The only thing I would change is garlic powder instead of garlic salt, and I would eliminate the salt, as soup is high in sodium. I have to watch my sodium intake. Otherwise, the recipe is fine if you don't have restrictions.

Yes I would prefer the supermarket already cooked rotisserie chicken than the canned chicken but canned is a good alternative is you aren't able to get out the house or short on time.
My Mom used to make the original version of this in the 80’s. It was a Rotel tomato recipe called Hot Rotel Casserole. It only uses 1 can of Cream of chicken and just regular crushed up basic unflavored yellow Tortilla Chips (if you want to avoid the MSG in the Doritos). We split the layers of the chips: one in the bottom as the first layer and the other as the last layer on the top. It tastes like Chilaquiles from the Mexican restaurant. The first time my Mom made it my Dad said “Yum! What is this called? Please keep making it”. I make this often for my own family whenever I buy a rotisserie chicken. I can smell it thru the video🤤🤗💛
I can’t use the cream of soups due to our daughter having celiac disease but I’m thinking I will make a gluten free cream of chicken sauce and use a small, maybe 8 ounce tub of sour cream to make it it creamy. Thank you for mentioning your recipe uses only 1 can of soup. We buy a rotisserie chicken from Costco once a week so I will try that too.

I don’t want MSG in my foods so I buy Kroger’s Simple Truth line of Cream soups (they make both a Chicken and a Mushroom one) bc they don’t have any blatant or hidden MSG ingredients but I’m not sure about gluten issues.

Made this for supper tonight and we all loved it! I used enchilada sauce instead of Rotel and fritos instead of doritos and my own home canned chicken instead of cans (had to use what I had) but it was really good. Thanks for the recipe.
We love Mexican cuisine, soooo, I will probably add a black bean or refried bean layer and sprinkle some chopped cilantro in with the soup mixture. What I like about casseroles is you can always mix it up for variations. Bon appetit.

I just wanted to tell you how much I enjoy your videos , I'm not much of a cook since my husband passed but you inspired me to try the Mexican chicken casserole & I liked it so much that I just made it again but this time I used ground beef & condensed tomato soup , I did it exactly the same with these ingredients & it is so good ! I made this exactly as described, it was delicious. I ended up baking it for 50 minutes to get all the edges bubbly, it's pretty dense. The next day leftovers were really good too.
Years ago my son brought home a recipe for Mexican chicken and rice. His friend’s Mom had made it, and he loved it, so we’ve made it many times. It was made in a pot completely. I may try yours, but we really love this recipe, so not sure I’d replace that recipes for yours.
I hope it’s all right to post a recipe I’ve made for Mexican Chicken and Rice. 1 Tlbsp oil, 1 pound boneless chicken breast, cubed, 1 small onion, 1 small green pepper (I prefer red bell pepper), chopped, 1-10 ounce package frozen sweet corn, thawed, 1 cup chicken broth, 1 cup mild (or level of heat preferred), 1 and 1/2 cups Minute rice (instant), and 1/2 cup (2 oz) shredded Cheddar cheese. Twenty-five minute prep time. Heat oil in a large pot on medium-high heat. Add chicken, onion and bell pepper (this is raw chicken). Cook and stir until chicken is cooked through. Add corn, broth and salsa. Bring to a boil. Stir in rice and cover. Remove from heat. Let stand covered for 5 minutes. Fluff with a fork. Sprinkle with the cheese. Cover and let stand 2 minutes, or until cheese melts. Makes 4 servings.

Love this! I've been making a variation of this since the early 80's. Great thing about it is that you can change it up just about every time you make it. For the first layer I use plain Doritos, then chicken, onions & chilis then cheese (Velveeta & Cheddar/Jack). Then black olives & diced pimentos. Just one can of Cream of Chicken and one can Rotel. With the Rotel, no need for pepper and with the soup and cheese, no need for more salt. I mix the soup/Rotel with Mexican oregano,cumin,garlic powder. and spread over the top. I never had a name for it, but one time a friend from out of town was staying with us and he asked for me to make that chicken stuff, you know, that chicken s***. So for the last 20+ years we have called it "Chicken Sh**". LOL! Love your channel by the way!

Oh my goodness..now let me tell you something. I said I was going to try this one..I did for supper tonight..it was a HIT..!! My grandson LOVED it and so did my daughter..it was KNOCK YOUR SOCKS OFF GOOD..! I WILL be making this again..WOW it was so GOOD..!!!! Thank you for sharing this recipe..!! I didn't use a 9 X 13 pan as there is only 3 of us here. I used a 9 X 9 pan. It is the perfect size for us. So needless to say I did have to reduce the measurements. Ok I got to get off here..I got to go get seconds..lol..

I would stir the dry seasonings into the soups and not try to distribute over casserole with the measuring spoon. Run the risk of dropping the seasoning all in one clump using the measuring spoon.
As I have commented before, I LOVE your videos and your style of teaching. I have prepared many of your recipes and they are my go-to when I am cooking for someone besides me. This will be my next one. I just make your Teriyaki Crock Pot meatballs and buttered noodles, and it was a huge hit with the 2 college boys who rent my basement apartment. Too much salt. Substitute garlic salt with garlic powder. Use real tortilla chips than Doritos. Use real cheese than Velveeta.😮 Otherwise, it is a good recipe.

Thank you for your videos of delicious dishes and desserts that are easy to make. I never know what to bring to potlucks that are easy and your dishes seem tried and true and what most people would enjoy. We rarely eat casseroles like this as we eat mostly a Mediterranean and lower carb and no sugar diet so we rarely cook dishes like you have in your videos. If I could eat like this everyday I definitely would. But I would weigh 400 pounds if I did.

You could use rotisserie chicken from your local grocery store that is already cooked & you just debone it & it's fresh chicken. It would taste better than the canned chicken for sure.
How neat to see this video. My mom got this recipe from her aunt in TN in the 80’s. We call it chicken tortilla casserole. So many variations and yours looks delicious too ❤ canned chicken! Never thought of that!! What a time saver!

It's too bad that some people in the comments have to criticize those of us that need a low sodium diet. But there's ppl like that in every crowd, unfortunately.
Yummy, I would put my own spin on it. First of all I always cook boneless chicken breast in the crockpot. 2nd, I always pick out the little chicken chunks from the cream of chicken soup. (Yes, I am weird) 3. I just might use a shredded Mexican cheese. 4. I like to use Mrs. dash’s salt free original blend spices. 5. Use the following of Tom’s ingredients: rotel tomatoes, onions, S&P, etc. Remember, this is just how I would do it. (Nothing against Tom’s recipe)❣️
Hey this looked amazing; however, I had to make major substitutions because most of the items in this recipe were not available, The only 2 things "authentic" to this recipe that I was able to find were the Doritos and the Rotel. I used: a store bought rotisserie chicken, onion powder, garlic powder, seasoning salt, crushed peppers (I guess brand doesn't matter), mushroom soup, shredded TexMex shredded cheese. And, I couldn't find fresh onion nor frozen diced onions, I just put it in the oven, but I'm kinda upset because even though I don't mind one substitution or two, I mostly like to stick to the recipe so I can experience it as intended. I like this recipe but could a person substitute something else for the green chiles? Could you use regular can tomatoes instead of the Rotel tomatoes? Some of us have very sensitive stomachs and cannot deal with green chiles and Rotel tomatoes. Thanks!

My husband is not a chicken person so I use ground hb with taco seasonings! I add 2 mushroom, 1 chicken soups

Really great recipe! I will add reduced sodium black beans, maybe some enchilada sauce and some plain tortilla chips when I make this. Your recipe looked delicious. Oh my goodness..now let me tell you something. I said I was going to try this one..I did for supper tonight..it was a HIT..!! My grandson LOVED it and so did my daughter..it was KNOCK YOUR SOCKS OFF GOOD..! I WILL be making this again..WOW it was so GOOD..!!!! Thank you for sharing this recipe..!! I didn't use a 9 X 13 pan as there is only 3 of us here. I used a 9 X 9 pan. It is the perfect size for us. So needless to say I did have to reduce the measurements. Ok I got to get off here..I got to go get seconds..lol..

I would stir the dry seasonings into the soups and not try to distribute over casserole with the measuring spoon. Run the risk of dropping the seasoning all in one clump using the measuring spoon.

Too much salt. Substitute garlic salt with garlic powder. Use real tortilla chips than Doritos. Use real cheese than Velveeta.😮 Otherwise, it is a good recipe.

Thank you for your videos of delicious dishes and desserts that are easy to make. I never know what to bring to potlucks that are easy and your dishes seem tried and true and what most people would enjoy. We rarely eat casseroles like this as we eat mostly a Mediterranean and lower carb and no sugar diet so we rarely cook dishes like you have in your videos. If I could eat like this everyday I definitely would. But I would weigh 400 pounds if I did.

You could use rotisserie chicken from your local grocery store that is already cooked & you just debone it & it's fresh chicken. It would taste better than the canned chicken for sure.

How neat to see this video. My mom got this recipe from her aunt in TN in the 80’s. We call it chicken tortilla casserole. So many variations and yours looks delicious too ❤ canned chicken! Never thought of that!! What a time saver!
Sometimes a time saver is all that keeps us out of the fast food line! While we agree anything totally homemade is better - sometimes we are so grateful for a shortcut! Life can get hectic!

It looks very good, thanks guys! I do agree the sodium content is high, and since I have high blood pressure, l too would have to cut out some of the sodium. It's too bad that some people in the comments have to criticize those of us that need a low sodium diet. But there's ppl like that in every crowd, unfortunately.

Yummy, I would put my own spin on it. First of all I always cook boneless chicken breast in the crockpot. 2nd, I always pick out the little chicken chunks from the cream of chicken soup. (Yes, I am weird) 3. I just might use a shredded Mexican cheese. 4. I like to use Mrs. dash’s salt free original blend spices. 5. Use the following of Tom’s ingredients: rotel tomatoes, onions, S&P, etc.
Remember, this is just how I would do it. (Nothing against Tom’s recipe)❣️
Hey this looked amazing; however, I had to make major substitutions because most of the items in this recipe were not available, The only 2 things "authentic" to this recipe that I was able to find were the Doritos and the Rotel. I used: a store bought rotisserie chicken, onion powder, garlic powder, seasoning salt, crushed peppers (I guess brand doesn't matter), mushroom soup, shredded TexMex shredded cheese. And, I couldn't find fresh onion nor frozen diced onions, I just put it in the oven, but I'm kinda upset because even though I don't mind one substitution or two, I mostly like to stick to the recipe so I can experience it as intended. I like this recipe but could a person substitute something else for the green chiles? Could you use regular can tomatoes instead of the Rotel tomatoes? Some of us have very sensitive stomachs and cannot deal with green chiles and Rotel tomatoes. Thanks!
