Last vlogmas video of 2022! Mum's chicken casserole and a bonus blooper!!

- Mum has been staying with me for a few days after Christmas and agreed to film her cooking live on camera. She is known for her Chicken Casserole and cannot understand why people love it so much..... it is scrummy.
There is a little blooper video at the end when I tried to film, caught Mum's eye and then we lost it, giggling....
We used three chicken breasts and although we used eight rashers of bacon four would have been enough.
Ingredients:
3 or 4 chicken breasts
4 rashers of back bacon
Optional sliced carrots (2 or 3)
One medium onion (chopped)
One pint chicken stock
Black pepper
Two tablespoons of flour
1 tbsp olive oil
1 tbsp butter
Method in the video,
Helen your mum is amazing. Im lying her with an electric blanket, a heated jacket around my neck.Morphine taken.I could not stand that long.Pain is ridiculous. Im 60 this new year. Theres your mum,standing cooking for ages.What a wonderful lady.

There’s nothing worse than feeling you aren’t involved or watching from the sidelines and sadly, so many elderly people are lonely and it is especially hard on them at this festive time of year. Love Pat so much! She really is amazing-how well she gets around and still driving! Her chicken caserole looks divine. My grandmother lived into her late 80s. She had been an acrobat as a child and maintained that flexibility her whole life. My brother and his wife were with her and she had a fall. Well, she did a somersault and popped right up! My brother's jaw dropped and he asked her how she did it. She said her doctor told her that, if she ever fell, to roll with it, and she did! Unbelievable! Looking forward to what 2023 has in store. Nice to see you again Mum Pat, all the chicken I have cooked I've never added bacon, will be trying this very soon and yes I now use frozen mashed potatoes. My pesto tree was good though it looked more like a pesto bush!! Looking forward to more recipe videos in 2023!!

Yes you are blessed but you are so grateful for it and it takes work to be able to maintain all the different characters in the family. If you and your mum are an indication of the rest of the family then wow! 😂. The trouble is some ‘haters’ only see the now - not the work and sacrifices involved. I have a big order coming from M & S mostly jumpers and one dress I have gone for the relaxed styles now, I am 87, and prefer those types of clothes now. That looked delicious - wish we could get nice back bacon like that here, but streaky makes a nice addition too. So glad your Christmas went well - you truly are blessed to have your family all around. We were lucky enough to have my mother-in-law around until she was 103, and she also lived on her own until she was 98!! Happy New Year to you all!
Amazing! If using streaky bacon I would fry that off quite well and then drain the fat a little before adding the chicken.

Must add a thank you for showing us how to make the Lidl ginger bread train. I hadn't realised how limited the instructions were when I bought it. I’ll definitely make that casserole! If you don’t eat bacon, you could add fresh tomatoes and mushrooms and paprika, I’ve made that, it’s very similar and delicious. Your Mum is pretty amazing, beautiful thick hair and I can see where the looks come from! Such a privilege to have strong women in the family. Happy new year 🎉xx

How lovely was this video! You are right you’re very blessed . Lost my 92 year old mum this year , she had on going dementia for last couple of years and lived in Spain since 2004 so only saw her two or three times a year and sadly she died after a car accident where the vehicle flipped over twice -can’t bear to think of how frightening it must have been and it’s been a bit of a nightmare sorting legalities etc ! This all happened in September so I can’t say I’ll be sad to see this year end -also lost my mother in law and the last auntie on mums side and both me, my son and my daughter lost pet cats !🙄anyway -sorry probably bored you silly . Love your videos and your laugh is very infectious-especially the ‘separating boxers’ bloody wet myself laughing , was hilarious so
