    I remember hitting up your food truck on the way home from work every day, I loved getting the Fort Greene with a side of Dirty Chips and Tomato Soup, shit was banging.

    I want to thank you for this recipe: my daughter and I enjoy making it and it’s her favorite sauce now. I never had a bond with my mother as a child and to cook and spend time with my daughter in the kitchen is such a blessing.

      if these are the kind of sandwiches he's putting out, it should've been called a melt truck instead :p i'd call this particular sandwich an avocado melt (with secret green sauce) because it's gone pretty far beyond a grilled cheese lol.

    Y’all need to start showing this man respect. He’s legit one of the dopest and most genuine food channel to watch and y’all getting distracted by small shit. His food is clearly dope and he’s clearly excited to share it with you all. No one’s talking about the effort he puts towards his videography, his food, or his passion for the city y’all hung up on whether the sandwich can be categorized as a grilled cheese.

      Honestly I love that argument because whenever someone starts talking about how "It's a melt" I know I can discount everything they ever say as garbage and save my attention for people who aren't so unreasonably pedantic. I find that people who fixate on wording tend to ignore the reasons *behind* why words mean what they mean, which is really terrible when the reason behind them is more important than the word choice. [The kind of person who will decide a word is 'bad' for being connected with something they don't like, while not actually trying to solve the problem of the thing they don't like, for example]

    Fun fact. Some people have a genetic trait that makes them taste soap when they eat cilantro. So if this recipe tastes funky to you that could be why.

      That’s me. I play “cilantro roulette” in Mexican restaurants because I always want salsa but I can tell from the first bite if it has cilantro because it tastes like dish water.

    So crazy to see Fort Greene mentioned in a youtube video, it's my neighborhood, and where I grew up! I'm so glad to see other people give it the love I have for it. The sandwich looks so incredible, I wish I had gotten one from the cart when it was still around

    I decided to make it on a whim, The moment I pressed play I realized I needed to make it.

    Dude, the sauce is killer -- I made it a few months ago and I've been using it constantly, but I was unable to find that fontinella cheese for the life of me, to the point where I was getting pissed at you for sending me on this wild goose chase for this unicorn of a cheese... until I finally found it, and damn was it worth it! That is a great frickin' cheese. I can't believe it's only aged 2 months. It reminds me of a 2 year aged cheddar. It also kinda sorta reminds me of the Impossible Cheddar from Trader Joes. Anyway, great video. Thanks!

      You could probably go to any higher-end grocery chain that has a specialized cheese section and find it there. For most people, I imagine that would be Whole Foods, Kroger stores (Fred Meyer-King Soopers, etc), and to a lesser extent because I know they aren’t _everywhere:_ Albertson’s

    Was fun learning more about your food truck experience! I’ve never been to NYC or Brooklyn so seeing some footage was cool, too. That green sauce looks AMAZING! Will definitely be making some soon.

      I have never been east of the Alberta Sask border....not far enough to mention anyway. Other than that I have been into Montana, Idaho, Oregon, Washington and BC. I enjoy watching footage of other cities. Especially how it really is..where the working folk eat....where families take their kids. Where a grill cheese is a high end meal.

    You can tell that this sandwich is packed full of flavor cause it’s packed full of love & a passion for cooking which really shines through a great recipe. Far from ordinary but at the same time simplistic which are always my favorite recipes. This grilled cheese packs all of my favorite flavors which is why I’m surprised this wasn’t in my life sooner.

    I just found your channel, and there was a wonderful Italian woman who took care of a lot of kids in my neighborhood, myself included.     we just made this. it's phenomenal. just wasn't expecting special sauce recipe to yield so much but it's not a problem. in addition used the Trader Joe's green dragon sauce which we on hand as the extra condiment, but have ordered the Brooklyn grange for next time!

      i wonder the shelf life of this sauce (fridgerated). Seams like the avocado might make it go bad quicker than without it even with the lime juice.

      So the sauce should store just fine in the fridge!

    Optimum Juicing limes,
    have skins that are smooth and almost glassy in look and texture. These will yield anywhere from 1/3rd more, and generally up to twice as much more juice,
    Than a lime with a bumpy porous skin.
    You have to look through the bin at the store very carefully, as both kinds of limes are found in the same Orchards and even on the same trees.
    Also, to have an easier Juicing experience;
    Lay the lime on your counter or chopping block before cutting and press down firmly with the palm of your hand as you roll the lime back and forth.
    This will loosen the juice from the cells for a faster and more satisfying experience.

    I really appreciate you describing the taste you want when you were adjusting the sauce. When you are making something you've never had before, you don't know how it's supposed to taste. I also learned so many tips and tricks, and it's "just" a grilled cheese! Definitely subscribing.

    just made this and it was possibly the best grilled cheese i’ve had in my life. I think I added a little too much lime to the sauce but I liked the zing that came through. Love the mayo trick too, it allows cheese to stick to the bread so I sprinkled the slightest amount on it and had this golden crispy cheesey bread on top.
    Also, mixed some bacon grease w/ the mayo and spread it on top of another sandwich and woo boy.
    10/10

      Same for me! I made it pretty much exact to recipe put it in my air fryer. The only thing different I did was add sliced tomato which made it perfect. Sprayed the top with organic olive oil then put on garlic powder and pepper. Came out nice and crunchy then put the sauce on top and I think I just about died! Unbelievable no wonder he had it every other day for 2 years! I've already had it three times and I've only had it for a day! LOL

      ​@@darlenedevegan8370 Careful with olive oil and airfryers. You wanna keep an eye on that smoking point and devices like airfryers produce high heat at close range which raises the temp really quickly. Instead try higher smoking point oils like avocado, coconut etc.

    Love how much details of explanation and the stories behind stuff and the timestamps, just overall great watching experience for me.. sure was alot that went into this sandwich.. I enjoy grilled cheese and the zillions of combos and mashups ya can do, once learning the best technique of how to get the toast to melt ratio, just let your imagination run wild..

    this sounds amazing, going to attempt to recreate it!
    btw, those cilantro roots you're throwing away have LOADS of flavour, more than the stems for sure, and if you're washing the rest of the plant you may as well do them too! the roots are a key part of a lot of thai and indian dishes - don't throw them!

    The green sauce is delicious with literally everything! I keep making versions of it with different combinations of herbs I have in the fridge. Basil, chives, cilantro, parsley, mint etc etc . I just throw in what I have along with green onion and it’s always delicious! I make a slighter lighter version of this with less cheese, a couple scrambled eggs and skip the bacon and mayo. The bread still toasts up wonderfully with no fat.

    This sauce is the most common type of sauce (chutney) used here in India, It is used in almost every Indian household and starters especially, But instead of Mayonnaise we add fresh curd and since we dont have avacados here we use Onions and a little sugar along with mint to give it more texture and creaminess.

    This sauce has officially changed my life. Probably didn't make it quite as intended, substituted plaint yogurt instead of mayo and probably a bit heavy on the lime juice for preference, but holy shit. Using for everything all week, even just dipping raw peppers and carrots in it feels like treat.

    ok so I improvised because I didn't want allllll that sauce for just me. I made one-sixth recipe, added garlic instead of chives, used mayo and not that much citrus. holy cilantro farm! now I'm addicted. I sneak roast beef and provolone, roll them up into long cigars and dip it in this. Going to cook cauliflower, cool it and dip those in it tomorrow. Plus wedges of potato, with sour cream. Made roast beef and provolone grilled pita with this on it (I didn't have sourdough or other bread due to gf shopping). Plus made a breakfast tortilla and used this sauce as a dip. Restored my respect for cilantro. Also mine was not that hot. The jalapenos were very mild. Fabulosity!

    I forwarded this video to my son, bought all the ingredients, and he made this sauce for us. We have YET to put it on grilled cheese, however, we have put it on Tacos and Roast Beef sandwiches and we are planning on making huge VATs of this sauce to have it on hand for every meal for the rest of our lives. It's so delicious. Thank you so much for this sauce. Tell your brother he is a genius.     I watch lots of cooking videos on RUclips. This ranks up there with the best. The way you describe the sandwich, the intensity you put in every step of the process, the attention to detail, the evocation of your food truck days and the neighborhood you used to work in... And most importantly the fact that all this passion finds its way inside the sandwich. Man, you love making and eating a grilled cheese, and it's compelling. I just have to try this. With a good, fresh salad, it sounds like a great summer meal for my kids.

      Well, as an addendum in response to myself, I made this grilled cheese and it was a huge hit. The cilantro sauce itself is worth the recipe; I replaced agave with maple syrup (I'm from Montréal, Québec), and got the perfect balance of sweetness, richness and acidity. I've already tried it on salmon confit, and I will soon try it in lamb burgers, but in this sandwich right here, with Fontina cheese (couldn't find Fontinella), sourdough bread, avocado and bacon... Wow. Be generous with the sauce, as recommended in the video; it's not overpowering, but takes the whole grilled cheese to another level, makes it moist and gives it a subtle sweetness that defies description. As a side dish, I made a delicious summer salad; cherry tomatoes cut in half, pan roasted corn kernels, a few leaves of arugula and a simple white wine vinegar and olive oil dressing.
