I am a widowed lady and I found your RUclips videos I have never made taco soup and I thought it would be too much for one person, but I decided to make it anyway. It was so delicious that I ate it for 4 days and I passed it out to my neighbors who loved it also. I ended up making another batch a few days later! Thank you

When my wife were first married ( 45 yrs ago ), we lived next door to a lady who had Down Syndrome. She was a sweet and kind person. My wife had very little culinary experience and felt badly about not really knowing much about cooking. One day she mentioned this problem and the lady showed her how to make this dish. Since we were living in San Antonio, Texas, she called this , Mexican Stew. We loved it and have been enjoying ever since. Thank you for sharing this recipe. It is a great way to feed a lot of people fast. No more than 15 minutes from start to finish. Enjoy!

Tip.....chopped onions and green peppers and some garlic in pan before you brown the meat and...never put the freezer bags in the frig in the racks...it will form frozen around the rungs and you wont get it out. I did this once so I know. Corn bread also is a nice addition. Great meal in the winter time.

I love soup recipes. Once I have made a batch, I freeze the soup in large muffin tins. When the soup is frozen I pop them out and store them in freezer bags. I often take my lunch to work. . . so I put one frozen soup portion in a soup mug with a microwaveable lid. By lunchtime the soup is thawed a bit and can be easily heated up for a hot lunch.

We love Taco Soup and we put a lot more beans in than you do, a few different things, and not a few things you do, however, i was just so curious I have to make this the way you did. I love watching you cook because you do not waste anything. You scrape a bowl it gets it all. These others channels act like there is a race to add things and leave so much left in a bowl or can. That drives me nuts. Such a waste. Your stuff is lined up, basically cleaning as you go and I so appreciate seeing that. I like how you present your dish and I too love to hear the stories behind the recipe or if its a family recipe your showing us. Thank You and Melissa for the way the Channel is presented to us and I do really love the recipes. I share them often and add you to my Pinterest which I hope is okay. Just a tip I use to freeze things in freezer bags...... I lay my bags of food on a small broiler tray (without the rack) in the freezer, so they stay flat. Then when frozen they stack better and don't have any bumps or curves! Just a thing I do. I have an old bottom pan I use from a discarded broiler pan, fits perfectly in my freezer. I use it to freeze berries or grapes or cut fruits first, then I put in bags after frozen! I freeze my chopped meat flat in bags and score it like a candy bar and then crack off a hamburger when I want one and not have to defrost the whole package of meat for 1 or 2 burgers! God Bless! ( soup looks delicious!)

When I was a kid we had a chest freezer. My Dad would by 25 lbs of hamburger when it went on sale.
We formed an assembly line in the kitchen and made hamburgers by hand. You knew exactly what size and thickness from practice. We would take cookie sheets and line them with wax paper. Lay out the burgers. 2 layers with wax paper between. Then Dad stacked them in the freezer. The next day when they were frozen we took them out abd cut the sheets into 4x3 burgers. My Dad had big zip lock bags he bought at a commercial restaurant supply. We filled those and zipped them up with a layer of wax paper on top. Back in the freezer they went, stacked high.
Then before school on burger days, one of our jobs was to take a big platter and open the zip lock bags and take out X number of burgers to thaw. Worked great already pre-shaped. Ready to hit the pan or grill when Dad got home. (Mom passed away from cancer) Sped dinner up. Toss the wax paper, wash up the platter and put the cooked burgers on it. Clean up was after the next nights meal prep, then wash or dry duty or table and kitchen clean up and trash out. We were always done in under an hour. Then back to finish our home work. I was the potato salad maker. Still make a mean potato salad.
Did I say my Dad was a Marine Corp drill sergeant as part of his time in the service? The bed was made before your feet hit the floor in the morning. As long as you did your assignments, he was cool.

Also all of those cans are added to 2 lbs of browned ground beef and an onion diced and sautéed, with one packet of taco seasoning. Topped with Fritos, grated cheddar, sour cream and hot sauce. Yummy! I love y’all’s use of the rotel so next time I make it I’ll switch out a can of the diced for the rotel, or just add it additionally 😊and also the hidden valley ranch dressing mix sounds like a great addition. • @Emme333
    @Emme333 8 месяцев назад +4

This recipe looks great and I'll have to try it.
For those on a cheaper budget...
    1 lbs cheap ground beef.
1 half cup of dried beans, any kind you like.
    1can rotel
    1 can corn
    1 pkg taco seasoning
1 large can of tomato sauce
1 large can of tomato paste
The day before start your beans soaking. If you have a lot of gas from beans drain them repeatedly through out your day. Just be sure to soak them for around well I'm not sure but i do it for 24 hours.
If you want to add something healthy get a small pkg of frozen chopped spinach. Defrost it in the fridge when you start soaking your beans. By the way it is ok to use only one type of bean and it can be whatever type you like.
Ok your beans have doubled in size. So cook your meat. A few differences... add 2 cups water and mash the meat up. If you want extra seasoning or don't like the smell of meat cooking add some garlic and/or onion powder, some pepper and i like dried basil. If you have really stinky meat... i add diced Jalapeno and Jalapeno juice, not much, and it really cuts that smell. Boil the beef and water for about 20 minutes.
Now you can drain your corn or not but add your beans and corn to the beef and turn it down to about medium or a little lower. This would be a good time to add spinach or collard greens. Just make sure it is chopped fine. Let it cook for maybe 10 minutes. Lower the temp again to simmer.
You need a large bowl. Something that can take heat. Put half your tomato paste in the bowl. Add your taco seasoning. Now using a small pot or laddle or i use a 2 cup measuring cup scoop out some of your hot liquid CAREFULLY from your meat mixture and slowly pour it in your bowl of tomato paste a little at a time. When you have a little water in the bowl stir the paste and seasoning. You are just trying to make sure your seasoning doesn't clump and to thin down your paste. Add more hot water to the paste and stir. Now slowly add your paste to your meat mix and stir. When your bowl is empty add the rest of your paste and thin it down with hot water from the pot and stirring then add it to the pot. Turn your pot off now.
Adding the tomato products at the end to a simmering pot helps to keep it from sticking.
Now add your tomatoe sauce. Cover the pot. And remember it should already be turned off. Let it rest about 10 minutes. Then enjoy.
I put this on here for people with IBS, the beans are a problem. For people with Diabetes, all the beans and chips are carb heavy. For people with a tight budget, this version is cheaper. Even with today's food prices.
You may have noticed that I didn't say drain the meat. The fat adds some flavor and we aren't adding sour cream or cheese which adds fat and flavor to the video version.
I hope this helps some people and that no one thinks I'm being disrespectful to the video creators. No disrespect meant. Bless you all.
