  • Hello and welcome to today's video. What's for dinner episode #2 cook with me. We make the Chicken Pumpkin lasagne. We are trying to use up what I have in the fridge freezers and I come up with a week's worth of meals from just one of them.

    I love the way you talk to the viewer. It's as if we are sitting in the kitchen with you as you cook. It's not easy to engage the viewer the way you do, hence why lm complimentary in how you do it. 👍

      I've had a Kenwood Delux model for years and have all the attachments , including shredder but from now, to save setting it up and cleaning , I will use K Beater for shredding, great idea!

    I just wanted to tell you I follow you, I found you oh I don’t know about a month ago on RUclips. And I watched one of your videos and then I started following you and subscribed to your channel. I’m in California, Southern California to be exact. I just want to say watching you in your kitchen is real and I appreciate that and you should know that as a woman who cooks in her own kitchen and says oh, it needs a cup, but kind of haphazardly measures out the ingredients. I just throw stuff together and this recipe won’t taste the same next time because I don’t precisely and exactly measure my ingredients and I see you do the same thing and I appreciate that and I love it.!!!     I made chicken and spinach lasagne. Inspired by you I made use of what I had in and ' made it up on the sly"😅
    It was brilliant 🎉
    I used up a bag of frozen spinach.
    ❤ being inspired by your ideas and enthusiasm ❤
    OK, I hold my hand up😮 I've never thought of chicken lasagne 😅 I'll let you know the family feedback😊

    Hi Stacey. I'm just down the road in Cambridge. I used to make similar potato bake... with spinach... and leek... for my grandsons who just adored it. Making the lasagne for tomorrow's dinner for the gang who are coming home for dinner. Easter Monday. I love yr spoon in yr oven door. It's very familiar.lol. I think there are all sorts holding oven doors closed around the country. My friend uses a bungy cord with hooks in her cupboard doors. Lordy be.. mine just lost part of its rubber seal but I thinknit warrants a new one to keep the heat in. It's really nice to gave one of us to follow on utube.. in season and good old kiwi meals with the kitchen chatter that I used to enjoy with my sisters. I enjoy the American and Canadian canning groups. And, would love some British groups but you are home for us kiwis.

Even though some of us have old stoves that require "added bits," we still do our best to feed our loved ones. When I make my aprons to sell, I should have one saying. Every good oven needs a spoon, lol

    I always use a cheesy white sauce for lasagne and I often substitute finely chopped silver beet or kumara leaves when I don’t have spinach

    Watching you cook is like being in the kitchen with my mum again..... She has been gone 2yrs and spending time with you is a balm i didn;t know i really needed plus bonus i get to re-learn back to basic cooking again. thank you from the bottom of my kiwi born Australian living heart...:)

    That particular brand of lasagne sheet are a lot more pale and papery, but they still make a great lasagne. They probably would have been fine!

    I've never made lasagne but will give it a go. I made spaghetti bol tonight and made my own sauce as you recommended with my own herbs and a tin of diced tomatoes. Tasted as good as a bought jar of sauce. So saved a few dollars. Thank you Stacey.

    A tip from a fellow nz home cook, use you stiring spoon to put the food onto your teaspoon so you dont have to wash as many 😊.
    I tried to use powdered milk in my mac n cheese and sadly im not a fan of it in savoury dishes.

    Hello from sweden ! Found your channel randomly a while ago. Just a silent viewer here 😂 I’ve picked up some new skills in the kitchen, so thanks 👍
    What made me comment was the pasta. The Barilla pasta is supposed to look like that. It’s a pale color because it’s semolina flour and they’re more brittle because they are kind of a “fresh” dried pasta 🤷🏻‍♂️ that’s what my mom said and she’s Italian so that ~has~ to be true 🤌
    Lasagna looked yum ! 🤤

    Thanks for making this. Since I developed an allergy to tomatoes, peppers, and other nightshades, I've missed lasagna. I couldn't come up with a sauce that sounded good and a bechamel by itself sounded sad.
    I don't think the nutmeg was odd at all. I often add nutmeg or mace to a bechamel. When I could still eat potatoes, I would sometimes add a little pinch of mace to mashed potatoes.
    You and cook the same way, which makes it so fun to watch you. Just watching, I can just about tell what it tastes like.
    So here's an odd one for you: I've never done it, but as I watched, I thought just a hint of sage in the pumpkin might be good.
    That little chuckle in the back of the throat when you tasted the cheese sauce means it's REALLY good. It's an almost involuntary sound.
    I remember the first time I ever had crème brûlée. It was at a business lunch and I wasn't even aware I was making little little moans of pleasure until I opened my eyes and saw the 3 men sitting at the table staring at me in shocked silence. 😊😂

    Stacey i was so happy to see a video last night as an insomniac i was like YES but as you have the most soothing voice i woke up at 3am with my glasses embedded in my head after dreaming about shopping for pumpkin,no problem just started watching were i left off can't believe i am craving chicken and pumpkin lasagne at 4.30 am looks delicious,Happy Easter To All.

    Bechamel sauce in the thermomix is perfect. It should be in the recipes that are already on it. I add cheese in it to make a cleese sauce as well.

    Haha, I have since improved my lasagne game, but in the past with young family and working full time my lasagne attempts were lovingly called Collapsed Slop. 😅 We love the depression Era Salad, thank you for sharing that recipe. I used a mixture of gherkin juice, apple cider and white vinegar.

    Nutmeg, yes was thinking that the whole time you were prepping that sauce, thinking cheese and pumpkin and nutmeg then you took it out, must have upped that flavor so much. Cinnamon goes very well with pumpkin as well.

    Yum the pumpkin lasagne ..looks so delish 😋...Your tips are invaluable Stacey ..ie putting hot chicken breasts in mixer to shred them ..and the parchment paper over the casserole before the tin foil ...

      Coming back to update: I made your lasagna today just using what I had. Mashing up previously roasted pumpkin, using lasagna shapes, the remainder of a roasted chicken, your cheese sauce using up left over cream, and baby spinach leaves. It was an absolute hit with my family and my husband gave it top marks.

    Hi loved watching you cook today. I have made a recipe simular to this. I like to add a sprinkle of smoked paprikca on the last layer (on top) of the lasange. Also helps it brown. I also use vegan cheese (Cottage and Sharp) and vegan chicken. I also use small chopped broccoil in the layers. Happy Easter!!!

    I tried this recipe tonight with mince as i didnt have chicken. I really enjoyed the pumpkin but i didnt flavor it well enough so it was a bit bland. I agree with the addition of spinach taking it to the next level!

    I’d use up what I had as well and save the pretty ones for a traditional lasagna… interesting combination…probably not to my pallet but interesting nonetheless

    Thankyou so much for making this and showing us how. That looks absolutely yummo. Can't wait to try this one myself.
    I like the idea of cooking chicken in the pressure cooker (not that I have one so it's a moot point lol) but have been too afraid to cook them from frozen. Knowing my luck, I'd give my family food poisoning lol.

      Thanks so much. They are the best to have in the kitchen and have saved me on many occasions when I forget to take something out of the freezer. The best thing to do is get yourself a kitchen thermometer and that way you can check if your meat is cooked. Plus the chicken gets cooked twice. It was so tender in the end.

    pumpkin in lasagna....what an interesting idea!!! 😀 Creative and unique at least from my point of view....lol I live in rhw Pacific Northwest of the US....in WA state but not anywhere near Seattle. It is just turning spring here...so good to see the snow leave for good!!! Does hubby grow pumpkins to sell...my husband's family grew cherries and apples and I can tell ya I learned lots and lots of ways to use them...I would have rather they would have been pie cherries...but they were the sweet ones....so had a bit of rethinking to do.....but learned to make more than a few things with them...esp in bad years..lol Applesauce everynight nd we still love it1

    I’ll give you a heads up so you don’t have to use the parchment or the wax paper if you spray , I have a olive oil spritzer , your tinfoil before you put it on top it will not stick

    I do wish I could attach a pic! After watching this Lasagna, pumpkin from my lovely friends garden pureed with garlic and onion, added the spinach layer from mine, two chicken breasts and swapped out normal white or cheese sauce with blue cheese sauce ( fav in our house and so cheap from Eltham Cheese Factory Shop in Taranaki) Beautiful! Total winner! ❤❤

    Hi Stacey, I found you just over a week ago and your lovely lovely accent caught my attention first. Secondly was your cooking. Thirdly, I keep hoping for some outdoors shots of NZ.     I made chicken one with just white sauce and spinach and it was too rich and no taste...
    I like the idea of Pumpkin and spinach with some nutmeg or chilli flakes would be nice aswell...
    But it look fantastic big time...
    Can't wait to see new vlog...😂❤😂❤😂❤

    Is pumpkin what I know as butternut squash? I always make a traditional lasagne, I’ve never tried it with chicken 🐓 but I will try your recipe as I have all the ingredients (if butternut squash ok to use? ). Happy Easter! Orthodox Easter here in Cyprus is 3rd May.

      Not exactly the same (it's a totally different shape) but it is a relative, with a similar (if perhaps slightly nuttier) taste and texture so it would probably work

    This looked delicious. I haven't ever tried lasagne. With powdered milk - I was thinking of buying it for storage purposes and I don't drink milk but on the packet said after its opened to use it up. Can you store the powdered milk for a while say in a glass jar? Do you buy from supermarkets as haven't seen bulk or is that from Gilmores? I thought it would be handy for cooking if could just use powdered instead.

      I get it from either place. Supermarkets have 1 kg bags. Yes I store in in glass jars and it keeps for a very long time :-)

    I thought I was the only one that bulked up lasagna. I use silverbeet in the layers. It is amazing how creative you can be with food when you don't have much to share. I think we ate the best when I had to be creative.

    Made pumpkin layer lasagna carrots lentils spinach and peas on top layer homemade cheese sauce yes pumpkin lasagnas are yummy any one who hasn't tried do it experiment with any veggies with a good cheese sauce u can't go wrong pumpkin n chicken would taste great looks good

      I time them for midnight my time as I have so many viewers from all over the world and mostly try to time it for this time when I'm organized enough and ahead on filming, otherwise I'm not sure when would be the best time.
