Great teaching style. Good for beginner cooks. Many hold up an ingredient for half of a nano second. I was reminded this recipe is in my church’s cookbook from the 80’s and I’ve forgotten to use it. My Mom used to make the original version of this in the 80’s. It was a Rotel tomato recipe called Hot Rotel Casserole. It only uses 1 can of Cream of chicken and just regular crushed up basic unflavored yellow Tortilla Chips (if you want to avoid the MSG in the Doritos). We split the layers of the chips: one in the bottom as the first layer and the other as the last layer on the top. It tastes like Chilaquiles from the Mexican restaurant. Years ago my son brought home a recipe for Mexican chicken and rice. His friend’s Mom had made it, and he loved it, so we’ve made it many times. It was made in a pot completely. I may try yours, but we really love this recipe, so not sure I’d replace that recipes for yours.
I hope it’s all right to post a recipe I’ve made for Mexican Chicken and Rice. 1 Tlbsp oil, 1 pound boneless chicken breast, cubed, 1 small onion, 1 small green pepper (I prefer red bell pepper), chopped, 1-10 ounce package frozen sweet corn, thawed, 1 cup chicken broth, 1 cup mild (or level of heat preferred), 1 and 1/2 cups Minute rice (instant), and 1/2 cup (2 oz) shredded Cheddar cheese. Twenty-five minute prep time. Heat oil in a large pot on medium-high heat. Add chicken, onion and bell pepper (this is raw chicken). Cook and stir until chicken is cooked through. Add corn, broth and salsa. Bring to a boil. Stir in rice and cover. Remove from heat. Let stand covered for 5 minutes. Fluff with a fork. Sprinkle with the cheese. Cover and let stand 2 minutes, or until cheese melts. Makes 4 servings.

I agree. It’s very relaxing to watch due to how neat and organized everything is. I like the pace of his voice and movements. Can’t watch when people are speaking rapidly .
I made this exactly as described, it was delicious. I ended up baking it for 50 minutes to get all the edges bubbly, it's pretty dense. The next day leftovers were really good too.
Love this! I've been making a variation of this since the early 80's. Great thing about it is that you can change it up just about every time you make it. For the first layer I use plain Doritos, then chicken, onions & chilis then cheese (Velveeta & Cheddar/Jack). Then black olives & diced pimentos. Just one can of Cream of Chicken and one can Rotel. With the Rotel, no need for pepper and with the soup and cheese, no need for more salt. I mix the soup/Rotel with Mexican oregano, cumin, garlic powder. and spread over the top. I never had a name for it, but one time a friend from out of town was staying with us and he asked for me to make that chicken stuff, you know, that chicken s***. So for the last 20+ years we have called it "Chicken Sh**". LOL! Love your channel by the way!
I would stir the dry seasonings into the soups and not try to distribute over casserole with the measuring spoon. Run the risk of dropping the seasoning all in one clump using the measuring spoon.
This looks great for a fast go to recipe just love to see a MAN in the kitchen either cooking or better yet “helping”. A little long in the instructions but better to have more info than not enough. Thanks for sharing I enjoyed it😊

Oh my goodness..now let me tell you something. I said I was going to try this one..I did for supper tonight..it was a HIT..!! My grandson LOVED it and so did my daughter..it was KNOCK YOUR SOCKS OFF GOOD..! I WILL be making this again..WOW it was so GOOD..!!!! Thank you for sharing this recipe..!! I didn't use a 9 X 13 pan as there is only 3 of us here. I used a 9 X 9 pan. It is the perfect size for us. So needless to say I did have to reduce the measurements. Ok I got to get off here..I got to go get seconds..lol..
Just found your site on u tube. I love it. Can't stop watching. Love you for showing each item and how they come together. Also double points to your wife for posting the recipe. Big thumbs up.
You could use rotisserie chicken from your local grocery store that is already cooked & you just debone it & it's fresh chicken. It would taste better than the canned chicken for sure.
Great casserole! We just finished having this for dinner and loved it. So much flavor and quick to prepare. Thank you! (I made Pat’s peach cobbler for dessert, too) 😋😋
Hey this looked amazing; however, I had to make major substitutions because most of the items in this recipe were not available, The only 2 things "authentic" to this recipe that I was able to find were the Doritos and the Rotel. I used: a store bought rotisserie chicken, onion powder, garlic powder, seasoning salt, crushed peppers (I guess brand doesn't matter), mushroom soup, shredded TexMex shredded cheese. And, I couldn't find fresh onion nor frozen diced onions, I just put it in the oven, but I'm kinda upset because even though I don't mind one substitution or two, I mostly like to stick to the recipe so I can experience it as intended. Anyhoo, thanks for sharing and God Bless!
It looks really good but I was also thinking I probably wouldn’t be able to eat it due to the massive amount of salt. I would use garlic powder, and no added salt at all. The sodium content will be high anyway because of all the canned goods and the chips.
As I have commented before, I LOVE your videos and your style of teaching. I have prepared many of your recipes and they are my go-to when I am cooking for someone besides me. This will be my next one. I just make your Teriyaki Crock Pot meatballs and buttered noodles, and it was a huge hit with the 2 college boys who rent my basement apartment. Tom and Melissa, you are the best!!!
Thank you so much for those kind words. We are delighted that you've had success with our recipes. We love that kind of feedback. It's so nice to hear from you!
Tom/Chris and Melissa, I truely appreciate you showing us how to put recipes together..This is another that I can’t wait to try.. So, be safe and don’t forget to “Put A Lid On It “…
I use the same ingredients in my version but mine is much easier. 1/2 the chips in bottom of casserole. Reserve the other half. Mix together all other ingredients and spread over chips. Top with the remaining chips. Bake 350 for about 45 min.
That is the way I make mine, as well. I also reserve half the cheese as a topper that keeps the chips from overbrowning. One other difference is I use 2 cans ea cream of achicken and cream of mushroom.
Actually the layering is what makes it what it is...like a lasagna, if you mix it all together you basically have stew! Not a lot of work to layer it really..

Yummy, I would put my own spin on it. First of all I always cook boneless chicken breast in the crockpot. 2nd, I always pick out the little chicken chunks from the cream of chicken soup. (Yes, I am weird) 3. I just might use a shredded Mexican cheese. 4. I like to use Mrs. dash’s salt free original blend spices. 5. Use the following of Tom’s ingredients: rotel tomatoes, onions, S&P, etc. Remember, this is just how I would do it. (Nothing against Tom’s recipe)❣️
Oh my goodness! I MUST y'all! Me being me... I'd sub some nacho cheese Campbell's soup for part of the soups... Add beans and/or black olives? Thank you so much for sharing!!! Blessings!
It looks very good, thanks guys! I do agree the sodium content is high, and since I have high blood pressure, l too would have to cut out some of the sodium. It's too bad that some people in the comments have to criticize those of us that need a low sodium diet. But there's ppl like that in every crowd, unfortunately.
I’m prepping this now for dinner tonight. Thank you so much. I am new to your channel. Literally found you yesterday. I appreciate the recipe and I can’t wait to eat it. Thank you again.
I make this all the time. But my recipe calls for one cream of chicken, and one cream of mushroom. All other ingredients are the same. I use the velveeta slices. Other 1/2 of Doritos goes on after it cooks. DO not use generic Doritos. Believe me it makes a huge difference! We serve with Spanish rice. Enjoy!
Tom I love your cooking l would love for to cook a simple Mexican cornbread casserole you probably got a great one keep up the cooking and your wife does a great job filming and putting the recipes on line thanks Everette hunting
How neat to see this video. My mom got this recipe from her aunt in TN in the 80’s. We call it chicken tortilla casserole. So many variations and yours looks delicious too ❤ canned chicken! Never thought of that!! What a time saver!
Sometimes a time saver is all that keeps us out of the fast food line! While we agree anything totally homemade is better - sometimes we are so grateful for a shortcut! Life can get hectic!
I made a few revisions: partly because i needed to use what I had on hand. I omitted the salt, used garlic powder instead of garlic salt, used rotisserie chicken instead of canned, and I used Mexican blend cheese instead of Velveeta. Delicious. Lol. I agree with you, never can add too much onion and black pepper. I prefer grinding my own pepper...So good. Yes, you're right, products have been reduced in size and increased in prices. Who knew a " pound" of bacon has morphed into 12 oz.? My fav Duke's quart of mayo has morphed into 30 oz... Aarg.
If they're gonna raise the price anyway, why not keep the quantity the same. They must think we're all stupid. I agree with your substitutions as Mexican recipes can be very salty and it puts a strain on the kidneys and causes bloating.
I totally agree with you. My gracious, the prices have gone up and the quantity has gone less. Prices are so high right now it is ridiculous. I cannot wait to try this casserole for my family. We have been wondering what to do with our canned chicken. We live in New Mexico. We have our own style of green chile chicken enchilada casserole. This one is so different and seems so delicious. We usually use corn tortillas. We also use fresh boiled chicken. Of course, coming from New Mexico, we always have to use fresh roasted green chili and never canned green chili. You just gave me an idea of how to use canned chicken. The Doritos are going to make this whole recipe. I love your guest that came into your kitchen. What a sweet puppy. Our puppies are always a special guest in our kitchen. They are always waiting for something to accidentally drop on the floor. Haha
Thank you so much for this kind comment. Our sweet Maisey has since passed away with cancer and we have been heartbroken. We loved her so much. She was absolutely a wonderful dog.
Thank you for your videos of delicious dishes and desserts that are easy to make. I never know what to bring to potlucks that are easy and your dishes seem tried and true and what most people would enjoy. We rarely eat casseroles like this as we eat mostly a Mediterranean and lower carb and no sugar diet so we rarely cook dishes like you have in your videos. If I could eat like this everyday I definitely would. But I would weigh 400 pounds if I did.
We make a Mexican chicken casserole ingredients are basically same except we use a large can of whole tomatoes with one can cream of mushroom soup one can cream of chicken mixed together. We also use taco Doritos. We also use a whole chicken deboned or a whole roasted chicken. And instead of garlic salt we use garlic powder & onion powder then onion, red pepper, velveeta cheese and it’s layered. Absolutely delicious! I’ve tried different kinds of tomatoes and it doesn’t do it any justice something about the whole peeled tomatoes. I use my immersion blender to puree most of it. We don’t use any salt or pepper or green chilis
Too much salt. Substitute garlic salt with garlic powder. Use real tortilla chips than Doritos. Use real cheese than Velveeta.😮 Otherwise, it is a good recipe.
Tried this recipe, it was soon delicious, big hit here at out house.(I was told to keep this recipe 😊) Thank you for All your recipes. Love watching ya'll. Ya'll are the sweetest couple.
New subscriber and really enjoyed the video. Always looking for new and easy recipes to cook here on the farm. This looks delicious and will be trying it this week.
I just made this. I used canned beef chilli, Wolf brand, NO beans. I gave a few tastes of the chili first , so I didn't have 16 oz.( Kind of like you and Melissa ate some Doritos before crushing them😁😁) I used some cooked chicken tenderloins to replace the missing ounces of chilli. I could only find diced chilies in a 4 oz can, so I used 2 cans, making it 8 oz instead of 7. So it's Mexican BEEF casserole. I served it over fresh linguine pasta. I love spicy food, and added extra crushed red pepper. I absolutely adore this recipe ( I figured I would, so I have an Xtra can of chilli) Also an Xtra can of Rotel. My grocery has Campbell's cream of soups on sale for 88¢ per can . Yay. I'm going to stock up my pantry, so I can make this again. Thx so much for this recipe.
We are glad you enjoyed this. Thanks so much for letting us know you tried it and liked it enough that you are having it again! We really do appreciate that you are watching our channel. We love having you at the table with us.
I make a version of this with just 2 cans of cream of chicken, a can of chicken broth, and green chiles in the blender. Then I layer shredded or chopped chicken, cheddar cheese, the broth mix and the Doritos. It's delicious with the Doritos baked in. I top it with some Doritos, too.
Hello Tom & Melissa. I have heard you mention you like the Red Gold brand. Try Red Gold 's diced tomatoes and green chilies. It is SO much better than Rotel.
As a working, single mom of three, this was a favorite with my kids. But I have never used canned chicken in it, I'll have to give it a try. Thank you.
Thank you for this easy recipe. My son is coming Thanksgiving from Alabama and will arrive Thanksgiving late.
We’re so happy to hear you enjoyed it. And we think the leftovers are great, too! Thanks for watching.
I loved your story. Thank you so much for watching and supporting our channel. Have a great day.
I would stir the dry seasonings into the soups and not try to distribute over casserole with the measuring spoon. Run the risk of dropping the seasoning all in one clump using the measuring spoon.
Oh everyone's a professional chef in the comments, aren't they?
I was thinking the same thing. Have you ever made this dish? Is it good?
I love the way you cook. I just discovered your channel and I love it. Keep those great recipes coming.
Thank you for the encouragement and we’re so glad you’ve joined us!
This looks great for a fast go to recipe just love to see a MAN in the kitchen either cooking or better yet “helping”. A little long in the instructions but better to have more info than not enough. Thanks for sharing I enjoyed it😊
Ahh, this sure looks tasty! Love your channel, your recipes, your hospitality. Feel as though I am right there with you two!
This looks great! Your special guest is precious!❤
Thank you so much for sharing all of your delicious recipes! My family and I really appreciate it! Great for back to school dinners! We are out here in Oregon, by Mt.Hood. We start school the day after Labor Day. Thanks again, we love your RUclips channel!🤗
Really great recipe! I will add reduced sodium black beans, maybe some enchilada sauce and some plain tortilla chips when I make this. Your recipe looked delicious. I think it's great to tweak and do different things with recipes. Keep your recipes coming. God Bless you and your family. Thanks for washing off your hands, too. There are many cooks on this channel that don't wash them enough.
Looks delicious,thanks for
You are welcome. It's great having you at the table with us.
Very nice. I have a go to Mexican chicken casserole that we love but need a change up. This is is it. Thanks for sharing. You have an excellent way of teaching and pacing with a calm tone. I can tell you are an educator.
Thanks for joining us at the table. We hope your family enjoys this casserole! And yes, we’re both retired school teachers!
@@comesitatmytable9044 Me too. I recently retired after 33 years of public middle school math. Loved it, but don't miss it. Especially now. I'm making your casserole this weekend. I know it will be yummy. Take care.
As always, your Mexican chicken casserole looks delicious! I just prepared your taco soup recipe and it was so good. My husband loved it as well.
Thanks for the easy and flavorful recipes. Have a lovely day!
Casserole looks delicious ❤
Thanks for watching! Hope you enjoy!
@Diana
I cordially invite you to my new channel piatto gustoso
I would hold the salt because you will have a lot of salt in most of the other ingredients.
Salt bomb
That’s the great thing about recipes- you can make them your own. We hope you enjoy the casserole!
It looks really good but I was also thinking I probably wouldn’t be able to eat it due to the massive amount of salt. I would use garlic powder, and no added salt at all. The sodium content will be high anyway because of all the canned goods and the chips.
I agree but it does look tasty.
It looks wonderful as it is. Keep what you would do to yourself-you come off sounding snarky. Recipes are more like guidelines.
One of my favorite things about your videos is the organization and prep before you cook. Thank you for the great recipes.
Tom/Chris and Melissa, I truely appreciate you showing us how to put recipes together..This is another that I can’t wait to try.. So, be safe and don’t forget to “Put A Lid On It “…
I love Mexican food. Thank you for your video.
@Beverly Benson
I cordially invite you to my new channel piatto gustoso
Thanks for watching!
I use the same ingredients in my version but mine is much easier. 1/2 the chips in bottom of casserole. Reserve the other half. Mix together all other ingredients and spread over chips. Top with the remaining chips. Bake 350 for about 45 min.
This is how I would do it. All that layering is really not necessary.
That is the way I make mine, as well. I also reserve half the cheese as a topper that keeps the chips from overbrowning. One other difference is I use 2 cans ea cream of achicken and cream of mushroom.
Lol
Actually the layering is what makes it what it is...like a lasagna, if you mix it all together you basically have stew!
Not a lot of work to layer it really..
@@tammywease6643 👍 and if you have little kids or grandkids they can participate, half of it might end up on the counter and floor though 😉❤

I pray peace grace mercy and Thanksgiving be upon y'all ❤
God bless 🙏 ❤ 😍
Blessings!
Thank you so much for joining us at the table. Make it your own and enjoy every bite!
Will definitely try this Casserole. You and your wife are so kind to each other. Love your videos!!!
I’m prepping this now for dinner tonight. Thank you so much. I am new to your channel. Literally found you yesterday. I appreciate the recipe and I can’t wait to eat it. Thank you again.
We hope you enjoyed it! And we want to say how much we appreciate you for watching our video!
Ohhhhhhhh my god he loves the smell daddy I want some sooo precious I got happy seeing him looks so good I love everything you make thank you
I make this all the time. Enjoy!
Yes. Three cans of soup is overkill.
We just like it really moist. We like lots of spaghetti sauce on pasta and lots on pizza, too! Thanks for watching our video. We appreciate it!
Looks delicious. New recipe to add to my dinner arsenal 😋
I hope everyone loves it!
just found your channel , love the down home , help from the store recipies , thanx for sharing
Thanks for joining us!
I repeat myself. I really appreciate your presentationns in your recipes. So good recipes
Hello from Alaska. I’ve got all the ingredients and I’m making it tomorrow…….can hardly wait!
Tom I love your cooking l would love for to cook a simple Mexican cornbread casserole you probably got a great one keep up the cooking and your wife does a great job filming and putting the recipes on line thanks Everette hunting
You're right on about size and price of food. Wonderful presentation. xxx
Looks so good!
Just subscribed.
You’re so right about the packaging. You really have to watch your ratios when baking sweets.
Just made it .....delicious! Thank you for sharing!
We’re so glad you enjoyed it! Thanks for letting us know!
@@comesitatmytable9044is
I made a few revisions: partly because i needed to use what I had on hand.
Look at your neat, clean and organized workspace! I love it!
Thank you for your encouraging words! We really appreciate that you have watched our video.
Great Video!! Liked the way you explained it all. T hank you. Can’t wait to try it. Looks delicious.❤
Hope you enjoy!
Looks delicious and love that it is so easy to put together! Who doesn’t just love a Mexican casserole! Thank you for another great video!
New subscriber and really enjoyed the video. Always looking for new and easy recipes to cook here on the farm. This looks delicious and will be trying it this week.
Thank you for subscribing! We hope you enjoy all our recipes.
I absolutely adore this recipe ( I figured I would, so I have an Xtra can of chilli)
Also an Xtra can of Rotel.
Definitely going to make this but cut in half to keep cost down. Thank you for the detailed video (great camera work too). 👏👏👏👏
Awww a compliment to the videographer! 😊. We are grateful you watched our video! Hope your family enjoys the casserole!
Ooh boy...looks delicious and easy all at the time. I love your videos...thank you! Blessings to you both.
Good idea
Hello Tom & Melissa. I have heard you mention you like the Red Gold brand. Try Red Gold 's diced tomatoes and green chilies. It is SO much better than Rotel.
Thanks for the tip! We will look into that.
I have just discovered your page/recipes and I just love it! Thank you
As a working, single mom of three, this was a favorite with my kids. But I have never used canned chicken in it, I'll have to give it a try. Thank you.
Thank you for this easy recipe. My son is coming Thanksgiving from Alabama and will arrive Thanksgiving late. I am cooking a traditional Thanksgiving dinner but since it will be late when he gets to FL we will celebrate day after Thanksgiving. I needed to prepare something that we could eat when he gets here on Thanksgiving evening. I plan to prepare this dish. 15:06 Thank you again. I tried the canned green beans recipe and soooooo.......delicious. Just found your channel this week.
We are so happy to have you with us at the table. Have a wonderful Thanksgiving celebration with your son! Thank you so much for watching our channel.
I like this recipe but could a person substitute something else for the green chiles? Could you use regular can tomatoes instead of the Rotel tomatoes? Some of us have very sensitive stomachs and cannot deal with green chiles and Rotel tomatoes. Thanks!
This looks amazing, I get tired of eating the same things over and over. I love the fact that your videos are full of new ideas and recipes. Keep them coming. Your new friend and follower Dawn Holder from Tennessee ❤
I made this dish and, it was delicious. Thank you Tom and Melissa.
Thanks guys for the great easy to understand recipes, I enjoy your channel keep up the great videos you've must have been wonderful teachers you still are enjoy your day.
I’m definitely going to make this casserole! Looks delicious
Hello! We are fairly new to your videos, and love how you put it all together. So, today we actually put this casserole together, and grandsons LOVED it!! So did I! Only thing I done differently was to add a dallop of sour cream on my serving!! Mmm! Perfect! Ty for showing and sharing your recipes with us. Tou and your wife have a Blessed day, and always.
( We live on Madison co. Near Berea) I think that might be sort of kind of close to yall, maybe??
Will definitely try this. I just came by your channel this week. ❤
Looks yummy💕. Will definitely give this recipe a try! Thank you for sharing!
Love y'all. My sis makes this mex chick casserole mixing it all in a bowl without layering. All cheese on top and it's one of the best things i've eaten. Your version look great but i think i'll take the easier route for lazy days.
Nothing wrong with that. We've always made ours this way but I'm betting it would turn out just fine to mix it all up first. Thank you so much for watching our channel. We really appreciate it.
We are trying this very soon! I love how you lay everything out in the order of usage. It must be the teacher in you! Retired elementary school teacher here!
Teachers can be spotted a mile away! 😊 We are very happy to have you watching and we hope you enjoy this casserole.
Wow!!!! TOM!!!! This looks absolutely delicious. I'm definitely going to try this out very very soon. You have all my favorite ingredients going into this. DORRITOS, CHEESES, SPICES. Can't wait to cook this very very soon.
Hey Tom you don't like to cook in a cast iron baking dish??? I'm willing to buy you one for you to use on your show. Id be glad to buy you a cast iron baking dish for you to cook with. Let's chat about how I can get that over to you. 😁

This looks fantastic. I love watching all your videos. Going to make this for sure. I made your taco soup today and cooked and drained the grease then I put it all in the crockpot and cooked it on low for 5 hours. It was the most amazing and delicious soup. It's definitely a keeper. Thank you so much.
We are so happy you tried the soup and enjoyed it. Hope you enjoy this one, too. Thanks so much for watching our channel.
