Love hearing different measurements, A glug of oil definitely makes sense , I’ve also been known to use a splash of vinegar. Old recipes sometimes trip me up a little, a handful of salt or a tumbler of water ! But most of all love when you said measure with your heart !🎉
Mum used to make tomato relish, it was great on corn chips with grated cheese on top, my son thought that was nachos until someone gave him real nachos with beans and mince .

Thank you Stacey 😊 Last night I made tomato soup for the freezer & this morning I made Harvest Tomato Sauce by roasting two trays of roma tomatoes with onions, red pepper, courgette, tomato paste, tuscan seasoning & salt & pepper. The caramelization was awesome! I whizzed it all up in a bowl with my stick blender & bagged it up for the freezer. I’ll eat it with steamed mussels with a splash of cream & some crusty bread ❤ I’ve become a more relaxed cook through watching your channel. I’m not so worried about following recipes to the inth degree. Looks gorgeous :) I do Open Kettle method for most things like this it just means I have to be ready and fast when it comes to jarring up. Not had any issues so far after 30+ years so all groovy :D :D :D I love the addition of thyme to the onion :)

my hubby loves the little tomatoes for eating with his tablets so when he has a new batch of tomatoes i put the older ones into the freezer i end up with a big bag full and make a tomatoe paste type thing i hate wasting them as they are over £2 a small bag here

I love making relish, chutney etc etc (which i process using the overflow or water bath method) Have lots of onions that need taking care of this weekend so ill definitely give your caramelized onion jam recipe a go 😊 just as a side note if you get onions that are newly harvested they dont actually make you cry because the sulphurs in them haven't begun to oxidize which occurs naturally with storage. Taste tested my mustard but it still has a way to go with the mellowing process just yet

I have only ever preserved by sterilizing jars, popping hot fruit in, pouring in syrup and seal it with seal and screw tops. As long as it seals they last for ages. Also is a pressure cooker the same as a canner?? Thank you.
Hello and welcome to the channel. I try to show a happy medium of canning as I have so many people from all over the world. If I show one method I get comments it's not safe and if I show another it's the same. So kind of a no-win situation. I don't show the overflow method (very popular in NZ) as I have not used this method before. I have also done my preserves as you suggest as well. I guess in the end I don't mind going that extra step to make sure it is well preserved. I hope all that makes sense. Pressure cooker/multi cooker is not the same as a pressure canner :-)

That is awesome! A tip I forgot to mention, If you want to thicken your relish up without simmering for a long time add some tomato paste.

Tomatoes are so versatile. Reminds me of canning tomato preserves/jam, without the vinegar and spices, of course.

I love making relish, chutney etc etc (which i process using the overflow or water bath method) Have lots of onions that need taking care of this weekend so ill definitely give your caramelized onion jam recipe a go 😊 just as a side note if you get onions that are newly harvested they dont actually make you cry because the sulphurs in them haven't begun to oxidize which occurs naturally with storage. Taste tested my mustard but it still has a way to go with the mellowing process just yet

Question if you read this and have time...why does everyone put jars of preserves in a canner??? I have only ever preserved by sterilizing jars, popping hot fruit in, pouring in syrup and seal it with seal and screw tops. As long as it seals they last for ages.
Also is a pressure cooker the same as a canner?? Thank you.
Hello and welcome to the channel. I try to show a happy medium of canning as I have so many people from all over the world. If I show one method I get comments it's not safe and if I show another it's the same. So kind of a no-win situation. I don't show the overflow method (very popular in NZ) as I have not used this method before. I have also done my preserves as you suggest as well. I guess in the end I don't mind going that extra step to make sure it is well preserved. I hope all that makes sense.
Pressure cooker/multi cooker is not the same as a pressure canner :-)

Could I make the caramelizied onions like every now then when you cook your meals instead of jars
Standing at the sink taking the skins off of garbanzo beans so I can make your hummus 😊. Doing one batch with the onion jam and one batch with Everything Bagel Seasoning 🤤

You can use your jam jars. Like, I used old jars, too. Take a look at the pineapple video and use a pot to water bath can them.
