I visited Spain about 10 years ago, and every morning at the hotel I stayed at they served these sandwiches for breakfast. I didn't know that this was kind of a Spanish specialty, and thought it was kind of an unusual thing to serve for breakfast. So this video explains a lot.

These Bikini Sandwiches look so good James! And I'm so glad you said only to have them once in a while. James - Everything looks great. The sailor in me loves the overhead (assuming drone) views of Barcelona and the port. Do you take the drone footage yourself, or is it something you can buy, or both?
I've never seen bread sold like that before, but it would be easy enough to make. With my 'new-found technique (thank you very much)', I now know that firming it up a bit in the freezer means it won't wiggle and squirm around as much as it would at room temp, for greater accuracy of the slice. I can't wait to do that.
Speaking of which, to cross threads, I can't get your Vichyssoise out of my mind, so I'll send you an update on that vids comments.
As to this 'grilled cheese', it looks great, and I love any cheese, actually, so there is no issue there.
Question. In terms of truffles, I know there are black and white ones. I'm assuming there is a difference between them, at least in flavor or price, but I don't know, having never used a fresh truffle of any sort.
As well, 'Jamon Serrano'; I get that jamon is gammon, is ham (if I'm correct?), but what is the Serrano distinction? It looks very much like what I would call prosciutto, but I don't know what is, or if of any difference.
Thoughts, suggestions, etc.?
thank you! its not easy to use a drone here, to many laws. I use storyblocks for the videos I cant get. Black truffle is much cheaper than white but again it depends on the quality. White truffles have a softer and lighter than that of black truffles. the “jota” (or J) in Spanish makes a unique sound that doesn't really exist in English. its more like an H in the throat. you can use prosciutto as it may be cheaper. here is a good explanation on both of them. www.jamonpurobellota.com/blog/diferencia-entre-jamon-serrano-y-prosciutto/
@@ChefJamesMakinson - James, thanks for the link. Very cool. To be honest, I never would have guessed the distinctions, let alone the origins.
Being in good faith, I will try a little of both. I know I've had prosciutto, but I only think I might have had Serrano. In all likelihood, I will try each, in a Bikini sandwich, which I've never made before, or at least, not in as fine a manner as you showed.
I consider myself an expert in grilled cheese sandwiches, which I am, but your approach, will 'up' my game.
Usually, if I'm adding ham at all, it's just some civilian 'smoked' ham (as for deli sandwiches, sliced thin). That, I will cut into half inch by one inch ribbons (or so) and pre-fry to drive out some moisture, that will caramelize on the surface. Cheap trick, for cheap dates. Just kidding, but true.
Clearly, with Serrano or Prosciutto, there will be no need to drive out moisture, but good to know, that of the two, prosciutto is a bit moister, and all the other distinctions explained in that link.
I'm not sure if it was a graph shown on one of your vids, or another's, but I've recently seen that there is a genetic breed of hog, Iberian (of course, being from the peninsula that Spain and Portugal are made of). I believe it was the ancient Romans to name it Iberia.
Anyway, depending on how purebred the hog, and the diet fed, they are classified at best as 100% genetic Iberian hog, and I've been told, that those fed acorns (probably not exclusively, but what do I know), are the best, and in fact, have a 'nutty' flavor.
Regardless, I've heard it said, that Iberian boar make the finest pork anyway, and thus, the finest ham from. I'm not sure if that is both prosciutto and serrano, or just one and not the other, but that's what I've heard.
The link you sent, that I've read, made specific mention of 'not fed acorns'. I'm not sure meaning either or both, so clearly, there's a lot more I need to learn.
