Anyone who thinks mayo is superior to butter for a grilled cheese clearly doesn't know how to make grilled cheese. The whole reason mayo became a trend online is that short form food videos go viral when they do things differently, because no one ever recipes they see on Tik Tok, so it doesn't matter how they taste, it only matters how they look. Therefore something will get views for looking good and being unusual...even if it tastes like shit. Just go and watch any video where people try internet grilled cheese recipes. They invariably include a recipe using mayonnaise instead of butter...and the conclusion is invariably "this isn't awful, but it's just worse than butter". Boasting you used mayo on grilled cheese before it was cool is like boasting you used to eat tide pods 10 years ago.
I am so glad I stumbled upon this channel about a year ago. So many amazing recipes, and all very well broken down and explained so even the most inexperienced cook can conquer them. Keep kicking ass, my man!

I just made a variation on this with the sandwich, substituted roasted red peppers on the sandwich in place of the tomatoes and added in some ghost pepper-jack cheese! Amazing

This is awesome. I make one similar to this but I dice up lettuce really fine like you would for a slaw. Then I mix the bacon and fine chunks of tomatoes with it and use mayo and half a pack of hidden valley buttermilk ranch mix with buttermilk as well and basically make a B.L.T slaw and I put that into the sandwich with the cheeses. I use smoked aged cheeses mixed and then make tomato soup to eat with it.. jeez I am now starving.

I thought it was going to be way too much paprika. But by the time I added the chicken stock to get it to the consistency I wanted it was just about perfect. May use a bit less next time. Did half the batch exactly like this, and it came out great. With the other half I added about 6 roasted hatch peppers, mild heat and it is EPIC! Thanks for being one of my go to channels.
I agree with you about the paprika. I did a heaping 1/4 cup with half regular half smoked paprika the second time I made it and it was perfect for my palette. I wanna try adding chili's next time!! Thanks for the tip

I have always roasted heirlooms with onions and garlic and then put them up in the freezer. I love the idea of adding fennel and the others vegetables to some batches so that the tomato soup doesn’t taste like Tomato sauce.
I worked at whole foods in the specialty dept and I’ve cut hundreds of pieces of those 3 cheeses. The sweet red cheddar is banging. It also has great calcium lactate crystals.
Moving the grilled cheese around to pick up the cheese into the bread was an amazing touch. Really its the little things that set it apart from others. Thanks for the video.
I just tried this whole recipe tonight. I loved it. My family, eh… the fennel & paprika really took them out of it. The grilled cheese they loved. I’m going to try & tweak this to a more southwestern flavor, as that’s where we live. We also added green chile to our grilled cheese. Otherwise, this was so good. Thank you.
You could have pressed the emulsion through a sieve after the blender to get rid of any bits of seed and skin (you also need less processed sugar doing it this way - get rid of the bitter bits.) It will be so smooth that pixies kiss your toes when you sleep... You can 'always add bits' to it and you control what they are... I added a like. Top 10 food channel om YT. Simple and practical. I scored a four to six week contract at a commercial depot, there will be 1500 deliveries a day (all semi’s) and I’ll be the only food truck there. This is in the middle of nowhere and the truckers don’t really have any other options for food (unless they pack their own lunch) they fuel in the field as there aren’t any major truck stops near the facility. Your recipes will definitely help me in this endeavor! Thank you sir!
Looks amazing. Try River Rat cheddar from NY. Good stuff. I use it in my quesadillas, tacos, grilled cheese, etc. Some people don't mind the moisture, but anytime I put tomatoes in a sandwich I like to get rid of the plasma. I'll make the tomatoes the first thing I cut, salt, put some rap over them and then drain out the liquid when I'm ready to put them on the sandwich.

I love how you proportion the tomato cheese and bacon. so many restaurants and delis make a sandwich and put 4 inches of meat in there. I mean you can’t even bite it and then it all falls apart. So they think that you’re gonna be so happy because there’s so much meat in there, but reality like I said, the sandwich just falls apart and you end up eating it in various pieces.

I make a grilled cheese with 3 cheeses, crumbled bacon and chorizo, tomato and either a split Anaheim or Serrano pepper...perfection!
Looks amazing. Try River Rat cheddar from NY. Good stuff. I use it in my quesadillas, tacos, grilled cheese, etc. Some people don't mind the moisture, but anytime I put tomatoes in a sandwich I like to get rid of the plasma. I'll make the tomatoes the first thing I cut, salt, put some rap over them and then drain out the liquid when I'm ready to put them on the sandwich.
Have you tried this combo on a jacket potato (baked potato)? Cheese blend, bacon, maybe add sour cream, herbs..
The possibilities are endless.

I love how you proportion the tomato cheese and bacon. so many restaurants and delis make a sandwich and put 4 inches of meat in there. I mean you can’t even bite it and then it all falls apart. So they think that you’re gonna be so happy because there’s so much meat in there, but reality like I said, the sandwich just falls apart and you end up eating it in various pieces.
