Making my Christmas Cake on Camera!......and in the Slow Cooker!!!

  • In this video I'm sharing how I make my Christmas Cake. It's very simple and I use Juliet Sears recipe. The only difference is that I cooked mine in my slow cooker. On high for one hour and then on low for about 5 hours, I just kept checking, until the knife came out clean. I did have to put a tea towel folded in half under the lid to stop the condensation dripping onto the cake.
I also show how I modified my Forever Rose arrangement. They have a really good discount code: For the Thanksgiving sale all roses will be discounted with 60% off, plus the $25 off code that you can enjoy, they make a great gift:
    Rose Forever shop: bit.ly/3LmSdbH
Get $25 off, using code: Helen25
I'm also wearing my Mounir.co.uk necklace and earrings; there is a page on their website entitled Helen Mary Jo, where you will find the various pieces I showcased the other day.

    Ingredients:
300 g natural-colour glacé cherries, washed and halved
    240 g sultanas
    360 g raisins
    360 g currants
    100 g mixed peel
40g glace ginger (or finely chopped stem ginger if you have trouble getting hold of it)
    200 g salted butter
    200 g molasses sugar
    200 g plain flour
    4 medium free range eggs
    2 tsp vanilla extract
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground ginger
    1/4 teaspoon ground nutmeg
    Pinch of ground cloves
    1/2 teaspoon mixed spice
160 ml brandy, plus more to feed (about 6-10 tablespoons, to taste)
    70 ml vodka
    Method:
    Preheat the oven to 140°C (275°F/Gas 1).
Grease, base and side line an 8” round solid base cake tin (min 3” depth)
Place the dried fruit, peel and glace ginger into a large bowl big enough to hold the entire mix and mix together with a large wooden spoon.
Place the butter and sugar in a small, microwave-safe bowl and heat for 1 minute at a time, stirring with a whisk at each interval, to mix the butter and sugar together. If you don’t have a microwave, do this in a non-stick pan over a low heat and melt gently.
Beat the eggs together with the vanilla extract.
Add the spices to your flour and mix well with a metal spoon or whisk to disperse
Add the spiced flour to the fruit and toss over with your hands to mix through
Tip the warm butter and sugar mix into the large bowl of fruit and mix well. Add the beaten egg and mix well. Finally add your brandy and vodka.
Place in the oven and bake for 1 hour, then turn the heat down to 125°C (250°F/Gas 1/2) and continue to bake until completely cooked through. This will take approximately 2-2 ½ hours, depending on your oven. Check that a sharp knife or a skewer comes out almost clean.
Whist still hot, spike all over the cake with a skewer to make holes and pour over more brandy to soak the cake.
Once cooled, double wrap in parchment and then wrap in strong foil. You can eat this after a week but ideally make a few weeks before you need it, and you can store it in a cool dry place for up to a year, feeding with extra brandy if you wish on occasion.

Helen I love fruitcake - thought I’d give you a true example. When my son got married my daughter in law gave me the second tier of the cake, anyhow months later she asked me if I had given Mrs whoever a piece of the cake. I had to own up and admit I thought she gave it to ME and that I had slice of cake with a cup of tea every day until it was all gone. True story and I enjoyed every slice yum yum.

So fun to see you do this. I have found that everything we women do is always "easy".We do not appreciate what we do as a skill, its such an understatement for what we are able to do. When you point out that its something that not everybody are able to do, they shrug their shoulders and still dont recognize their acheivments. So please streight your back, you are doing something that others are not able to do. For example me. I used to bake 4 sorts of spongecake and 5 differents biscuets for christmas. Nowadays its perhaps one of each. So I do love christmas preparations So therefore i love to follow yours.🤶

I have watched my mum & it looked like hard work soaking the fruit then once the cake was baked see kept in her cool dark pantry & every day she would prick the cake & pour dark rum in. I worked full-time (not that is any excuse) & relied on mum/mother-in-law or Mr M & S - I am going to give this cake a try - I can't see that much can go wrong (wish me luck) - By the way I am really looking forward to your Wallis video - lovely shop & good quality clothing

Never thought of doing the cake in a slow cooker- things you learn👍🏻I’ve done a Nigel Slater cake the past two years (lovely) but feeding the cake turned out being expensive: some brandy for the cake and the rest to us😂

I would love a video about your air fryer if possible please, as I've been debating whether to get one or not. I would like to hear your thoughts on them and what you cook in them.
