Mexican Grilled Chicken - My New Fav Sandwich!

  • My buddy Judd McCutchen called me one day and said, "Man, I have a recipe you need to try and make a video with that recipe." The next day I brought a few simple ingredients which was basically chicken thighs, a can of pickled jalapeños and some hot sauce. I made the chicken and immediately decided to make this for the Meat Church Congregation. This delicious grilled chicken can be eaten plain, used in a sandwich, tacos or quesadilla. This chicken is warm, but I wouldn't consider it too spicy because the jalapeños are pickled. In this video we grilled this directly over high heat, but you can use any type of cooker you desire to make this chicken. We ultimately used this chicken to make a sandwich with cheddar cheese & mayo which complimented the heat perfectly in my opinion.

    Dude! I have been an evangelist for a while now. I have made many of the recipes (just the way you do it) and everyone I serve is BLOWN AWAY! This is by far the best chicken sandwich I have ever had. We already have a cabinet dedicated to Cholula and Meat Church, so this was easy. I also agree with everything Mrs. Meat Church tells you, but she is indeed wrong on this. I did the thigh meat and the breast meat. That will never happen again. I always go for white meat with fried chicken, but this sandwich will never be made at my house with anything but the boneless, skinless thighs. I share your site and recipes with everyone, and give your rubs out as gifts. On tap this Fathers Day weekend... The Cheerwine (I live in North Carolina) pulled pork (Cherry pellets on the Traeger) with homemade slaw on Saturday, and salmon with the maple-butter glaze on Sunday. By the way, I have five Meat Church retailers within five miles of me, so life is good!

      @@fredstevens129 Buddy I have 35 pits and smokers including 6 offsets if you want to flop them on the table and measure. Don’t bring a water gun to this fight. PS - you’ll life will be way better when you quit worrying what type of smoker people choose to use. That’s not the point. One day you’ll look back on the memories you created around good food and it won’t have anything to do with the name brand on the cooker. Be well. Cheers!

      @@MeatChurchBBQ You do indeed have many pits. I've met many a man with many guitars, and they still can't play. But flop away, I''m sure you're just as impressive as the other guys that make such crass references.
      But seriously, the joke was on the Traeger tin cans, not on you or your other pits. But it's funny how I watch your show and usually enjoy it, but sort of feel like you're pushing Miller Lite and Traeger and I wonder if I'm not watching an infomercial. Yet still I enjoy seeing what you're doing most of the time.
      The fanboy who "won't even google it" has a serious case of rectal-cranial inversion and apparently has some kind of man crush on you and your enormous...................................................................... number of smokers. LOL
      Take it light man. Keep making the good BBQ. But seriously...Traeger makes some tin can garbage. But the money is good, eh?

    Escabeche is why. Carrots have a unique capacity to absorb spiciness. For example, if you put sliced carrots into the liquid from pickled jalapenos, the carrots will 'absorb' the spiciness, leaving the liquid much milder, while the carrots will become very spicy and delicious.

    Saved this for a couple of weeks and finally tried it yesterday. This is the most awesome chicken sandwich I’ve had in years. Added avocado and jalapeño ranch to mine.

I didn't drink beer like I was going to. I didn't feel like going to the store. I'm assuming I would have had at least 3. I took my time. Stepped outside for a cigarette break a couple times but all in all it was about a 3 hour project for me but it wasn't like it was difficult or anything . Only pictures but everything is pretty organized and labeled although I didn't see any #s on the actual pieces like it shows in the diagrams. Only the screws were labeled. On the cardboard part of the packaging on the back side. I put it together in my living room too. It wasn't supposed to rain today but it's Michigan and I couldn't wait so I put it together in my living room. Without beer but beer would definitely have made it more fun that's for sure. I'm giving this a 5 for easy assembly. I'll update after it stops raining when I can take it out of my living room and cook some food on it. Hope this helps at least for people who think they can't put this together because I did and you can too . And there are extra screws. I got nervous and immediately came here to see if others had the same experience and they have. You're not doing it wrong. There will be extra screws. Be patient. Don't rush it. Drink beer. Happy assembling

    Made these sandwiches last night and they were spot on. I used leftovers tonight to make chopped chicken/cheese sandwiches and they were a step up from the night before to which I will give credit to marinating for another night in the fridge.     Making these for Fathers Day tomorrow. My dad, who is 80 years young, loves anything Jalapeño so, he is getting these tomorrow. Matt, thank you for everything you do! I have tried damn near everything you have done videos on and have not been disappointed once! I am in Montgomery Texas, I have friends that own the bowling center in Waxahachie, I will be visiting the store at some point in the very near future.     I made this for Farther's Day, hands down the best chicken I and my family has ever had.

    Tried this recipe as I had all the ingredients and yes it was the bomb............ not hot at all but had a great kick to it.
    Love the fajita seasoning........... the pulled pork tacos are the bomb also with this seasoning.

    Great recipe. Ton of flavor in this one. Had to make a substitute on the rub because the local bbq supply had everything meat church but the fajita rub. So i used malcombs grande gringo. Turned out fabulous. One of the best recipes ive tried out in a good while.

    Fajita seasoning is my favorite rub. I pair it with a sweet rub on the pork I cook and I use it as a standalone. Such a great rub.

    I use a lot of pickled jalapeños in a lot of my BBQ sauces. So easy to cut that heat down with the smallest things. My kids 2, 4, 8, and 11 love them.

    DUDE! I just made this, OH MY GOD! Without a doubt the BEST chicken I have had that wasn't fried of course, and even then it is close to that. Only difference is I seasoned the dry chicken, 15 minutes before cooking with: Salt, Pepper, Garlic, Chili Powder, Ground Cumin, and Paprika. I also used the green hot sauce as I like it better. It was so freaking good! And so simple to do. I did it on my gas grill and I can't freaking wait to do that again. Holy hell man, thank you RUclips algorithm for popping this video up the other day. I think I will turn the left overs in to either fajitas or chicken quesadillas. So good man, cheers!

    This was awesome!!!!! My 15 yo daughter loved this and my picky wife. I did ease up on the heat. Only marinated for 12 hrs and used less hot sauce. We used Colby jack cheese and where I’m from we use Hellmans. I garnished with lettuce tomato and pickled onion. Will probably make this once a week.

    Made 2 times , just easy and wow good. I reduced some of the pickling brine and the number of jalapenos , due to some people I grill for are high spice adversed . Used 3/4 and I could taste some spice 1st time. There was hardly any spice the 2nd time. Will be making on regular rotation, I grilled the chicken over lump charcoal , FANTASTIC !

    Matt - HOLY GOODNESS, we just made this and it will be my go to chix sandwich from here on. We were out of Fiesta, so used Voodoo, gave it even more of a kick but not too much. The warden does not like spicy and she was in love with it. Tell your Volleyball dad he is the man for sharing!!!

    I made this today in my smoker. I let the chicken thighs marinate for 24 hours, I threw the Cholula and butter into a small cast iron Dutch oven style pot (about the size of the one you used) along with a few gloves of smashed garlic (peel and all), and put all of it in the smoker too. Basted the chicken every so often with the sauce. Damn they came out awesome!

    Awesome video. Maybe a future tutorial video on how to use that grill? All the different things you can cook on it? Huge fan of Wednesdays and your new videos.
