I feel you sister I have pre-diabetes and it's been 2 months since I switched over to plant-based food vegan and the dessert that's my favorite so I've been doing some research for vegan dessert and I like caramel so I'm going to be making that as a sneaker make a sneaker with the caramel but thank you.

@@charlenebutler9386 Hey Charlene! Once someone is experiencing diabetes, any sugary food including natural ones like honey, dates, fruits can trigger a spike in blood sugar. However for those who don't have diabetes it's fine. Overconsumption is where the problem generally lies. Like any food, they should be eaten in moderation. In other words, just because the chocolate cake is made from dates doesn't mean have 3 slices lol. The other helpful thing about eating naturally sweetened desserts is that they have a higher fiber content, so the dates and fruits will not spike the blood sugar the way white sugar does, because it digests slowly and is released over time thus making it more manageable. With all things, you can try it and start with a small piece and measure your blood sugar shortly after to see how your body manages it. What I do know is that there are multiple persons who have experienced diabetes and said that a plant-based diet has either eliminated it completely, reversed it or significantly reduced their diabetic symptoms. Blessings to you as you heal and eat well!

Good question. In my experience this caramel keeps it’s texture pretty well. I think the ratio and proportions of Ingredients used helps with that, but if you do experience hardening, just warm it for 30 seconds and stir to return the texture.

Hi am new ,I like your channel but I friendly disagree that people should eat what they think is right for them because the bible is our health manual and if we were taught to study this from childhood we could for sure avoid so many health problems. I call my channel The Mindful Plate because I believe that mindfulness is a necessary ingredient for a healthy lifestyle. I also consider that everyone doesn't think the same nor believe the same. If you're a Christian it makes sense that the Bible's dictates on health and eating would be your guide. For others it can be other doctrines or disciplines. For me I've found that plant-based eating with minimal amounts of animal/animal product is best for my body. I've also found that eating more Alkaline (Dr. Sebi guidelines) works well too. There are so many different people in the world and we all have different genetic makeups that require different nutrition. It's important to acknowledge that in food guidelines instead of mandating a Universal approach. I hope you stick around and continue to share. Coconut oil replaces butter. In the original way of making caramel, one would use butter and white sugar. Since this is a plant-based whole foods version, we're using coconut oil. It aids in the taste and pourable, drizzly texture of the caramel as well.

As a Mindful eater, I don’t count calories, so I have no idea. I prefer to listen to my body and eat what’s necessary.

Why so much coconut oil.
Coconut oil replaces butter. In the original way of making caramel, one would use butter and white sugar. Since this is a plant-based whole foods version, we're using coconut oil. It aids in the taste and pourable, drizzly texture of the caramel as well.
