Adding mozzarella is genius! I made a triple batch yesterday and it is spectacular! I have cooked up prolly close to 100 Chef John recipes and this is top 10 for sure on how tasty it turned out to be. Though I am saddened to have live 46 years on this planet thinking my canned cat food tuna recipe was good. And adding insult to injury, I've always had these ingredients in my fridge!! Capers, hot chili paste, mozzarella, etc. Please forgive, for I have sinned! Thank you Chef, you are a life changer!
I'm ashamed to say that I've never eaten a tuna melt in my 50-some years on Planet Earth. And for as long as I remember, I only ate the catfood-kind of canned tuna--didn't even KNOW there was any other kind until I watched an episode of Rachel Ray...please don't judge me too harshly; I plan on trying John's recipe!
+lucy girl If you can't find the fancy kind of tuna Chef John used, at least get Solid White Albacore Tuna in the cans. Not 'Chunk' but 'Solid'. It costs a bit more, but is more like big chunks of tuna instead of that minced looking cat-food stuff.
++biffbyford "...cooked up prolly close to...." (I know a lot of people rush and pronounce the word PROBABLY as 'prolly;' however, judging by the number of times I see it written, I really believe people think 'prolly' is the correct spelling.) Not judging -- just saying :)
++b minor: Thanks -- I will try it. I have seen tuna in jars sold in different supermarkets but have been hesitant to buy it. (1) the price and (2) what else to make except sandwiches. Well, you've convinced me that I should experiment a little. Thanks!
Michael Anirudhan I totally agree. But this version is just dynamite. I just made it, for the second time, exactly as here (and I didn't use catfood, passing as tuna, but the expensive stuff), incl. the chips and dill pickle, and it was outstanding, of course. This guy is the real thing! Always a twist on something familiar. It was beyond delicious. How can a sandwich be gourmet? This was.
At the hotel where I work, I confirm fresh tuna in oil with some garlic. Everything else is pretty close. Smoked cheddar but since we make our own cream cheese we use that instead of the mozza.
This honestly gives me inspiration to grow older and become a chef myself. It makes me want to improve me grades and become a successful person in the life of the culinary arts. Thank you
"Probably prevent diseases". I'm pretty sure Chef John would slide in cayenne to any edible substance. Hell, he must carry a small hip flask filled with cayenne in case the occasion calls for it.
I'm a YT subscriber to several channels and there's NOTHING I look forward to more than a new video recipe from chef John! The bizarre thing is that I've NEVER tried ANY of his recipes but I just enjoy hearing him describe what he's doing and the funny comments he makes ... truly entertaining!
Gotta love this chef. Normally when watching cooking shows i always think it needs more salt. Here everytime i think that chef john says, add a nice pinch of salt. My mannnnn
A quality Tuna melt recipe, one of the best I have seen. Only change I made was garlic and mayo to toast the bread. I can see why you a so popular with these no nonsense, quality ingredient recipes ❤🔥
Waiting for the turkey to come out of the oven. I'm starving! Why do I always cruise John's cooking videos when I'm STARVING!??!?! This looks sooooo good.
As a latchkey kid, when I got home from school, I used to take tuna salad, spread it on a piece of white bread, throw a slice or 2 of american cheese on top, microwave it, then throw another piece of bread on top. That was over 20 years ago. I used to love it; not sure why I haven't made it since all these years later. This looks like a grownup version that I'm definitely gonna have to try! Thanks!
Total control of your life / destiny would be useful with forks though! Looks great, just watching before heading to bed due to time difference and now I want a tuna melt!
I made your Caldo Verde soup tonight, Chef John! I had to use some freezer burned sweet italian turkey sausage, some nice andouille sausage, some semi-wilted kale, and frozen homemade turkey stock left over from two Thanksgivings ago, plus fresh potatoes and a nice onion. Sounds awful but actually it turned out to be delicious! Everyone ate lots and I used up the oldest items in my freezer, so THANK YOU! I will make this TUNA MELT for lunch tomorrow! Keep up the good work helping us feed our family!
I'm sure you've heard this 293843 times, but you sound JUST LIKE John Ratzenberger. SUCH a comforting voice! i watch your videos just because i like YOU. ....And because your food is delicious.. :)
I made these sandwiches for dinner tonight and served them with Clausen pickles and Lay's Jalapeno chips. They were absolutely delicious and looked great too! Thank you Chef John.
And I can tell you that you're not the only one! Never tried a recipe either but i just enjoy hearing his jokes and learn new stuffs about cooking! Thank you chef John!
My mom always told me don’t drink milk with seafood because it will make you sick. I believed her for a long time, but now I know that’s not entirely true.
Hey Chef John I make mine close to this but I use bread and butter pickles as my crunch to make it a touch sweet as well as dill and mustard. I as always enjoy your videos!
I've made these several times since I saw this video. I've really enjoyed the flavour and the portions of this dish. The celery and cheese are a great combo. Made it for some friends one time, they loved it and asked for a recipe.
On AllRecipes I always thought Chef John's were basic and boring but in this forum getting to hear his peculiar way of speaking and sense of humor he sells it.
An alternative to cayenne pepper that works really well is just a tiny sliver of whit horseradish. I also use dill weed and instead of white cheddar I use Munster cheese.
My favorite tuna that I learned from my Mum is white meat, definitely minced up with celery and green onions. My secret ingredient John is not chili sauce but a tsp. of HP sauce or worchie. Makes a huge difference.NO added salt but pepper of course or you can use white and light tuna. I like it packed in water. Have never added cheese to the mix except for sprinkled on the bread first before toasting or just on top. Try it! Love your show. Tks.
Next time you make this, make sure you put sliced tomato on--you want to do this before you sprinkle the cheese. Then broil, you will yeah angels sing if you do; that's why I do it, but it tastes good with the tomato too!
Some people may not like tomatoes..have you ever wrapped your mind around that?? Let people eat the way they want..He does not have to make sure and do anything,
canicole20 have you ever wrapped your mind around the concept you took my comment too seriously? Also it was not directed at you, so you had no reason to get all cranky. If he felt that way, Chef John could have told me. . . Let people talk for themselves.
really loved this recipe! the mozzarella was a great touch and since i didn’t have any celery, i substituted zucchini. will definitely be making again.
On ovens and toaster ovens there is a "boil" option and the normal bake setting as well. When you use the bake setting both burners are on. The broiler setting is only the top burner on a high temperature.
almost any food can be kosher and fish and such can be non kosher, it can't be mixed meats and has to be humanely slaughtered for as oxymoronic as that sounds? Idk, weird shit, but I know it's something among the lines of that
Owen Conenna As a guy that lives in Israel, it is competely true. Main concept is not to mix meat with milk. But, for some reason, some people are stupid enough to not categorize fish as meat(really this nonsense is way too common over here), and therefore, for some people this might be kosher.
Made this without the capers and it was fantastic and incredibly easy to make! :D Thanks Chef john, I have made over 10 recipes from your videos (which is pretty good since I don't usually cook non-asian food)
No, but I noticed that you didn't begin your sentence with a capital letter. Oops, that would be the very definition of NIT-PICKING. Now go away....lol
++AthenianLove I know. And that's all I was doing -- just pointing out something (i.e., the nitpicking.) I mean, heck -- I ended with an 'lol' which should've indicated to all that I was just kidding.
Use the Tonnino brand jarred tuna in olive oil. It looks like that is what Chef is using in this video. It's all I ever use and it is amazing. Canned tuna is simply inedible after tasting this kind. It's amazing and your sandwich won't be the same without it!
I've made this recipe a few times and it is excellent. Today I had no tuna in the house. I did find a tin of Costco chicken. I added a touch of olive oil to the mix using the mayo, celery, onion, cheese and capers. The results were just as good only different. No one even commented when I served this up.
+jason pham Chef John's videos about no-knead chiabatta bread and French bread are fabulous. The breads have four ingredients: flour, yeast, salt and water, are really easy to make and are better than anything you buy in the store. Both take about 20 combined hours of rising time (in two stages) after about 3 minutes of work putting it together.
+jason pham Try looking for a rustic bakery in your area. You can tell they have good bread, if they have thick unevenly-shaped baguette with a brown crust.
Had that at the Koolina Hotel for lunch with side of the best crispy potato wedges and a greed salad w/dressing and it was a hit...different strokes for different folks and respect everyone's choice to eat it how and when they want to...I enjoyed it. Make it for my family and they love it...thank you food wishes...now with Fukushima and spent depleted uranium in our atmosphere and oceans, we need to help clean it up, so we can eat fresh tuna instead of out of the can...although not picky, will eat it either way...I did not get sexually aroused by this sandwich...different strokes for different folks I guess, goes for that...Aloha.
Looks really amazing! I really prefer the open-faced version for this particular sandwich--there's just a lot going on. IMHO, the addition of capers is a genius move, 'cause it imparts some complex brininess/nuttiness to it, contrasting with the mozzarella in the mix as well as the sharp cheddar on top. Thank you, Chef!
I like how this guy's sentences end with a kindergarten teacher like inflection. "Ok childrennnnn. Let's go outside for play timmmme. No biting pleassse" Very comforting and makes for an inviting cooking lesson.

It's 11pm and I'm still seriously considering going to the store for groceries so I can make this right now.
Justin E yeah
@Andy Tyler I wonder
Here's hoping Justin E didn't get hit by a car while walking to the grocery store for tuna melt ingredients.😕
Such a cliff hanger
@Justin E
Ffs Justin let us know!
I love tuna melts! My great grandfather, a WW1 hero, made these for me when I was young boy.
Thanks!
Made this for lunch today (genius touch adding the bits of mozzarella). No potato chips, but had a cup of tomato bisque with it. Yum!
That's the way to do it.
At my restaurant, we serve it open faced, with smoked cheddar and pickled red onions on top
My god that sound delicious.
Michael Anirudhan I totally agree.

A little adds a subtle bitterness that brings out the sweetness in the fish and bread.

This gives you inspiration to grow old huh? lol
I guess he meant looking forward to grow up... The inspiration thing is probably for all the other stuff he wrote...

I love when Chef John make "basic" foods... its just 1000x better than how we normal people make it :(
I had a really bad tuna melt experience that we won't talk about but I think this might make me try it again! Looks delicious

I just made one of these with a ciabatta roll and pickle instead of caper and I'm so fat and happy ! Thanks for the vids chef
I love your videos because you don't have to add extra comments about the flavor notes like some chefs on tv and on here Thanks!
Cheese and beer, combined with anything, is the most Wisconsin combination you can get.

Only if you've snow-mobiled out to your ice fishing camp to eat it in 50 below zero weather.
And only if you're up north and wearing shorts.
-_- Does it even matter? There's only a five degree difference between the two. Long story short: It's freaking cold, moron.
Tony Samson
Hope that moron comment wasn't for me.... if so, consider the context, it would be 50 degrees below, F, in the USA.
Wang Yao
Ha! Good point!
I've made this since I was a teenager in the 70s and your version is on tomorrow's menu! Thank you.
I'd add a small amount of lemon juice or vinegar. You won't taste it, but it will cut the 'fishy taste' way down.
Quality tuna isn't fishy.
Dean Rob Roy Canned tuna is for some reason.
Mustard is good too
I've had several beers. And I can say that looks great right now.
I used sourdough bread and pickles instead of capers. It came out fantastic! Thanks Chef John.
Your voice is amazing, also captivating
Fantastic recipe and so easy to make. Chef John, your videos have made a big difference in mine and my children's lives over the years. Thank you.
I look forward to every “enjoy” at the end of the video.

Ché Terry 😂 so funny
I thought i was about to start fasting ;-; this video wouldent let me start

Omg did you break it
Def be giving this a try, I lived off tuna cheese & tomato sandwiches for 6yrs or so while I was paying off my house lol
I swear this guy has such a bobs burgers antagonist voice. "Only the best tuna."
fckn jimmy pesto
casey bert
Antagonist? I think you have it mixed up.
hands down the best tuna melt I have seen and seriously planning on this for Friday night in front of the tv
Add a splash of chipotle tabasco or other chipotle hot sauce and this is just perfect
really loved this recipe! the mozzarella was a great touch and since i didn’t have any celery, i substituted zucchini. will definitely be making again.
Thank God you did not say tuna fish. Why do people say that? Is there a kind of tuna that's not fish? Drives me nuts.
No, but there are fish that aren't tuna.
+Andrew Jackson Yeah! We don't say 'salmon fish,' 'halibut fish,' or 'mackerel fish!'
+Andrew Jackson Yes there is. Piano.
Yeah IKR! Also irksome is "hmmm...has anyone seen my ink pen...?"
I'm 90% sure that the cheap stuff you get in a can isn't a fish.
On ovens and toaster ovens there is a "boil" option and the normal bake setting as well. When you use the bake setting both burners are on. The broiler setting is only the top burner on a high temperature.
replace the capers with dill pickles and throw in some sriracha mayo for an amazing alternative.
Chef! I am addicted! This is by faaar the best tuna sandwich I've ever eaten! Thank you!
The cayenne makes it kosher. That is what my rabbi told me.
Well in this case it was kosher anyways except under the strictest rules so...
