I am trying really hard to get all kinds of veges into my 5yr old mokopuna (grandchild). I have hit the jackpot - roast potatoes (parboiled and frozen) on Saturday night with roast pork belly all done in my airfryer was well received. Ok to be honest she didn't like the side of green beans and courgettes that I fried up but when she tried the roast agria spud it was like she discovered something magical :) I've ventured into new territory as a nanny....and the butter that went with it was lipsmacking licious....at $2.49 @ kg of yellow agria potatoes I am determined now to par boil spud hash & wedges. I have already parboiled some big ones for filled potatoes so they can be filled with ham and cheese or smoky baked beans and cheese - all with sour cream of course. Thank you Stacey :)

Green vegies (and I love baby squash) smothered in butter with a little salt and pepper. Or, I went to hours of trouble by getting all the fresh vegetables (baby corn, zucchini, celery, capsicum, carrot, you name it) and "blanching" them in boiling salted water, so they were all still slightly crunchy, making a seafood type dip, and serving on a great big platter. Though to be fair, my kids loved vegies anyway, but for the pickier eaters, sometimes a little "crunch" helps. Snow peas and green beans included in that list. Sometimes it's not the taste, but the texture that they don't like. P.S. where applicable, the vegetables were cut into "finger food" sizes before blanching. A few inches long; everything was eaten with hands lol.

I LOVE oven roasted potatoes and make them A LOT! I chunk up about the same amount you had and throw them in a freezer bag, then add some olive oil to the bag and shake the bag to coat them. I then add granulated garlic, dried rosemary, and fresh cracked black pepper, then shake the bag really well to evenly coat everything. I spread these out on a sheet pan that has been heating in a 425 degree oven (don't know the conversion) that has melted bacon grease, then sprinkle with some kosher salt. Let them cook about 20 minutes and toss/turn them on the pan, then cook another 20-ish minutes or so. This seasoning combination is my favorite to use for ANY oven roasted veggie. And now I am inspired to try and freeze mine! Still need to get you that Borracho beans recipe, but I am also going to send you a recipe for apple cake that is a tradition in my household for Thanksgiving, and has a hard sauce to go with it and it is SUPERB! Hi Stacy Loving your channel. Heat up tray and roast the preoiled spuds. Works for roast pumpkin, kumara, carrots - Arohanui!
Even thou I’m watching this one year on, I’m going to do this next time I’ve got main crop potatoes ready. As now eating new potatoes. Unless I do go buy some old ones just to have a go at this.

Im just going through your back catalogue. I really love make ahead meals and ingredients like this. I call it doing a favour for future me! Often i get home from work and cooking dinner is the last thing i want to do. So ready-prepped things are my best mate. I like to have a ziploc bag of coleslaw made up every week just so i have some things partially done 😂
For your harvest you may know anyway, you could:- Mash potatoes wax or floury types with butter or not freeze them flat. They don't get mushy in fact they're brilliant heated up in an air fryer or fry pan or halogen oven.

It's the oil that needs to be heated, it helps so that they don't stick to the pan. It only needs a minute or two. If you don't want to do that then by all means just give them a quick coat. I have two different air fryers one with a tray and one without. So without a tray, I'm sure just giving them a coating will be fine.
At 10:13 you cover them while they're still piping hot, to let them cool down. What is the reason for covering? Could one leave them open to cool? Also, just wanted to confirm, when you take them out the freezer to put into the oven to roast, to you put them in the oven still frozen? No need to defrost first?
Just watched your savoury mince vid, I'm actually cooking a leg of mince myself lol, you can cook in my kitchen anytime, or maybe I can cook for you, not mince though 🤗

Even store bought frozen potatoes are processed similar to this. You have to learn how they do things before just throwing something into the freezer.

Pumpkin pieces can be roasted with a little oil, appropriate spices or herbs, and frozen in bulk.
I have a Sunbeam Halo air fryer which you don't pre heat. Am I best to just toss the frozen potatoes in oil then put them in the air fryer?

Yes it was another ten, but just keep checking them as it all depends on how big they are cut.
So you went from boiling potatoes to taking some out of freezer and into air fryer. Im lost. Then back to boiled potatoes.
