Here in Texas we mix 1 cup Hot salsa and 1 cup ranch dressing and most people call it southwest dressing. It’s really good on that salad and often people replace the hamburger with little chunks of taco seasoned chicken. And most people add roasted corn cut from the cob into the salad. If you don’t have a way to roast corn every time you want to use it in a dish you can empty a can of corn into a frying pan with a couple of spoons of butter and let it simmer until it simmers completely dry. And then stir it once it gets dry until it gets a little brown around the edges and it’ll kind of dry roast like it does on a grill and get that roasted corn flavor. It won’t have a charcoal flavor but the butter really makes it taste like it’s grilled to me.

😢I put in this order so I can store in fridge and nothing gets soggy….. first the cooled meat, beans, onion, tomato, cheese, and lettuce on top to stay crisp….then store in fridge until ready to eat. Mix the ingredients in the bowl… let everyone serve themselves and add however much crunched Doritos and dressing to taste. Or if your taking to a party or potluck supper Add the Doritos and dressing when you get to your venue. Been doin this for 40+ years and it works great.

Great tip on draining the burger grease. It's faster (and easier) than spooning the grease out. Two things I'd do differently, add sour cream and don't crush your chips into the salad... use whole chips as scoops and save time washing utensils! Plus, any left over salad won't have soggy chips the next day. Chuck

You take one can of tomato soup, 1/2 cup of vinegar, 1/2 cup olive oil, 1/2 cup of sugar, one tablespoon of Worcestershire sauce and tablespoon of chopped onion. Put it all in the blender and blend it up. My husband can’t enough of that dressing. In fact I usually double the recipe. Also sliced olives taste good in it.

Been making this salad since my cousin made it for me and shared the recipe back in the early '80's. It was my introduction to Catalina salad dressing. Only difference, we layered the ingredients in the individual bowls and let each person mix it (or not) as it was eaten...keeping the lettuce and chips crispy longer (and in my opinion, not that it makes a hill of beans... a better visual presentation). We also used Fritos on occasion...This salad is definitely yummy!

This is one of our favorite salads. We have people on multiple diets in this house. Low carb. Lactose intolerant. Kidney diet. I prepare this salad with hamburger, low sodoum taco seasoning, lettuce, tomato, onion. And pinto beans, drained and rinsed. I serve the doritoes, cheese, and dressing separately so people can use a smaller portion if need be. Also, this way leftover salad can be stored in the fridge without getting the chips and lettuce soggy. Of course it will not last long. Thank you for this recipe. I knew I could make it for everyone with different diets, but I forgot some of the ingredients.

I have made this salad for 43 years and it is always a favorite. However, I don't use beans or onions but I do use black olives. I agree with you about liking it better when its fresh, I don't like soggy doritos. I have started leaving the crushed up doritos out of the mix and put them in a bowl on the side so you can add what you want and they are always crunchy! This has been my families favorite taco salad! Great to see you do it!

An even easier and cleaner way to extract grease from the meat is to mop it out of the pan with a paper towel or two. Just toss it into the trash when saturated. No greasy strainer to clean up afterwards. Save your foil for other uses.

That doesn't seem easier by any means. Besides that's a lot of grease to be sopping up w/paper towels. Also, the point is to drain the meat.

A friend gave me this recipe in the 90’s and I always think of her when I make it. Something else this reminds me of is a meal a local fraternal organization would put on that we would frequent at lunch from work. They called it “tacos” but what they would do is ask how many tacos you want. You tell them and they would take that many taco shells and break them up on a plate. You would then tell them what toppings you wanted, hamburger, lettuce, tomato, onion, cheese. They then would top all that with taco sauce or salsa. Hot, med or mild. It was delicious. Thanks so much for your videos!

When I make my taco salad I throw my diced onions in the hot pan after I have my meat drained and while I am stirring in the taco seasoning then I add my onions in the pan too. Most onions we just find have too strong of a flavor these days. I don’t want any color on the onions but it takes the edge off. ❤

I grew up eating this taco salad, my aunt brought this recipe from Texas to Minnesota in the 70's. Only difference is we put in cucumbers & use green onions instead of red or white onion. Then put all ingredients together, I remember eating this salad for all of our family get togethers.

I got that recipe years ago from my sister-in-law and like you, I love it. Thanks for reminding me about it. When I make it, I don't add any beans to it and I end up using two bottles of salad dressing. I used Russian Dressing in mind but Catalina would also be an excellent choice. I will be getting the ingredients for this salad later so that I can make it for my church group (we meet every Wed.) so that they can enjoy it as well.

I TOTALLY AGREE!! I also put the add in’s in separate bowls so everyone can add what they want. I also use sour cream and taco sauce on the side. My actual salad has the taco seasoned meat, onions chopped fine, and black olives. Crushed up Doritos and western dressing, but not drenched in western in case someone wants to add taco sauce

I do have stuff that solidifies the fat but your aluminum foil trick is cool. I’ve been making this salad (minus the onions and the beans) for a few decades. It was always a great addition to a potluck and it’s got to be the Catalina salad dressing or it doesn’t taste the same. 🇨🇦🇨🇦
