This classic Iberian-style grilled ham and cheese is often served as tapas (small plates). Made with Jamon Iberica ham, the dish is said to have originated in Barcelona in 1953, at a nightclub called La Sala Bikini.
My bikini sandwich recipe is elevated with Manchego Spanish Cheese, truffle aioli and black truffle oil. Then, as a finishing touch, we add a nice shake of truffle powder over the sandwich and plate.

First of all, the sandwich looks absolutely delicious!
But it is not a bikini sandwich. For a bikini sandwich you'd not use serrano ham, you'd use "cooked/boiled ham"? I don't know how to translate it to English, in Spanish it's "jamón cocido" xd.
Also, I've never seen anyone doing it with grated cheese, always sliced, but that doesn't really matter that much, as it'll end up melted anyways.
And a little fun fact: this sandwich is only known as "bikini" in Catalonia, due to it being served in a disco in Barcelona with the same name. In the rest of Spain it's known as "mixto" (mixed), or simply "sándwich de jamón y queso" (ham and cheese sandwich) :)
