Never a DAAL MOMENT here with this amazing Black Lentil recipe (Dal Makhani)

    HOW TO MAKE VEGETARIAN / VEGAN DAL (Dhal or Daal) MAKHANI RECIPE
    LAY HO THERE! I think one of the most comforting recipes out there. Join me in this episode and learn how to make a deliciously hearty dal makhani recipe today!
    Ingredients:
    1/2 cup pre-soaked black lentils*
    2 pieces garlic
    small piece ginger
    1 red onion
    1 Roma tomato
    3 tbsp chili oil ( • Most addictive Red Chi... )
    1 tsp cumin seeds
    1/2 tsp turmeric
    1 tsp sweet paprika
    1 tsp coriander
    2 tsp garam masala
    1/2 tsp cayenne pepper
    generous pinch of salt
    3 tbsp tomato paste
    1 1/2 cups water
    2+2 tbsp coconut cream
    Directions:
    1. Drain the pre-soaked lentils and set it aside. Grate the garlic and ginger. Finely dice the red onion. Dice the Roma tomato
    2. Heat up a sauté pan to medium heat. Add the chili oil followed by the cumin seeds. Fry the seeds for a few seconds, then add in the red onions. Sauté for 3-4min
    3. Add the garlic and ginger. Sauté for about 2min. Add the turmeric, sweet paprika, coriander, garam masala, cayenne pepper, and salt. Cook the spices for about 1min
    4. Add the tomato paste and cook for about 1min. Add the Roma tomatoes and cook for a couple of minutes
    5. Add the black lentils, give the pan a good stir, and cook for about 1min
    6. Add the water give the pan a good stir. Turn up the heat and bring to a boil. Give the pan another good stir, then cover and cook on medium low for about 30min
    7. Use a fork to mash down some of the lentils. Add 2 tbsp of coconut cream and stir
    8. Plate the dal and drizzle over some more coconut cream. Garnish with fresh cilantro and serve with rice or naan
    *soak the black lentils overnight with 2-3 cups of water

    Don't be discouraged about finding black lentils at an Indian grocery. Yeung Man's market didn't have them, but they are quite common in Indian markets. Ask for "Urad Dal" if they don't recognize the term Beluga lentils or black lentils. The price will probably be better there, too. 🙂

      Urad dhal is not black lentils the lentils he has used is lens shaped circular. Urad dhal is a bean variety and has a totally different consistency. It can be used in this recipe but it is not lentil.

      @@tanjorebhuvaneswari3429 - Urad dal is the opened polished version of "Kaali Dal" (Black lentils) . Kaali Dal is basically the whole unpolished bean of the urad dal.

      Urad is a small black colored bean. Black beluga lentils are lentils. They are 2 different things entirely, but both delicious!

    Nice recipe! I do want to point out though that since you didn't add any kidney beans, this dish is more of a Daal Bukhara. Daal Makhani usually has approx. 4 parts black lentils and 1 part red kidney beans (can be altered based on preference, but lentils always more in quantity than the beans). Also, try adding crushed dried fenugreek leaves as a garnish if you can find it. Adds a slight hint of bitterness that goes really well with the velvety texture of the daal.

    One tip that will elevate the flavours.. I don't see non indians doing this but it's must in Indian households.
    Heat the oil don't smoke just heat.. then add the tempering.. first goes mustard.. add one or two and check if they pop immidietly if not then wait the oil to heat up.. then add the mustard.. once popping slows down then goes cumin.. should pop or splutter immidietly. Then add onions or other stuff.. the temperature of oil is very important.
    Also the powder spices go in this order
    Coriander powder then cumin powder then turmeric lastly chilli powder.. this is because of the roasting time required for each spice is different. Try.. hope it helps.. lovely recipe 👍

    Wil, anyone can see how well you maintain your knives - look at it slice through the tomato skin like it's butter!     Good attempt Mr. Yeung. I appreciate that you put a disclaimer in the beginning that this is not the only way of cooking dal makhani. This scrumptious dish originated in the state of Panjab(India and Pakistan) and is a typical Panjab cuisine which other parts of India try to appropriate. There are few important steps which were missing from you recipe which is that the lentil has to be boiled along with some kidney beans in plain water for at least 2-3 hours, because only after this its creaminess comes out. The “makhani” in dal makhani literally mean butter and one cannot simply substitute butter with coconut cream, coconut cream cannot create the magic of butter. Also using coconut milk is more of a south indian and east asia thing.

    Oh, happy day. Dal Makhani is my favorite of ALL the dals!!!! My only recommendation is to double or triple the amount to initially make. You'll thank me later when there's leftovers. Delicious. This will take much longer to cook to completion than you think it will, most of the afternoon, but, boy it will be worth it. Serve with a chapati or paratha. Heaven.

    Smoking the dal takes it to the next level. Take a piece of cinnamon and set it to fire and let it burn until you see some grey ash and it looks like an ember. Then put a bowl in the dal, in which you can put the still hot cinnamon stick and pour a spoon of ghee on it. It should release smoke continuously. Cover the dal tightly to retain the smoke and let it go 5 minutes. Pour the remaining ghee back into the dal when done. Discard the cinnamon.
    This technique is called “dhungar” and it recreates the effect of old fashioned wood or coal cooking.

    Lovely video and recipe. I would change one thing, though! All the spices in Garam Masala are already toasted and it's usually put in at the end of the cooking to preserve more of the wonderful flavor it brings!

    For those avoiding fat in their diet, fig leaves taste like coconut! I make fig-leaf-tea and then blend cashews to make it creamy. This faux coconut cream works for me! (I've got 2 fig trees and dry the leaves to keep for for winter curry.)

      @@viviana8577 Hi! The latex in fig leaves can be very irritating to the skin. However, Fig LEAF is SAFE for most people when taken by mouth for up to one month. However, in high doses, fig LATEX, the sap from the tree, might cause bleeding in the digestive tract in some people. Applying fig leaf to the skin is POSSIBLY UNSAFE. It can cause skin to become extra sensitive to the sun. The fig tree's leaves are packed with vitamins. They are a good source of vitamins B1, B2, and A. And they also contain phosphorus, manganese, potassium, sodium, iron, and calcium. What's your source that says it's poison?

    My lentils still a little firm after cooking a good hour. Maybe I didn’t mash them enough, I’ve got them on simmer for a little longer.

    As an Indian, the title really made me smile. Good one.
    A tip - when you add the tomatoes, add a pinch of salt. Helps in breaking down the tomatoes and makes them cook faster.

    In India this is usually served with Rumaali Roti(or Velvety Roti). It's not easy to make but boy the Daal Makhani and Rumali Roti combo is Heaven!!!

    Veni, vidi… Being home bound in the Eastern Townships by the smog from the northern fires, not being able to enjoy our daily gravel bike ride, I was saved by the YeungMan’s new recipe. Was lucky enough to find a pack of Belugas, which I promptly returned to water overnight. Completed this simple yet stunning recipe this morning. Once again flavour and umami in a healthy meal.     This is my speciality. My dad loves it when I make it. Serve it with naan. So like a long with lentils, soak 3 tbsp of kidney beans. That's how the tradition is.😊

      I have never ever seen Dal Makhani with the other colored lentils, due to the different cooking times of the variety of lentils. I guess I'm a purist taught to me by my Indian mother and grandmother.

      My aunt is Malaysian Tamil and every single person in her very large extended family has a different idea about exactly what dal makhani is lol. So I don't think there's any hard and fast rules really. Whenever I order it at a restaurant I'm never quite sure what I'm going to get.

      ​@@spicerack4397either your folks make dal makhani with just 1 type of dal (a bit rare) or your knowledge on Indian cuisine is limited. The cooked and mashed lentils blend themselves into the thick tomato sauce and cream which can make it difficult to identify which dals have been used.

    I have tried this exact same recipe with soaked and cooked black beans, and it is also divine. Full fat coconut milk is a must. Also, when sauteing the onions and spices, add the chopped coriander stalks, don't discard them.

    Thank you - just cooked it and the stock was so delicious even without the coconut cream which I didn't have in my cabinet...will try next time but the lentil soup is just delicious.😀

    I buy a packaged lentil dal, but I've been wanting to make my own. I've been looking for this recipe. The only thing I would do differently would be to add kidney beans. I love lentil dal poured over a split baked potato. 😋

    Astonished that I actually found the lentils at Stop & Shop, a very large grocery chain here in Rhode Island. Wow! They are so different and earthy! I soaked them 16 hours by accident, but they were perfect. I keep a jar of you amazeballs chili oil handy and had all the spices on hand as I often cook Asian and Indian cuisine. Wish I could post a photo of the finished dish as it was so beautiful!

    this is very similar to our traditional Greek lentil soup! although the flavor profile in ours is basil and red tomato paste

    I've been looking for black lentils for a while now. I even went to my local Indian grocery store & they did not have them there. I was, for some reason, just loathe to order some online. Anyway, fast forward to today when I went shopping at a health food store a few miles from my house and VOILA they were in the bulk bin section...yay!
    Wil, thanks for this recipe as this is the one I'm going to use to cook my black lentils. The other recipes I came across looked ok...but this recipe really seems superlative when compared to the others I looked at. Wil, thanks again for elevating my culinary game. I'll let you know how they turned out.

    Beluga lentils are a bit of a luxury, but the deep earthen and nutty flavour are so delicious, they really take it to another level. I also adore them in Buddhabowls and salads (especially with a vinaigrette that is made with a drop of truffled olive oil) . Thank you for the lovely recipe.

    For those of us who follow Ayurveda, pitta types can ease the amount of hot chili oil or eliminate. Use other oil and still yummy. This is an awesome recipe. Of course.

    dal makhani is one of my fave dishes but ive never been able to recreate it at home well... i might have to give this a try and add some kidney beans too!

    I use the Dal Makhani recipe from @rainbowplantlife but I will certainly try this one too. I’m lucky to have multiple spice bazaar’s near me and access to the lentils 🎉

      This is more of a daal bukhara than a daal makhani. The difference is that daal makhani adds rajma beans to it, whereas daal bukhara uses only urad whole beans. 🙃 Also, if you visit a spice bazaar, pick up some hing (asafoetida); a pinch of hing added to the oil after the cumin seeds splutter makes this dish 👌🏽.

    Fantastic recipe. Best to add the Garam Masala at the end though! Garam Masala spice comes pre-toasted.

    This was delicious. I love adding the chili oil to Indian stuff it's really good and the spices are complimentary. I actually made this with a mix of dals that I wanted to use up, including some horse gram which gave it a little chewiness.
