Agreed.I like raw onion in there for the same reason, but also to add some crunchy texture variation. I use both. Celery is also good for some crunch and extra water content making the tuna salad less dense.
Tuna nachos sounded weird to me at first - then I remembered I ate a pepper jack tuna melt with bacon and barbecue sauce the other day. The lesson here is to not knock things until you try them.

I highly recommend Cazo de Oro Kettle cooked chips. They're so high quality-- in fact, it's not even close!-- & reasonably priced. Since we've discovered them at Walmart, my family demands they're always in the house.

I've used 8 inch gordita (thick) flour tortillas cut into 6 pieces and deep fried beforehand for these, but they are bigger, so it takes more of everything to make them. The flour tortilla seems more compatible with the flavor of a tuna melt than corn.
I feel like I need to see a deconstructed Hot Dish now, like one single, oversized tater tot stuffed with a mushroom compote drizzled in a cream sauce, and topped with a fan of fried parmesan and white cheddar chips

I started putting a layre of cheese first to keep the moisture off the chip.. Ive learned so much from you . I like individual nachos too. Pickled jalapeños are a must. I guess I am in the minority here, I like "bumble bee" brand chunk light tuna in a can packed in water, I also like fresh hot jalapeños instead of pickled , I also either cut tortillas in triangles and deep fry them or use a brand called " on the border"
CAUTION FELLOW BAKERS! Beware of "shrinkflation" in your recipe ingredients. I have finally figured out why several of my tried and true recipes were not turning out. (I had a cake that turned out flat and hard, a dip that was runny, a fudge recipe that wouldn't set up.) Many of our recipe instructions say use a box of cake mix, a jar of marshmallow cream, a can of evaporated/sweetened condensed milk etc. Many of these packages have been reduced in weight. Make sure to check your measurements and volumes. I just wanted to bring this to my fellow cooks attention. Cheers!

I make a Mexican tuna melt with diced green chilies, black olives, and taco cheese blend (cellulose and all 😊).
My in laws make a very similar sort of party nachos with pulled chicken, spiced more like Mexican adobo though.
