They eat the meat too, the Chinese cooking method will always fully cook meats before serving, either stir-fried in the hot wok or boiled in the pot, the high temp would kill all bacteria. I have worked for many Chinese restaurants (and other restaurants too) in the US for years, and none of them follow the laws for the preparation process of the food strictly but not one food poisoning incident happened during my work time. 🤷♂

Our local Mexican restaurant was shut down for serving meat that has been left unrefrigerated for days.. the health authorities found rat droppings on in the kitchen utensils etc… and one of my mom’s favourite Thai restaurant was fined for breaching food safety guidelines.. we stopped eating out now.. home cooked meals are safer..!!

I've sadly worked for two Chinese owned restaurants and the owners never ate the food out of the kitchen. They always made their own or brought it from home. They had roaches and mice, prepped food on the floor, left pools of water standing, soaked rags in a smelly bleach bucket instead of back to the cleaning services, no hand washing, cross contamination, no hats/hair nets, food and utensils dropped on the floor and being served or used, and that's just surface issues. Many Chinese restaurants only do minimum like prep meats and veggies but all the sauces and specialty items are purchased and heated up under the claim of homemade. That's why so many Chinese restaurants seem to taste the same at least in the US. The Chinese way is minimal effort for maximum profit even if it risks killing customers.
I was at taco bell the other day and they walked around with gloves everywhere went outside and came back inside with the same gloves making my damn food. I told them to change gloves !!
I saw something like this at a Starbucks and they don't even wear gloves to prepare stuff. The manager stated the employees are expected to wash their hands every time they are at the food counter. I got a refund and left.

Not only is running water on what probably was frozen pork from a garden hose is potentially unsanitary considering what may be in the water, but also, the water from an irrigation system leading to the hose would be over 40 degrees Fahrenheit. The pork would already be in the temperature danger zone by the time it's thawed out. Not to mention adding the outdoor temperature in the equation. Not meat should ever be thawed in warm water and be over 40 degrees before cooking. That's when bacteria grows. That's completely irresponsible and extremely dangerous to be serving people food like that. Everyone who works in the culinary industry knows that! I did some basic culinary education and worked in a BBQ restaurant for seven years and this is probably the worst thing I've ever heard of or seen.
Maybe about 15 years ago, we had a plumber come to our house, as we had a backed up sink. My dad and I started chatting with him and he told us he used to live in Westminster, & would do frequent plumbing jobs at Asian restaurants. He pretty much told us to stay away from them. He would find trays of raw meat sitting in backed up water on the floor, etc.

According to a family friend who owns a Chinese restaurant in the U.S., DO NOT every order any of those so called "Sweet and Sour" and/or deep fried meat dishes. He claims that those dishes tend to be made from the poorest and cheapest quality meats they can find. Instead, order the steamed and healthy dishes (if there is such option on the menu) as those tend to use the freshest and better quality meats.
Unfortunately that's a main dish that people go for. Most people going to Chinese restaurants aren't going for a steamed dish, even more so if you're getting takeout.

I was there one time because someone recommended it and they are popular because they stay open late for the casino and club customers for a late bite but this is totally disgusting. I am so glad that I didn't get to eat anything because the chaos between a customer and the manager got racial and loud, so we left.
All the workers are handling the food properly and washing their hands when the inspectors are there and as soon as the inspector leaves, everything goes back to usual. No washing hands, sneezing on your food, putting the food back on your plate after dropping it on the floor etc…There’s no such thing as a clean restaurant, only acceptable at best. I One way to filter is to walk down the back alley of the restaurant to see how clean it is and usually in the summer they have the rear door open. You can take a peep inside. I walked down the rear alley of a bakery once and saw all the baked goods that just came out of the oven on a trays all on a trolley at the rear of the bakery in a filthy room with the rear door of the restaurant open and flies everywhere. In the front of the bakery, people were all lined up to buy those goods without having any idea what’s happening at the back of the bakery. If you’re only in the food business to make money, then you should not be in this business. There are other ways to make money. Food business, you are risking people’s health if protocols are not followed. On top of the money, it should be a passion to serve good and clean food to people.

Chef here. This is completely normal way to thaw pork. We do this in Mexican restaurants too. Maybe not outside with a hose, but same. Not a big deal, especially if you're going to cook it in a wok. Those things burn up to 700+ degrees. Roaches and vermin on the other hand is a big NO NO. Need to clean that place up to pass inspection. Key to a good Chinese restaurant is to see who is eating there. If you're surrounded by white, walk away. If you're surrounded by yellow, stay and mellow.
i thaw my frozen meat by submerge it in hot water inside basin, cver the basin with something (towel, another basin, plastic wrap) and its gonna be ready in 20-30 mins. i heard that in mainland china its common for ppl to clean meat outside on running water, which is unsanitary for restaurant level

Was surprised to see many pots filled with soup/food to the top at most if not all the restaurants in Zion with no lids on. This would be like a rats buffet paradise. No it won't. That meat is not being kept at a safe temp, like 45 degrees. It's probably outdoors for several hours. The bacteria and dirt from the hose adds to the danger. Plus the flies. Heat doesn't kill everything.

In the last 3 years, especially since COVID, I notice Eating out food quality is down The quantity of the meals is down Card surcharge 1 or 1.5% Weekends 15% surcharge Public holidays 25% surcharge >> It's totally not worth eating out. Asian restaurants are the dirtiest. Used to work for a utility company. Sometimes would have to enter these places in the many Asian areas in our service area. Gross. They all smoke too. Seen food outside covered in flies. The worst was a Buddha temple place. Literally fish hanging from clothes lines by the hundreds, trillions of flies on them. Couldn’t open your mouth and had to squint to keep them out. Turned around two steps in. I refused to do the job. Supervisor came out and he damn near threw up. Another was ducks or geese hanging and looked to be covered in peppercorns until we got closer and they all flew away. They too covered in flies. Seen what was a hundred year old lady in flip flops cutting food on a piece of wood on the kitchen floor one time. Could go on and on. Little India the spices so strong they made you gag and eyes water. I’ll pick on a favorite of everyone’s. I’m not a fan and don’t get it. Anyway. In&Out, open buckets scattered in the kitchen of peeled potatoes and the water not very clean. No lids, wide open.

I walked down the rear alley of a bakery once and saw all the baked goods that just came out of the oven on a trays all on a trolley at the rear of the bakery in a filthy room with the rear door of the restaurant open and flies everywhere. In the front of the bakery, people were all lined up to buy those goods without having any idea what’s happening at the back of the bakery. If you’re only in the food business to make money, then you should not be in this business. There are other ways to make money. Food business, you are risking people’s health if protocols are not followed. On top of the money, it should be a passion to serve good and clean food to people.

Chef here. This is completely normal way to thaw pork. We do this in Mexican restaurants too. Maybe not outside with a hose, but same. Not a big deal, especially if you're going to cook it in a wok. Those things burn up to 700+ degrees.
Roaches and vermin on the other hand is a big NO NO. Need to clean that place up to pass inspection.
Key to a good Chinese restaurant is to see who is eating there. If you're surrounded by white, walk away. If you're surrounded by yellow, stay and mellow.

i thaw my frozen meat by submerge it in hot water inside basin, cver the basin with something (towel, another basin, plastic wrap) and its gonna be ready in 20-30 mins. i heard that in mainland china its common for ppl to clean meat outside on running water, which is unsanitary for restaurant level

Was at the Korean market/restaurant Zion cleaning up oil from the hood vents a little past midnight working for an kitchen hood/vent cleaning company. Was surprised to see many pots filled with soup/food to the top at most if not all the restaurants in Zion with no lids on. This would be like a rats buffet paradise. Been avoiding eating out at Korean restaurants since then

Be worried when they don't cook it. They are running fresh water through it. That's how it's done in the kitchen. Other than possibly contaminating the grass behind the restaurant what are they doing wrong?

No it won't. That meat is not being kept at a safe temp, like 45 degrees. It's probably outdoors for several hours. The bacteria and dirt from the hose adds to the danger. Plus the flies. Heat doesn't kill everything.

Unless they get shut down for good they wont care. This place is known for being the most authentic chinese food in south florida. They dont even really want to be serving american customers, their many chinese customers will still support them

Asian restaurants are the dirtiest. Used to work for a utility company. Sometimes would have to enter these places in the many Asian areas in our service area. Gross. They all smoke too. Seen food outside covered in flies.
The worst was a Buddha temple place. Literally fish hanging from clothes lines by the hundreds, trillions of flies on them. Couldn’t open your mouth and had to squint to keep them out. Turned around two steps in. I refused to do the job. Supervisor came out and he damn near threw up.
Another was ducks or geese hanging and looked to be covered in peppercorns until we got closer and they all flew away. They too covered in flies. Seen what was a hundred year old lady in flip flops cutting food on a piece of wood on the kitchen floor one time. Could go on and on. Little India the spices so strong they made you gag and eyes water.
I’ll pick on a favorite of everyone’s. I’m not a fan and don’t get it. Anyway. In&Out, open buckets scattered in the kitchen of peeled potatoes and the water not very clean. No lids, wide open.
