Tomato Relish and Caramelized Onion Jam

  • Today FINALLY the caramelized Onion Jam and Tomato Relish is here!
    Caramelized Onion Jam
    2 kg of diced onions
    1 cup of balsamic vinegar
    1 1/2 cups of brown sugar but you can add more to taste (not less)
    thyme
    garlic
    salt and pepper

    Tomato Relish
    2.5 kg diced tomatoes
    800g Diced onions
    2 cups of brown sugar add more to taste (not less)
    2 cups of malt vinegar
    garlic
    salt
    3 Tbsp mustard seeds
    2 Tbsp curry powder

    I love love love that your kitchen is a tiny ‘normal’ kitchen, not a great showroom job! And still you are able to create so much yummy foodstuffs. How would I water bath these please? I have no other way of preserving them

      Great recipes! What do you use the caramelized onions for? I know some people dehydrate them and then use them as a crunchy sweet topping, but how do you use them? Thanks!

    Loved seeing another real can opener, I’ve been using the same one of this type for over 40 years and always giggle when someone else tries to use it and has no idea.

    I have heaps of frozen Roma tomatoes in the freezer and was unsure what to do with them. I got them for $1.70 per kg I love tomato relish, so I will make that. Thanks Stace!

      That is awesome! A tip I forgot to mention, If you want to thicken your relish up without simmering for a long time add some tomato paste.

    Dear Stacey, so good to see someone else using Gilmour’s excellent tomatoes in a can. I use those plus my frozen ones from my crop from the garden. I also use the Italian whole ones they stock. So good for bulk spaghetti sauce. Love your videos, its refreshing to see NZ content, 😊thank you ❤❤❤

    Another video goodey - two of my favs - caramelized onion jam & tomato relish. Thank you Stacey 😊 Last night I made tomato soup for the freezer & this morning I made Harvest Tomato Sauce by roasting two trays of roma tomatoes with onions, red pepper, courgette, tomato paste, tuscan seasoning & salt & pepper. The caramelization was awesome! I whizzed it all up in a bowl with my stick blender & bagged it up for the freezer. I’ll eat it with steamed mussels with a splash of cream & some crusty bread ❤ I’ve become a more relaxed cook through watching your channel. I’m not so worried about following recipes to the inth degree. In fact, I’ve gotten more adventurous chucking in ingredients that I’ve remembered I have using up leftovers etc. It’s very cool 🎉🎉🎉 Thank you Stacey. Nga mihi, Robyn from Gisborne/Tūranga

    Looks gorgeous :) I do Open Kettle method for most things like this it just means I have to be ready and fast when it comes to jarring up. Not had any issues so far after 30+ years so all groovy :D :D :D I love the addition of thyme to the onion :)

    Mum used to make tomato relish, it was great on corn chips with grated cheese on top, my son thought that was nachos until someone gave him real nachos with beans and mince .

    I live by myself, so I preserve a lot of things, to prevent wasting it. Your recipes are different from my own, and I love trying out new things! I was looking forward to your caramelised onion recipe, to add to some of my frozen hummus. Yes, I freeze it in small portions (you were wondering about that) Now I also want to try out your tomato relish, because my recipe is different...

    Great video Stacey..I make both of these recipes and they are a family favourite along with green tomato pickles which is my grandmother's recipe and my mother's tomato sauce recipe. I also make my grandmother's plum sauce recipe..oh I love it!! I make loads but I love watching you do your stuff in the kitchen..I like the company too lol..enjoy the weekend❤

    Stace❗I just watched your dilemma about avoiding supermarket or making the most of their specials. While I admire your challenge to not shop at the supermarket....if supermarkets have specials that are too good to ignore......then go for it 👍👍 as your challenge was also about saving $$ 👍 😊

    2 kilos of diced onions? Wow, I normally caramelize onions by just covering my frypan base. I've been wasting my time clearly.
    The relish sounds very nice, I should give it a try. The onion jam? I'll be making that on the weekend for sure!

Making dandelion honey, dandelion molasses and starting on red bud syrup, my Mom was one that she just added what she thought was needed for the recipe without measuring, I do the same at times 🤗🥰

    Thanks for sharing your recipes and kitchen knowledge Stacey. I love making relish, chutney etc etc (which i process using the overflow or water bath method) Have lots of onions that need taking care of this weekend so ill definitely give your caramelized onion jam recipe a go 😊 just as a side note if you get onions that are newly harvested they dont actually make you cry because the sulphurs in them haven't begun to oxidize which occurs naturally with storage. Taste tested my mustard but it still has a way to go with the mellowing process just yet

    You made the pasta using caramelized onion. I tried to go rogue and added avocado and lemon pepper to mine. First bite hubby wasn't sure but I caught him going for seconds and my child who is frustratingly fussy took the left overs for her lunch. Thanks!!!!!!!

    Onion Relish. If the recipe was halved and just put in sterile jars and stored in fridge it should be ok??

      Hello, and thanks for watching. The vinegar and sugar levels would mean you could just put the hot preserves in jars and seal. As long as the lid pops down it will be fine on the shelf. Pop into the fridge after opening.

      You can use your jam jars. Like, I used old jars, too. Take a look at the pineapple video and use a pot to water bath can them.

    Question if you read this and have time...why does everyone put jars of preserves in a canner??? I have only ever preserved by sterilizing jars, popping hot fruit in, pouring in syrup and seal it with seal and screw tops. As long as it seals they last for ages.
    Also is a pressure cooker the same as a canner?? Thank you.

      Hello and welcome to the channel. I try to show a happy medium of canning as I have so many people from all over the world. If I show one method I get comments it's not safe and if I show another it's the same. So kind of a no-win situation. I don't show the overflow method (very popular in NZ) as I have not used this method before. I have also done my preserves as you suggest as well. I guess in the end I don't mind going that extra step to make sure it is well preserved. I hope all that makes sense.
      Pressure cooker/multi cooker is not the same as a pressure canner :-)

      I made the tomato relish today. My first time canning anything. I used fresh tomatoes and drained the juice with salt like you suggested. It turned out great! The family liked the taste too. Win for us 😊 thank you!

    Great recipes! I've been after a caramelised onion recipe for years! One question about the maple syrup, can I use golden syrup or treacle instead? Thank you for always giving me great ideas!

    Thank you for these recipes! I made your canned pineapple yesterday, my first time water bathing and it was so exciting to hear the jar lids popping as they sealed!
    I don't have a pressure canner so would like to water bath these two recipes - would it also be 15 minutes of boiling for these?

    Love this video! I do make caramelized onions, but not tomato relish. What do you use it for?

      Mostly as a side like you would with tomato ketchup/ sauce. On meats in a sandwich, on pizza. Lots of different ways. 😊
