Recipe to a very nice German lady there. Figured that's how it got introduced to Texas. To make a long story short. The Secret recipe is the same as the one you posted. It is by far my favorite chocolate cake. Love your show. I watch every episode.

My Mom always gave recipes when asked. She thought it was a compliment. Her best friend was VERY reluctant to. That friend had a Polish Mama who had great recipes my Mom wanted to recreate. After she got a couple where the ingredients or directions were changed, she gave up.

Thank you for always sharing the most wonderful recipes. I’m the matriarch of our family now and I cook for my son and his family every Wednesday. Dear Tom and Melissa. I cannot begin to express the delight I felt when your RUclips channel came into my world. I saw this recipe this morning, and joy bubbled inside of me. This recipe was one of my mom's favorite recipes. She called it Chocolate Candy Cake. She passed away 6 years ago, and this video brought back so many memories. This dessert will be served at our next church potluck for sure!
I love you guys, and become teary when Tom speaks so lovingly about his students (one in particular is Juanita) or of someone who passed along a recipe to you and Melissa that ranges anywhere from 30-45 years ago. Honestly, I think that is what makes your RUclips channel so great - the loving way Tom offers the first bite, Tom's passion for people, and sharing vintage recipes, and the details of measurements and then the taste test at the end.

This is one of my favorite cakes! Thanks for sharing it.
    Ps:
Vinegar in milk just curdles the milk. It’s not buttermilk. Buttermilk is cultured and doesn’t easily go bad. Buttermilk purchased at the store with an expiration or “best by” date is an fda required thing. I bought a half gallon of buttermilk a year ago and use about a quarter cup of it and add some milk to it and culture my own. Buy once, buttermilk for life. Added to my bread recipes makes the softest most delicious bread. Buttermilk can be used in so many recipes and gives everything a wonderful flavor. There is no substitute.
    God bless y’all!

Thank you for giving credit where credit is due to Ladybird. Being a Texas gal myself, this is one of the first cakes my mother taught me to make, I was 8, I am 65 now. The only difference is that we always add a teaspoon of cinnamon to the cake mix. It makes a big difference. Everyone always asks, "What's the difference in your chocolate cake?" It is such a subtle taste that they can not distinguish what it is. Hope you try it.

Just want to say THANK YOU! I was given this recipe in about 1968 by a lady I worked with in Amarillo, Texas. Now, about 56 years later, it is still my favorite, and my go-to cake for all occasions.
That said, I have made one modification, just for a bit stronger flavor: where it says "add water" in the cake recipe, I add black coffee instead. In the icing, I substitute black coffee for the buttermilk.

1964. The cake was originally called Gertrude Armstrong’s Chocolate Cake. Ms. Armstrong was a Texas native I believe. I’ve had the recipe since 1964, yes, that long ago. I cut it out of a newspaper, and Lady Bird was not part of the nomenclature at the time, LBJ had just been made President and she was not that well known at the time let alone have any influence. Her influence for the cake came along later after it had been published and already was a favorite. I made it immediately and to this day it is everybody’s favorite, I make it often. When I get the chocolate crazies this is my go-to for my chocolate fix. I couldn’t do without it. I was 23 years old when I first got it and now I’m 83. Wow, a lifetime of the best chocolate cake ever. I’ve talked myself into it…..this chocolate cake is on my horizon for today, can’t wait any longer. I love your all’s show, I watch every one of them and have made MANY of your recipes, both sweet and savory. Keep them coming!

I can not tell you, how much I enjoy each and everyone of your videos. You have a way about you that makes you feel like your viewers are in your kitchen while you are baking or cooking. I also love how your wife is forever reminding you of stuff. I am the same with my husband.
FYI, I freeze my buttermilk in 1/2 cups and put that into a sandwich zip bag, making sure it is really zipped and than lay the bags flat and stack them. I then put them into the freezer until I need them. Depending on how much buttermilk is called for in the recipe I am making I will take one or two bags out of the freezer and put those into the refrigerator overnight to thaw and then in the morning I take the bags out and let the buttermilk come to room temp along with all of the other ingredients. I have been doing this for years. The buttermilk might separate some, but you can shake it, I usually leave it alone and add it to the recipe as is. Just so you know, I am not a new cook or baker, I started doing those things when I was 10, I am now 73. Again, thank you both for this channel. suzie

Also, we have a couple family members who do not eat nuts, so we put half of the icing on half of the cake, add 1/2 the amount of nuts in the other 1/2 icing and put that on the remaining cake. Thanks for the videos and for sharing such good food and storys about your family and friends. God bless both of you!

I grew up in the midwest having this cake. I was taught to spread the frosting with the nuts in it......took forever. Now I sprinkle nuts over top of hot baked cake the frost it by drizzling the warm frosting over the nuts. Easy Peasy.
Just make sure you don't cut a lot of the tip of the baggy off......you need a small opening to drizzle evenly over cake
The heat from frosting and cake will help spread the frosting on its own.

Another great receipe. Thanks for showing it. My dear Sis in law used to make this.I had to laugh about taking the sheild off too soon. I would love to know where you got your cookie jar. You use so many phrases that my family always used. My best to you and Melissa. Keep up the good work. I always look forward to each new video.

If you are not a buttermilk fan or do not have any on hand, you can make your own sour milk by adding 1 tablespoon of vinegar or lemon juice to 1 cup of whole milk. Let stand for 5 minutes before using. This adds just the right amount of acidity to your recipe when buttermilk is called for. Loving your channel and all of your great recipes! Bless you both♥️

It can be hard to use up all the buttermilk if you aren't a fan of drinking it (which we are not). Freezing it like that is a really smart idea. We appreciate that you shared our ideas with us.

Battery-operated sifter, what a great idea, might have to get myself one. I love how you give your wife the first bite of what you make.

Yum! Haven't had this cake in years. My mom made it in 9 x 12 pan & did icing without nuts so if wanted nuts she put some on top for part of cake. I liked with nuts!
Used to make for my daughter but haven't made since she moved out many years ago. Time to dust off that recipe along with some other great ones! Thanks for sharing Becky's recipe!

My favorite cake ever!!!!!❤❤❤. Yummy!! Some people here in Texas call it a Texas Sheath Cake. I usually make mine in a 9”x13” pan and bake it for 30-35 minutes like a standard cake. The frosting is a little thicker and yummy, too!

I think this must be the frosting my husband has always talked about his mother making. He & his brother said you could peel the icing off the cake in a layer. I would think that's because it's kinda like fudge. I'm really excited to try this. The sheet cake looks very simple to make too.
Btw, I have this same kind of shield for my KitchenAid & I love it.
Thank you, Melissa for always putting the recipe in the description box. It's so much better than having to go to a separate website. Bless you both.😊

Thanks for the shoutout and I'm glad you're enjoying the new tools. Apryl and I had a good laugh regarding the shield. I'll tell you though, my heart sank a foot when I saw the new beater left a mess of chocolate in the bottom, unmixed, and unscraped. I don't know if there's a difference in the bowls or not, but it doesn't do that in ours. And we would not take it badly in the slightest if you switched back to your old beater, if it does a better job. I mean that was the whole point of sending them, hoping it would improve your experience with your mixer. We're definitely going to try this recipe when we get a chance. Thanks for the videos and the inspiration!

I love this cake. I first had it at a family reunion years ago. My mother made this for years. It is a great cake to take to a cookout, church social, or just for a family dessert. I love it warm with vanilla ice cream. I have even put it in the microwave and heated it. If you are a single person there are recipes on yt for just a couple of servings and it is very good, tastes just like the bigger cake. My aunt even made it in a 9 X 13 pan and it was a thicker cake, but I love it made in the size pan that it calls for. A delicious cake, I love it.

In 1999, my next-door neighbor passed away. Having recently had vocal cord surgery, I couldn't talk, but I sent this cake with my husband for the family. They raved about it and thoroughly enjoyed it, so I can understand how it could be called a funeral cake. It is comfort food and there are times when we really need some!

Being a Texas-loving Canadian, I’ve wanted to try this cake for a while but thought it might be too much trouble. It looks so easy and delicious! The fudgy pecan frosting/topping will be a hit with my husband I’m sure. And when I make it, I will also think of their dear friend. What a wonderful couple these two super nice people are.
