Hey next time you’re in Pak n Save go to the freezer instead of the fridge. You can get a 2.1kg chicken for only $11.49! If all you’re gonna do is roast it anyway chucking it in the oven frozen will be sweet as. Just takes a bit longer

Greetings from Yorkshire. Enjoying your videos - your philosophy is very similar to ours. We make stock just with bones and water as it’s easier to pick over the bones later - there’s a surprising amount of meat left on them - usually enough to feed the dog for a couple of nights, though when we’re hard up I whizz it with cream cheese and make paté.
Your husband sounds like mine… we are farmers to in the states. He drinks chocolate milk for breakfast and a very light lunch and a double supper. We have 100 cow dairy operation then farm about 1,000 acres of hay, grain, corn and soybeans. I just recently found your channel in my feed and have been binge watching. I hope you are recovering from your surgery well. My husband doesn’t care for chicken either he wants his beef.

Snap! I do the same. The meals change with the seasons - in summer I make chicken ceasar salad and creamy chicken pasta salad. I also buy 2 chickens and break them down because we love schnitzels, and I can buy 2 whole chickens for the price of 3 breasts. I would love for you to do a video on breaking down a raw chicken, especially getting the thigh meat off the bone - I always struggle to do that cleanly and I'm sure there must be a trick I'm missing 🤔. I'd also love some tips for cleaning the oven after roasting chickens - they have a sticky fat that spatters and then heat sets like concrete and I hate that everything I bake after the chickens smells like roast chicken 🙄. For this reason I've been cooking mine in the gas bbq, but, with the increasing price of LPG, I'm going to have to start cooking them in my spotlessly clean oven, so any cleaning methods/tips would be greatly appreciated. ❤ Your pronounciation of Oregano is exactly right - people from north America seem to say it as thought the e is an a 🤷♀
My holy trinity of kitchen appliances is thermomix, instant pot and airfryer. Each of these is a MASSIVE timesaver. I can cook a whole cheapie discount free range chicken in 24 minutes right from frozen. If you're cooking for a few people then any of these would be awesome addition to your kitchen.

I live in Canada and it seems that we both cook the same varieties of dishes. My freezer is chock a block full of dinners I've pre prepared just as you do. Well done, it's a pleasure watching you labour in the kitchen, your family is very lucky indeed.
I'm enjoying your channel a lot. Thank you for the great ideas. I have one for leftover pastry scraps. You make a little cookie called Nun's farts. It's a French Canadian thing. Dampen your scraps slightly. Roll out into a rectangle. Butter the rectangle and then add a thin layer or brown sugar, cinnamon and nutmeg. After that you roll it up into a log and seal the edge. Slice about 1cm thick, place on parchment paper and bake at 350 until they begin to brown. You can eat them as is or drizzle with a touch of honey. Kids get a kick out of making them and no wasted pastry
I use to buy a cooked chicken from NW for $12 it's now $18 so instead I buy the cold cuts from the day b4. Four legs thighs and wings cooked cost $5 which us the equivalent of a whole at a third of the price

I am watching this while I have 2 chicken carcasses in the pressure cooker to make broth. I also put in some veggie scraps and I keep the stems from fresh herbs that I use like parsley, cilantro, thyme, basil in a baggie in the freezer and I chuck those in as well. After straining the broth, I put it in the fridge overnight to let the fat solidify on top for easy removal.
I use celery ,carrotts,onions,peas chicken. I then spice with sage and poultry seasoning,salt and pepper of course. I just found your channel. Sorry you have to have some surgery.Hope all goes well Stacy.
I enjoy your videos because this is my also way of cooking. If husband complains about chicken two nights in a row, remind him about how generous you were in allowing him the drumsticks and wings to gnaw on! That wouldn't happen in my house because I strip everything off the bone and save every bone and trimming for the stockpot - even when I am cooking for guests (Hehehe) Those wings and drumstick bones have a good lot of skin and gristle that add collagen to the stock. I no longer have six children at home to cook for, but I still cook this way when just for myself, to make lunches and dinners for the week ahead and for handy freezer meals. 1 Chicken = 15 meals/serves - roast - stirfry/vege rice - casserole/pie - salad - soup.
For your pizza subs , I used to pull out the soft part of the bread and use it in the mixture so it was more like a bowl that I was filling up , this would be good with leftover spaghetti bolognese mixture
When I make my chicken pot pie, I made 1 whole pie for my son and his family. For me I make the small individual pies. I never thought of using butter in place of the flour, going to give that a try. Our pre-made pie crusts comes in a round shape. 👋from 🇨🇦
I grab lemons in season from the local market when they are prime and cut into eight segments, bag them and freeze them. I used to just freeze them but they go black or brown and mushy when you defrost them to cut and use. If they are relatively thin they quickly freeze, defrost and are near fresh. I always break down the chicken, flattening the pieces. It makes it easier to store, grab and cook from the freezer, or cook multiple ways because I use breasts, thighs, drumsticks and wings differently. The remaining carcass goes into a large pot with basic veg then divided, adding beans, macaroni, potatoes, tomatoes to make different soups/meals.
Loved the chicken pot pie but had to add more stock too, but I served the leftovers the next day with a spoonful of curry powder mixed in. It changed to an entirely different dish and we had it with rice and vegetables. Loving your ideas, Stacey, I use them to suit our small seniors household.

its so nice to have a kiwi channel, i think we all seem to have forgotten how to make a fantastic yet cheap meal in favour of expensive convenience products. you have inspired me, and i for one am going back to cooking my meals how mum used to make them, the long way. and i thought the rooster just wandering in to the kitchen mid video was hilarious, and so typical of kiwi country living lol. it was great. all the best.
Im in the US and often frequent a local family's bountiful produce stand. Late Summer they come up w the most beautiful celery - its stalks are absolutely untrimmed w the most beautiful, tender stalks and leaves for CHEAP!! I rinse and chop it all for the freezer - so tasty(!) and handy w the nicest fresh flavor for everything one can think of and then some. You'll never find better seasoning!! ❤
I often use the leftover chicken by making a Chicken a la King and serve it on rice. Delish! I particularly like to add some sherry into the sauce which enhances the flavour, I feel. Throw in some frozen peas for good measure. A very quick meal to prepare.

I break down as large a chicken carcass as I can when on special. In Australia that would be A$5-6 a chicken. I mix and match the chicken with the staple vegetables of potatoes, carrots, onions, celery, leek, capsicum, zucchini, wombok/savoy cabbage, sultana and lemons. Occasionally in season fruit or prunes. Add that to rice, pasta, noodles, cous cous, peas, beans, chick peas and mushrooms and you have quite a lot of variety for very little cost. I basically wing it to mood and taste. I miss the giblets that used to come with whole chickens.

Appreciated this Stacey, so much of it is concentrating your effort aye to do heaps of prep & cooking at a time. I'm working on being more efficient in that area :) I'll be using Bostock chicken which is quite a bit more expensive, around $25 each BUT cooking them together & making multi batch meals will still make it a cheap way to feed people.

Loved your chicken soups made from your own stock i do that too. I also add pearl barley (not sure if you have it in NZ - tho with all the Scottish connections I think its likely) to the soup. It takes a bit of cooking so I either pre steam it over the stock or use more chunky veg for the soup so it has time to cook. It thickens the soup too. Loved the oatmeal fritters, I'll give that a go. Thanks T.

Chicken fried rice, maybe. Add plenty of get to make jewelle d rice and stir through some chicken. Or chicken pasties

Snap! I do the same. The meals change with the seasons - in summer I make chicken ceasar salad and creamy chicken pasta salad. I also buy 2 chickens and break them down because we love schnitzels, and I can buy 2 whole chickens for the price of 3 breasts. I would love for you to do a video on breaking down a raw chicken, especially getting the thigh meat off the bone - I always struggle to do that cleanly and I'm sure there must be a trick I'm missing 🤔. I'd also love some tips for cleaning the oven after roasting chickens - they have a sticky fat that spatters and then heat sets like concrete and I hate that everything I bake after the chickens smells like roast chicken 🙄. For this reason I've been cooking mine in the gas bbq, but, with the increasing price of LPG, I'm going to have to start cooking them in my spotlessly clean oven, so any cleaning methods/tips would be greatly appreciated. ❤ Your pronounciation of Oregano is exactly right - people from north America seem to say it as thought the e is an a 🤷♀

My holy trinity of kitchen appliances is thermomix, instant pot and airfryer. Each of these is a MASSIVE timesaver. I can cook a whole cheapie discount free range chicken in 24 minutes right from frozen. If you're cooking for a few people then any of these would be awesome addition to your kitchen.
My top 3 as well. I got rid of the rest!

I live in Canada and it seems that we both cook the same varieties of dishes. My freezer is chock a block full of dinners I've pre prepared just as you do. Well done, it's a pleasure watching you labour in the kitchen, your family is very lucky indeed.
I'm enjoying your channel a lot. Thank you for the great ideas. I have one for leftover pastry scraps. You make a little cookie called Nun's farts. It's a French Canadian thing. Dampen your scraps slightly. Roll out into a rectangle. Butter the rectangle and then add a thin layer or brown sugar, cinnamon and nutmeg. After that you roll it up into a log and seal the edge. Slice about 1cm thick, place on parchment paper and bake at 350 until they begin to brown. You can eat them as is or drizzle with a touch of honey. Kids get a kick out of making them and no wasted pastry

I use to buy a cooked chicken from NW for $12 it's now $18 so instead I buy the cold cuts from the day b4. Four legs thighs and wings cooked cost $5 which us the equivalent of a whole at a third of the price

Just watched this video for about the 4th time. I am making Chicken Pot Pie, but without the pastry tonight, and just with mashed potatoes on the side. I am loving the idea of having frozen cooked chicken in the freezer. This week I have been able to buy a 2.1kg chicken for $8.95. A good New Zealand Brand.

I am watching this while I have 2 chicken carcasses in the pressure cooker to make broth. I also put in some veggie scraps and I keep the stems from fresh herbs that I use like parsley, cilantro, thyme, basil in a baggie in the freezer and I chuck those in as well. After straining the broth, I put it in the fridge overnight to let the fat solidify on top for easy removal.

I use celery ,carrotts,onions,peas chicken. I then spice with sage and poultry seasoning,salt and pepper of course. I just found your channel. Sorry you have to have some surgery.Hope all goes well Stacy.
I enjoy your videos because this is my also way of cooking. If husband complains about chicken two nights in a row, remind him about how generous you were in allowing him the drumsticks and wings to gnaw on! That wouldn't happen in my house because I strip everything off the bone and save every bone and trimming for the stockpot - even when I am cooking for guests (Hehehe) Those wings and drumstick bones have a good lot of skin and gristle that add collagen to the stock. I no longer have six children at home to cook for, but I still cook this way when just for myself, to make lunches and dinners for the week ahead and for handy freezer meals. 1 Chicken = 15 meals/serves - roast - stirfry/vege rice - casserole/pie - salad - soup.
For your pizza subs , I used to pull out the soft part of the bread and use it in the mixture so it was more like a bowl that I was filling up , this would be good with leftover spaghetti bolognese mixture
When I make my chicken pot pie, I made 1 whole pie for my son and his family. For me I make the small individual pies. I never thought of using butter in place of the flour, going to give that a try. Our pre-made pie crusts comes in a round shape.

Absolutely!!
I grab lemons in season from the local market when they are prime and cut into eight segments, bag them and freeze them. I used to just freeze them but they go black or brown and mushy when you defrost them to cut and use. If they are relatively thin they quickly freeze, defrost and are near fresh.
I always break down the chicken, flattening the pieces. It makes it easier to store, grab and cook from the freezer, or cook multiple ways because I use breasts, thighs, drumsticks and wings differently. The remaining carcass goes into a large pot with basic veg then divided, adding beans, macaroni, potatoes, tomatoes to make different soups/meals.
Yes I would love to see how you breakdown your chicken. I always feel like I'm making it harder on myself than it needs to be! Lol

Loved the chicken pot pie but had to add more stock too, but I served the leftovers the next day with a spoonful of curry powder mixed in. It changed to an entirely different dish and we had it with rice and vegetables. Loving your ideas, Stacey, I use them to suit our small seniors household.

Im in the US and often frequent a local family's bountiful produce stand. Late Summer they come up w the most beautiful celery - its stalks are absolutely untrimmed w the most beautiful, tender stalks and leaves for CHEAP!! I rinse and chop it all for the freezer - so tasty(!) and handy w the nicest fresh flavor for everything one can think of and then some. You'll never find better seasoning!! ❤

I often use the leftover chicken by making a Chicken a la King and serve it on rice. Delish! I particularly like to add some sherry into the sauce which enhances the flavour, I feel. Throw in some frozen peas for good measure. A very quick meal to prepare.

Welcome to the channel. I will be writing up recipes more, I'm playing major catch up lol
I break down as large a chicken carcass as I can when on special. In Australia that would be A$5-6 a chicken.
I mix and match the chicken with the staple vegetables of potatoes, carrots, onions, celery, leek, capsicum, zucchini, wombok/savoy cabbage, sultana and lemons. Occasionally in season fruit or prunes.
Add that to rice, pasta, noodles, cous cous, peas, beans, chick peas and mushrooms and you have quite a lot of variety for very little cost. I basically wing it to mood and taste. I miss the giblets that used to come with whole chickens.

Appreciated this Stacey, so much of it is concentrating your effort aye to do heaps of prep & cooking at a time. I'm working on being more efficient in that area :) I'll be using Bostock chicken which is quite a bit more expensive, around $25 each BUT cooking them together & making multi batch meals will still make it a cheap way to feed people.

You can pick up chicken carcasses for stock for next to nothing from a butcher (or even nothing if you have a regular butcher).
Loved your chicken soups made from your own stock i do that too. I also add pearl barley (not sure if you have it in NZ - tho with all the Scottish connections I think its likely) to the soup. It takes a bit of cooking so I either pre steam it over the stock or use more chunky veg for the soup so it has time to cook. It thickens the soup too. Loved the oatmeal fritters, I'll give that a go. Thanks T.
