I just recently lost the most beloved person in my life. I just wanted to say how much my grandma (mom) loved your recipes. This was the last recipe of yours I was able to make for her, and she loved it. She had printed out so many of your recipes. I know I’m set for awhile. My nana Vickie was your biggest fan & loved cooking & being cooked for. It’s always better when someone you love makes it for you. Well, I died and went to heaven last night after dinner! I trusted you and dumped that whole container of cottage cheese in the mixture! You are right, it works. The only change I made was the pasta - I have a granddaughter who can't have gluten so I bought Barilla Gluten free elbow macaroni. I'm not a huge fan of Velvetta and I've always thought you should make mac and cheese with eggs but my oh my this was the bomb! It was absolutely delicious! We had BBQ ribs, Pinto beans, gluten free cornbread and YOUR mac and cheese. I didn't really die but Heaven was really close last night for all of us! It was a wonderful meal and a wonderful family time. Thank you for this recipe.

The way you present instruction is stellar, so many today Do Not know how to cook basics.... I remember my youngest having a friend over for the weekend snow days, this kid was absolutely amazed. I heard him say "your mom makes popcorn from seeds!" As if I had performed some magic trick😂 and when I made the hot chocolate....kid Lost It! 💥
My daughter's friend loved to eat supper with us when I made mac and cheese. She made a little pig of herself because she loved it so much. My mac and cheese was always a bit "soupy"!
Same kinda situation over here, it was a snow day and my kids and I were watching movies but when the kids wanted popcorn they were sad to find the microwave popcorn was gone. I offered to make homemade popcorn and they both laughed at me! Told me there’s no way to make popcorn on the stove!! I gotta say here, my children were very young, that’s how they didn’t know yet. Anyway, they thought I was a genius and they said it was the best popcorn they’d ever had! Now they don’t like microwave popcorn anymore 😂😂😂. Same thing happened with icing! I think it was during that same storm, they wanted me to make cupcakes but we didn’t have any icing so I told them I’d make some. Oh you should have heard them laugh at me! So I whipped up some homemade icing and we’ve never bought ready made icing again!! They loved it!! 😂❤
Happy day after thanksgiving. I had to report to you that I made your macaroni and cheese recipe and brought it to my daughter’s thanksgiving dinner yesterday and it was a BIG hit. Even the pickiest of my grandchildren loved it. She actually showed me her thumbs up. It wasn’t just the kids that loved it from ages 7 to 63 it was gobbled up. I even went out and bought white pepper. I’ve committed to bring another batch for Christmas. ❤️

I remember my mom always fixed a big pan of homemade mac & cheese once a week for a meatless meal, which helped her with the grocery budget. Of course way back then in the mid '40's, cheese was not nearly so expensive as today. Thanks for sharing your recipe, I like the idea of the cottage cheese. It is in Lasagna, so why would it not be good in this dish as well. Y'all have a Wonderful Thanksgiving with friends and family.
My Great grandfather was from Sicily area of Italy. He said as a young boy his earliest chore assigned to him was to walk to the beach to pull out 2 gallons of water to boil the pasta in. Another tip was after boiling and draining the pasta to add olive oil and butter. It soaks into pasta and seals it. Resulting in less cheese needed
I was chastised on a Facebook group for adding oil to my pasta. But my Italian Grammy's pasta was delicious with olive oil. And then my Mexican friend added oil to his Spanish rice. He is authentic as it gets. He lives in Mexico 🇲🇽
I should also mention that my late mother had a shrimp macaroni salad recipe she developed. And Everyone loved it. She would first add melted butter to al dente pasta still hot. Once absorbed into pasta add the olive oil. The end result was sealing the starch of pasta. Resulting in that Mayonnaise did not soak into the pasta. Using much less, and thus theoretically a healthier version. Although, I'm finding it more difficult to find quality canned baby shrimp.. Her standard brand she used for decades is no longer available. There are only a couple of others around. All don't seem to raste the same in my opinion.

I doubt I'll use the plastic cheese (Velveeta) but i love the idea of using cottage cheese and half 'n half. A tip for diabetics: boil the pasta the day before and refrigerate, then make the dish the next day. That turns the high carbs into resistant starch that your body can not absorb and cause blood glucose spikes. Works the same with potatoes and rice.
Actually, if you simmer the cream and milk. The Velveta will melt and create a Cheese sauce. Then add the shredded cheese and melt it as well. I just posted a comment respectfully pointing out this variation and very sure that only one box of Velveta and 3/4 packet of cheese (with the cottage cheese) will render a more flavourful sauce mix cheaper and healthier.

Another great recipe. I have made mac and cheese with cottage cheese before and it's delicious. I bought too much on a great sale and was just trying to use it up. I've also whipped it up till it's smooth and creamy and used it in my lasagna instead of ricotta because the ricotta costs too much now. I'm a firm believer in use what ya got and make it work.

We never baked our mac and cheese. Just added milk, butter and cheese to drained macaroni, shook in salt and pepper to taste, gave it a quick stir to melt and dished it up. Back in the day, Velveeta was the cheese of choice, but it tastes different now. We liked it creamy, not crusty.
I always add dry mustard plus a few small dashes of Worcestershire sauce. We make the Mac and cheese with a roux sauce and mom always added that so that’s how I do it. 😊 I am excited to try your recipe though, even with the cottage cheese, I think it will be great! I live in Kansas so I’m just grateful you didn’t add egg…I’ve never had, nor made mac and cheese with eggs, I don’t think I’ll ever try it to be honest, I don’t think I’d like that too much. We love Mac n cheese here in Scotland - so much that we make macaroni pies! When we bake it as you do we often put big slices of tomato on the very top and bake it. It we never use velveeta.
That looks great! I never thought of using cottage cheese but I use it a good bit to bulk up scrambled eggs and other dishes. I have always used a cup of sour cream and a cup of mayo in mine but next time I make it, I'll try your method with the cottage cheese 😊 Happy Thanksgiving to you both ❤

Mmm...mac'n'cheese! This recipe definitely has some differences than what I've ever been aware of, including my mac 'n' cheese casserole 'creation' that I believe I've commented about before. I've actually used cooking oil, canola if I recall correctly, in place of the salt when boiling the water. For those who are just refusing the cottage cheese idea, just give it a shot. Be a little more adventurous with your cooking and eating. It's not like this is some crazy idea that will totally change the taste. It's just added creaminess. I think this whole thing sounds great. I'd pile on the black pepper because I love to see and taste black pepper in my mac and cheese (I like my stuff spicier than y'all so you do), but other than that, this looks pretty amazing. I especially loved that it's baked. The best pasta dishes always are.

I tried this recipe and it was amazing! I used different cheese in the mix but I believe the main difference is using the cottage cheese and half and half/ heavy cream! I made it for my church. I wasn’t there when they ate it, but everyone went crazy about it. I did season my mix more I sprinkled a generous amount of paprika, complete season and pepper. Then pepper on top after adding cheese
atI love the recipes that you share with us. What I enjoy is you make things with ingredients that are simple. All the seasoning and spices are those that are in n ordinary kitchen. I don't like using some of the recipes that are hardly used and some spices that I have a hard time even pronouncing let alone finding. You and Melissa} provide just simple down home style cooking, and it's very much appreciated. And thank you so much for adding the ingredients in the comments section along with the written instructions. I am one that likes to have things prepared and organized before I start to cooking (nothing drives me crazier than prepping ingredients while I'm in the middle of cooking). I'm a 64 year old widowed male, who doesn't have a lot of experience in the kitchen and it's so nice not having to eat prepared frozen foods until I found your channel. I also found out now that I really don't mind and actually enjoy cooking on my own. The only thing I'm struggling with now is the cleanup.
The cleanup is never fun but we try to clean as we go so it’s not overwhelming when the meal is over. That’s a real downer after you’ve enjoyed a nice meal. We do appreciate your kind words and that you are watching our channel.

Tom and Melissa: I have a Macaroni and Cheese recipe that came off the Mueller Macaroni box when I was in my early teens. My late Dad loved this recipe that I used, especially in a cold Western NY winter. When I make it now, I can close my eyes and see my Dad enjoying it 💖💯 !!
I made this tonight to go with meatloaf and roasted beets. It turned out excellent! The recipe is very close to the one I make, and yes, I also use Velveeta. Can't make good mac and cheese without it. The cottage cheese was a new one on me and it is now a keeper! I grated my own cheeses, varieties that I like. I'll have to portion some out and freeze it because I know I won't be able to stay out of it. Once again, a great recipe!

Cottage cheese is what I use in my Lasagna or Manicotti instead of ricotta, low fat or fat free. I can’t tell the difference

Yuck. No Velveeta. It's not cheese and the taste is disgusting! You can get creamy Mac and cheese without Velveeta. I HATE Velveeta. Just my opinion!

Tom even said he’s sure people will comment and say Velveeta isn’t real cheese. Yes, people have different tastes. I happen to not care for the taste of Velveeta. And I’m allowed to say so. If it was real cheese, it would be found in the refrigerated section and not on the shelf. You are the one who is being mean and nasty. I subscribe to this page and I love Tom and Melissa. I’ve made many of their recipes. Back off and stop attacking people.

Another great recipe. I have made mac and cheese with cottage cheese before and it's delicious. I bought too much on a great sale and was just trying to use it up. I've also whipped it up till it's smooth and creamy and used it in my lasagna instead of ricotta because the ricotta costs too much now. I'm a firm believer in use what ya got and make it work.

Can’t make macaroni and cheese without Velveeta. It just makes it love your show love how explicit you are on how to put things together.
We never baked our mac and cheese. Just added milk, butter and cheese to drained macaroni, shook in salt and pepper to taste, gave it a quick stir to melt and dished it up. Back in the day, Velveeta was the cheese of choice, but it tastes different now. We liked it creamy, not crusty.
An ingredient I like in Mac and cheese is a little dry mustard for a little extra zip.
I always add dry mustard plus a few small dashes of Worcestershire sauce. We make the Mac and cheese with a roux sauce and mom always added that so that’s how I do it. 😊
I am excited to try your recipe though, even with the cottage cheese, I think it will be great! I live in Kansas so I’m just grateful you didn’t add egg…I’ve never had, nor made mac and cheese with eggs, I don’t think I’ll ever try it to be honest, I don’t think I’d like that too much. We love Mac n cheese here in Scotland - so much that we make macaroni pies! When we bake it as you do we often put big slices of tomato on the very top and bake it. It we never use velveeta.

Mmm...mac'n'cheese! This recipe definitely has some differences than what I've ever been aware of, including my mac 'n' cheese casserole 'creation' that I believe I've commented about before.
I've actually used cooking oil, canola if I recall correctly, in place of the salt when boiling the water.
The more time consuming mac'n'cheese recipes are always so much better and very much worth the time to make.

For those who are just refusing the cottage cheese idea, just give it a shot. Be a little more adventurous with your cooking and eating. It's not like this is some crazy idea that will totally change the taste. It's just added creaminess. I think this whole thing sounds great. I'd pile on the black pepper because I love to see and taste black pepper in my mac and cheese (I like my stuff spicier than y'all so you do), but other than that, this looks pretty amazing. I especially loved that it's baked. The best pasta dishes always are.

I tried this recipe and it was amazing! I used different cheese in the mix but I believe the main difference is using the cottage cheese and half and half/ heavy cream! I made it for my church. I wasn’t there when they ate it, but everyone went crazy about it. I did season my mix more I sprinkled a generous amount of paprika, complete season and pepper. Then pepper on top after adding cheese

atI love the recipes that you share with us. What I enjoy is you make things with ingredients that are simple. All the seasoning and spices are those that are in n ordinary kitchen. I don't like using some of the recipes that are hardly used and some spices that I have a hard time even pronouncing let alone finding. You and Melissa} provide just simple down home style cooking, and it's very much appreciated.
And thank you so much for adding the ingredients in the comments section along with the written instructions. I am one that likes to have things prepared and organized before I start to cooking (nothing drives me crazier than prepping ingredients while I'm in the middle of cooking). I'm a 64 year old widowed male, who doesn't have a lot of experience in the kitchen and it's so nice not having to eat prepared frozen foods until I found your channel. I also found out now that I really don't mind and actually enjoy cooking on my own. The only thing I'm struggling with now is the cleanup.
The cleanup is never fun but we try to clean as we go so it’s not overwhelming when the meal is over. That’s a real downer after you’ve enjoyed a nice meal.

I always add 2-full tablespoons cottage cheese to 2-eggs for creamy scrambled eggs! Delicious!

especially in a cold Western NY winter.

I made this tonight to go with meatloaf and roasted beets. It turned out excellent! The recipe is very close to the one I make, and yes, I also use Velveeta. Can't make good mac and cheese without it. The cottage cheese was a new one on me and it is now a keeper! I grated my own cheeses, varieties that I like. I'll have to portion some out and freeze it because I know I won't be able to stay out of it. Once again, a great recipe!
