Dude! I have been an evangelist for a while now. I have made many of the recipes (just the way you do it) and everyone I serve is BLOWN AWAY! This is by far the best chicken sandwich I have ever had. We already have a cabinet dedicated to Cholula and Meat Church, so this was easy. I also agree with everything Mrs. Meat Church tells you, but she is indeed wrong on this. I did the thigh meat and the breast meat. That will never happen again. I always go for white meat with fried chicken, but this sandwich will never be made at my house with anything but the boneless, skinless thighs. I share your site and recipes with everyone, and give your rubs out as gifts. On tap this Fathers Day weekend... The Cheerwine (I live in North Carolina) pulled pork (Cherry pellets on the Traeger) with homemade slaw on Saturday, and salmon with the maple-butter glaze on Sunday. By the way, I have five Meat Church retailers within five miles of me, so life is good!

Escabeche is why. Carrots have a unique capacity to absorb spiciness. For example, if you put sliced carrots into the liquid from pickled jalapenos, the carrots will 'absorb' the spiciness, leaving the liquid much milder, while the carrots will become very spicy and delicious.
Saved this for a couple of weeks and finally tried it yesterday. This is the most awesome chicken sandwich I’ve had in years. Added avocado and jalapeño ranch to mine.

Made these sandwiches last night and they were spot on. I used leftovers tonight to make chopped chicken/cheese sandwiches and they were a step up from the night before to which I will give credit to marinating for another night in the fridge. Another great recipe, thank your buddy Judd for putting you on to this one.
DUDE! I just made this, OH MY GOD! Without a doubt the BEST chicken I have had that wasn't fried of course, and even then it is close to that. Only difference is I seasoned the dry chicken, 15 minutes before cooking with: Salt, Pepper, Garlic, Chili Powder, Ground Cumin, and Paprika. I also used the green hot sauce as I like it better. It was so freaking good! And so simple to do. I did it on my gas grill and I can't freaking wait to do that again. Holy hell man, thank you RUclips algorithm for popping this video up the other day. I think I will turn the left overs in to either fajitas or chicken quesadillas. So good man, cheers!

A cook where we stayed in Cancun yrs ago made this sandwich for us and we were instantly hooked. He showed us his secret and were even more blown away. Best chicken sandwich EVER
Great recipe. Ton of flavor in this one. Had to make a substitute on the rub because the local bbq supply had everything meat church but the fajita rub. So i used malcombs grande gringo. Turned out fabulous. One of the best recipes ive tried out in a good while.
Made 2 times , just easy and wow good. I reduced some of the pickling brine and the number of jalapenos , due to some people I grill for are high spice adversed . Used 3/4 and I could taste some spice 1st time. There was hardly any spice the 2nd time. Will be making on regular rotation, I grilled the chicken over lump charcoal , FANTASTIC !
I made this today in my smoker. I let the chicken thighs marinate for 24 hours, I threw the Cholula and butter into a small cast iron Dutch oven style pot (about the size of the one you used) along with a few gloves of smashed garlic (peel and all), and put all of it in the smoker too. Basted the chicken every so often with the sauce. Damn they came out awesome!

This was awesome!!!!! My 15 yo daughter loved this and my picky wife. I did ease up on the heat. Only marinated for 12 hrs and used less hot sauce. We used Colby jack cheese and where I’m from we use Hellmans. I garnished with lettuce tomato and pickled onion. Will probably make this once a week.

Matt - HOLY GOODNESS, we just made this and it will be my go to chix sandwich from here on. We were out of Fiesta, so used Voodoo, gave it even more of a kick but not too much. The warden does not like spicy and she was in love with it. Tell your Volleyball dad he is the man for sharing!!!

I made this today... i did breast and thighs because my home is the same as Matts, the wife isnt a fan of thighs. I only marinated for 5 hours, put rub on, used a gas grill and basted with cholula butter mix (first time) - the end product was INCREDIBLE! My wife said it was it was the BEST grilled chicken ive ever made - Thank you Matt
Made it this evening. Used a zip lock, marinated 24 hrs, cooked on Traeger, basted with Cholula butter and everything just like shown here. Was the bomb-diggitty! Didn't make sandwiches,just as is with sides. Everyone absolutely loved it. Taste was weirdly reminiscent of hot wings, and we love hot wings. Such a cheap meal too, give this a try. Definitely putting this on regular rotation.
Just brined chicken thighs overnight(about 24 hours) in Mrs Renfro’s jalapeño. I didn’t do the butter/hot sauce thing… but they were absolutely perfect. Thanks for the great idea!

Huge fan of any recipe that uses chicken thighs for sandwiches, tacos, enchiladas, etc... this is a very simple yet flavorful method ... could replicate it with Franks Buffalo Wing sauce but like the idea of Cholula, its a staple in our kitchen... have made Buffalo/Blue Cheese Shredded Chicken Thigh sliders as well ... thanks for the video and recipe!
I finally had the opportunity to try these out and they were awesome. I did Voodoo rub on half and honey hog hot on the other half. Voodoo came out spicier but they were both great.

Fajita seasoning is my favorite rub. I pair it with a sweet rub on the pork I cook and I use it as a standalone. Such a great rub.

How long did you smoke them for in the Traeger? What temp as well?

Did this with Onion buns, blue plate mayo (the only mayo you should ever use), smoked cheddar, guacamole, sweet and spicy pickles. Fantastic

It's always been a tradition to pickle jalapenos with carrots onions and a little oil.
I've been doing it for over 50 years.
Huge fan of any recipe that uses chicken thighs for sandwiches, tacos, enchiladas, etc... this is a very simple yet flavorful method ... could replicate it with Franks Buffalo Wing sauce but like the idea of Cholula, its a staple in our kitchen... have made Buffalo/Blue Cheese Shredded Chicken Thigh sliders as well ... thanks for the video and recipe!

I finally had the opportunity to try these out and they were awesome. I did Voodoo rub on half and honey hog hot on the other half. Voodoo came out spicier but they were both great.
