I'm not sure if this is appropriate, but please take it in the spirit it's intended. I have a neuroimmune disease which causes brain fog and word finding problems. I don't know that I'd even notice if my own aphasia issues hadn't sensitized me to it. But seeing you out there making videos and not letting having to sometimes fish for a word makes me feel much better and less self-conscious about my own struggles. From the inside, the time it takes to find a word you've blanked on while someone is waiting for you to go on can feel like forever. But seeing it from the other side by watching your videos, it doesn’t seem so long. Your apparent confidence (or maybe it's just determination to do what need to be done and you're cringing on the inside) makes me feel less self-conscious and more confident. So I want to thank you. I admire your authenticity. Plus, every time I watch one of your videos I pick up a tip for a better way to do something I've been doing for years. It always seems so obvious once you point it out. Today's tip was rolling out the pizza dough right on the parchment paper. Why didn't I think of that?

I made the pizza pinwheels this weekend. Both my kids were out of the house, hubby was in the screen porch. I whipped up the dough - OMG so easy - then slapped together the pizza rolls. A bit messy but boy did they bake up great. 24 in total. Hubby came in to refresh his drink, stole one. Then came in again for another and another. Kids have them for lunches. Will definitely make again.
I made this dough today, 4 pizzas and 2 calzones. My dough was so wet! Guessing my homebrand flour was not the same quality! 750gms was needed. Will try a different flour next time. Super happy with my mornings efforts all the same, thank you Stacey!
Homebrand flour should have been ok. In the recipe it's , 6 cups or 800g of flour. So it should have been ok. It will still be slightly wet, but while you prepare the toppings, it should absorb more of the flour. I also just add a little bit more flour as I roll out the bases. It's better to have a wetter dough than a dry one. I hope that helps.
My costings = $1.50 for the batch of dough, my better half just polished off a calzone for lunch, and only complaint was not enough cheese! He inhales the stuff so it's never enough cheese 🤣
That's it I'm buying more yeast. I need to make these. P.s I am another who hide Trauma from everyone for exactly the same reasons. It lead my life untill I too took charge and went to counselling. My goodness, what wonderful things you made to fill the freezer in your cook up. Things that people would actually want to eat for lunches and snacks. Very practical. Pre-made convenience freezer foods are very expensive and the ingredients often look industrial. I am hearing that seed oils such as canola, corn, soy are worse for us than we could ever imagine. As bad as smoking, apparently!

Everyone loves it! I must also say that the video where you made it at the same time as the tomato relish must have been so much work for you. I was done in after making just the one recipe! Thank you for all these videos. You are appreciated.
I have seen this idea on another channel in the U.S. It is such a great tip for homemakers to use in scratch cooking. You don't need nuanced recipes for all bread products unless you want that.
I once took part in a "team building" weekend excursion, and part of it was to climb up to a very high platform, "leave your past behind", and holding a trapeze leap out (we had safety harness, and guys held the ropes, so falling wasn't an issue). When I got past my fear of heights, and it was time to "let go of my past" I decided, that without everything I'd been through, I wouldn't have been able to climb this high, that I was instead, celebrating everything I'd gone through to get "here" and took my darned past with me when I leapt out in the abyss. What I left behind was all the self blame about it all. All the blaming of others went with it. I was me because of it all, and anyone who thought less of me because of any aspect of my past wasn't worth knowing. What I had gained was far more than anything I'd once thought I'd lost. Courage, resilience, wisdom, humility, compassion and tolerance. These are the true fruits of trauma and challenging life events, if we can recognize them as part of ourselves and what got us through, despite self doubt. Never doubt that you have all these, and always have.
Great video once again Stacey. I’m lucky enough to be on holiday in Australia at present but will be getting on to trying out the pizza freezing when I’m home. I assume that if I froze the pizzas with just paste, onion, cheese I could add more toppings of anything I’ve got to use up when I get them out to cook. Handy for Christmas left overs. Awesome video. I am blobbing after a busy day at work and I still feel productive because I am "researching recipes". I will give the calzones a go on Sunday when I have a day off- will be delish for work and school lunches!

Have never thought of using pizza dough for focaccia, will definitely try, especially as we're really getting into soup weather in NZ. We have a tomato allergy in our house which is a tad inconvenient! A friend of mine suggested using tamarind in place of tomato paste in some recipes which has been working well but haven't thought about using it in place of other tomato products. Might have a go at using it for a pizza, would be good if it works out. Glad you're getting sponsors now, it's always awesome to see kiwis succeeding and you can tell the care/thought you put into your videos. I think I might need to go get some lunch now, some reason I'm a bit peckish...
Aioli makes a great pizza sauce, if you've not tried that yet :) Or if you have a rhubarb patch, then rhubarbeque sauce might be the way to go for a barbeque flavoured pizza.

Oh my, that bacon though! It's funny how "home made" looks so much different, and better, than commercial and store bought! And that venison salami! So while you are going in with calzones and pizza, I want to split that focaccia in half and make sandwiches with those meats, as well as some chopped olives and your amazing pickled onions and tomato relish, a la muffaletta style, which if you are in the south in the States you know that is a Cajun/Louisiana style sandwich! And then serve it with a side of your Depression salad. What a PERFECT lunch or even a delicious dinner when it's too hot outside to cook! I've made my own pizzas for a long time and have found a trick that works for me. Instead of slicing the salami type meats into rounds, I then do another cut by stacking the round slices and again making thin julienne slices into strips. It makes them easier to eat because then a big section does not come off as you try to bite. I also like to brown minced (ground) beef and sprinkle that under the top cheese layer because it is also easier to eat and take smaller bites.

All looks delicious , I used to rollout my pizza dough put on my fillings , then roll up , cut the dough into 3 lengths and plait together, my family loved my pizza plait , you can make it sweet or savoury .

I make the dough and I add teaspoon of baking soda, and a little of apple cider vinegar to make it very soft ,then I put it in the fridge right away ( I don’t let it rise) I leave it for a week in the fridge and I can take a portion every day straight from the fridge and bake it ,it’s amazing 🤩

Love these ideas. Your caramelized onion would make a lovely pizza base with added mushrooms, bacon, and feta. Have you ever tried making a potato pizza? I won a competition years ago with a potato pizza idea - thinly slice potatoes and lay them on a rolled-out pizza dough. Add minced garlic, rosemary, and dobs of blue cheese before sprinkling with salt, olive oil, and a few handfuls of grated cheese. A winner every time!
Just had home made pizza for dinner using your recipe. They were the best pizzas I have made, really easy to roll out, used up bits and pieces out of the fridge. A winner. The residents of this house are loving your recipes.

Another great video resource Stacey - thank you! Fortunately, I can multi-task and watch the video and peel the $5 bag of fresh garlic I got at the Warehouse. By the time I got to the end of this job whizzing the garlic and putting it into individual serves for the freezer I was thinking roast garlic would have been nice to put on the foccacia bread + caramelized onion. I live in New Zealand too, and I have been unable to afford a dentist for twenty years. Dental care is totally unaffordable here.

Great video once again Stacey. I’m lucky enough to be on holiday in Australia at present but will be getting on to trying out the pizza freezing when I’m home. I assume that if I froze the pizzas with just paste, onion, cheese I could add more toppings of anything I’ve got to use up when I get them out to cook. Handy for Christmas left overs. Have never thought of using pizza dough for focaccia, will definitely try, especially as we're really getting into soup weather in NZ.
We have a tomato allergy in our house which is a tad inconvenient! A friend of mine suggested using tamarind in place of tomato paste in some recipes which has been working well but haven't thought about using it in place of other tomato products. Might have a go at using it for a pizza, would be good if it works out.

Oh my, that bacon though! It's funny how "home made" looks so much different, and better, than commercial and store bought! And that venison salami! So while you are going in with calzones and pizza, I want to split that focaccia in half and make sandwiches with those meats, as well as some chopped olives and your amazing pickled onions and tomato relish, a la muffaletta style, which if you are in the south in the States you know that is a Cajun/Louisiana style sandwich! And then serve it with a side of your Depression salad. What a PERFECT lunch or even a delicious dinner when it's too hot outside to cook! I've made my own pizzas for a long time and have found a trick that works for me. Instead of slicing the salami type meats into rounds, I then do another cut by stacking the round slices and again making thin julienne slices into strips. It makes them easier to eat because then a big section does not come off as you try to bite. I also like to brown minced (ground) beef and sprinkle that under the top cheese layer because it is also easier to eat and take smaller bites.

All looks delicious , I used to rollout my pizza dough put on my fillings , then roll up , cut the dough into 3 lengths and plait together, my family loved my pizza plait , you can make it sweet or savoury .

I make the dough and I add teaspoon of baking soda, and a little of apple cider vinegar to make it very soft ,then I put it in the fridge right away ( I don’t let it rise) I leave it for a week in the fridge and I can take a portion every day straight from the fridge and bake it ,it’s amazing 🤩

Love these ideas. Your caramelized onion would make a lovely pizza base with added mushrooms, bacon, and feta. Have you ever tried making a potato pizza? I won a competition years ago with a potato pizza idea - thinly slice potatoes and lay them on a rolled-out pizza dough. Add minced garlic, rosemary, and dobs of blue cheese before sprinkling with salt, olive oil, and a few handfuls of grated cheese. A winner every time!

Another great video resource Stacey - thank you! Fortunately, I can multi-task and watch the video and peel the $5 bag of fresh garlic I got at the Warehouse. By the time I got to the end of this job whizzing the garlic and putting it into individual serves for the freezer I was thinking roast garlic would have been nice to put on the foccacia bread + caramelized onion.
