    Im 73 , and i so admire your resourcefulness. My mum would give you TOP MARKS , Youre a great go to for me , to re inspire my cooking , My zeal plummeted when my hubby went into a care home . Your posts are lifting up my spirit, GOOD GIRL . GOD BLESS AND KEEP YOU . ❤

      Wow, thank you. My job is at a rest home. I miss it a lot. They really seem to enjoy my cooking as well. I'm sorry you lost some of your zeal, that would have been such a difficult time for you. I kind of went through the same thing after all of my six children grew up and left home.     Im 73 and i still freeze celery carrots potatoes parsnips and onions and i also do marinated foods and also precook meals and freeze --also freeze tomatoes and potato patties also my baking just to name a few so i love watching your program to see i dont miss anything lol

    Just saw you cutting the corn leaving the outer leaves on and freezing it. I always cook my corn in the microwave without shucking them. I have found two put in for 3 minutes and then peel the outer leaves off, they peel so easily with the silks coming away freely with the leaves and they are so tender and taste so much better. You can open them up and put butter and seasonings on them and then fold the leaves back over before microwaving if you wish. Love watching you as you are my type. I love prepping my vegetables and sometimes I am hit and miss as well when it gets a bit busy. BTW I am going to try your BBQ sauce, it looks wonderful.

    I whizz my onions and garlic up in the food processor, portion in silicon moulds then put in a bag in the freezer.

      I make little teaspoon size pucks with my garlic but like the free flow onions. Great idea to whizz them up, though. I might do some of that with onions I just harvested. Thanks for watching.

    I’ll confess with you that I have thrown away way too much produce from lack of prepping it! I’m going to work harder to prep when I buy it so that doesn’t happen.
    I freeze and freeze dry onions, peppers and celery for ease of use. Although this is a lot of upfront work, it pays off when I can just grab and cook faster later.
    Thank you for this reminder to check my current supply and stock up on what’s lacking.
    P.S. I enjoyed seeing your money. It’s interesting to see how different currencies are around the world.

      Thank you for confessing your produce thrown away as well. It has only been a couple of days since I filmed this and it has already had a positive effect on the prepping of veges for dinner but also ensuring I'm using up what I have. I'm sick of basically throwing money away.
      I can only dream of owning a freeze drier, they are far too expensive to get here.

    Ive done onions and peppers in the freezer for the last two years but have lots dehydrated but never thought of freezeing celery so that will be next thankyou🙏😊

      I also have dehydrated and it's also super convenient. The celery is so handy to have and it saves me heaps of time too. I'm glad it has given you another idea to use.

    Hi Stacey. If you buy cons of corn when it's on special. Throw it in the freezer in its husk then when you need it pop it in the microwave husk and all for five minutes so yummy. My kids would grab one after school for a snack, sometimes they would even take it in their school lunch and heat it at school. So juicy with lots of butter.

    I heard several years ago if you plant the bottoms of the celery they will regrow. Same as cauliflower or broccoli if you just cut the heads off in your home grown produce.

    I bought the green stalk towers to grow my own and then went into sticker shock at the price of the potting mix. Cheeper to buy the produce than grown your own. the water bill alone was killing me.

      American here - Texas. It is usually cheaper to buy produce at the store than watering the garden so much. The deer eat up gardens in a blink of an eye. Buying from farmers' markets is sooooo expensive. Last time I went they wanted $4 per pod of okra! $4 for one single okra!!! Haven't been back since. Grocery store frozen okra is $1.50 for 12 ounces or $4 for 12 ounces of fresh. The fresh is too expensive but the price should drop in a few months.

    Hi Stacey, just came across your channel last week. Watched you prepare and freeze your vegetables, you know, watching your video ive just realised how much i waste! For instance the celery, often i need just a few stalks for a dish and I've never thought of freezing the leftover stalks! But i will from now on, love your videos.

    I live in Auckland but have for the last few years especially tried to stick with local green grocers and butchers which desperately need our support in some areas. The fruit and veg are usually cheaper and the turnover so fast that things are much cheaper. Just have to find a goid one! We have just moved into another rental so hoping we won't need to move again too soon and planning a patio garden for spring... at least we can have some homegrown produce. ❤

    Im in Tasmania, i found the price of your vegetables more expensive than ours. I do the same as you freezing the vegetables. The only problem is that i forget whats in the freezer or they get lost down the bottom under other things. Thats my fault i know! BTW, i buy my milk in bulk and freeze it for when I need it

    You're an expert at slicing and dicing those onions. I never thought of using the celery leaves for stock; excellent idea! All that produce looks so good, especially the broccoli, celery and lettuce. My veggies usually die in the fridge as well 😁. I put zucchini in veggie soup or I will slice it, coat with flour and fry it; delicious

    When I am back out on my own, as I live with family right now and do not do a lot of fresh fruit/veg/planning, these are things I will be doing. I myself do fresh berries/fruit in my morning breakfast yogurt so when I see them on sale I do get extra and freeze those - the berries usually fare the best. Bananas are an issue in so much that once frozen you can only do one thing with them - make ice cream or milk shakes, substituting the frozen bananas for any ice cream you'd use. I add these to my Vitamix with a little milk or coconut water, sometimes with some homemade chocolate syrup, or peanut butter, or caramel syrup, and I have a relatively guilt-free treat. But they don't work so well in my morning yogurt. But even on my own I like to make big batches of marinara, soups, etc, and store them away. It makes it simpler for me to have a home cooked meal after a full and busy day at work.

      Hello my dear! Pre planning is always so much better. My problem is usually I have good intentions, and then something else pops up. I don't even eat lunch and breakfast. Once in a blue moon, I will have lunch. I need to break that bad habit. I hope you are feeling better 💓

      @@FarmersWifeHomestead you at least gotta have some breakfast. I like Greek yogurt for the protein and it's thick and creamy, a splash of raw honey, a couple tablespoons of hemp seeds which also are for the protein and the EFAs, and then a handful of berries of some sort for the antioxidants and a banana for the potassium. All the protein keeps me full even if I don't eat lunch. I want to say though at some point you said you didn't care for yogurt though, so...But you're right, you HAVE to start doing this for yourself - YOU DESERVE IT! Even something unorthodox for breakfast as some leftover meat (protein) from the night before and a banana or apple, or a couple of those delicious plums you got. No excuses Stace, JUST DO IT FOR YOURSELF!!!
      Now I'm battling a middle ear infection - everything sounds like I'm underwater. This crud in one form or another is hanging on like a Stage 5 clingy, psychotic ex-boyfriend who won't let me break up with him. I'm just over it, but trying to take as good of care of myself as I can. You need to do the same ;-)

    Yes so far in what you’ve diced up and frozen, I also slice and dice our capsicum on season, we also had a good harvest this year so they’re all in the freezer along with our tomatoes.

    I was given a heap of onions the other day and as I live alone I after watching your videos cut up all the onions and put them in the freezer. So much better than them going to waste if I never got around to eating them. Thanks heaps

    Thanks :) Yup I remember those days too. I think my Mother would spend more than she used to because it was on the shelf and it was cheaper than the dairy but it was more about the novelty of the experience like having a shopping trolley! That was some kinda magic :)

      Hello and thank you so much for your lovely comment! The BBQ sauce recipe was mostly followed from the Ball book I have. I made tweaks to it myself as it didn't give me the flavor I was after. If you search my channel you can find that video. Actually, I will put it in the description box of this video so it's easier for you to find. The ketchup I haven't made yet but I will be next week.

    Yes I do put veg in freezer for later. Peppers and onions I’ve done. Never brought celery like you did but have put my own little celery stalks.

    I'm doing the same- but probably not as well 🙂. I am a sub-par urban homesteader BUT am giving it a good nudge! I got 12kg of tomatoes for $6 and am making relish tonight. Cherries for $3 for 2kg are in the freezer too. Metal straw for the cherries is a great idea- I sat there cutting them out (doh). I grabbed some more this week for $2.99/kg and want to make some jam as well. Have you ever made a marmite/vegemite alternative from scratch?

      Oh my, those prices are insane! I looked at getting more cherries but still $10 for 900g.

    Next time you make yogurt, instead of using homemade or store bought yogurt as the starter, try using the stems and caps off of jalapeno peppers (a sort of hot pepper). Sounds crazy but it works! You can use sweet bell pepper stems and caps or any variety of pepper but I like freezing jalapeno stems/caps after making poppers (baked cheese filled peppers) so no waste except the seeds. Do the milk (any type milk) heating and slightly cooling and add 6, ymmv, stems/caps to each quart and incubate as usual. I've gone through several incubation methods and prefer a slightly warm oven method. The finished product has a very mild spicy taste on batch #1 but the chained batches have no flavor of the pepper. Yes, the chained pepper starter can be frozen. These are 99% free of whey and thicken faster than using a yogurt starter. I turned a quart of yogurt into a savory cheesecake today, yum! The #1 batch can be used in a vegetable dip or other savory dish.

    I have found as long as you remove the silk from the corn leaving in the husk is fine but if I freeze with the silk it.ends up with a musty flavor when cooked.

    Grating the zucchini is a good idea, I froze my crop last year and it didn’t thaw well. Had to throw them all out.

    Do you watch Acre Homestead at all? She has great prep videos. I tend to blanch my celery but it is good to know that it is not needed. Have you bottled green beans and if so is a canning machine (mind blank going on here) needed😊? What sort would I need to purchase? I think I will have heaps of squash and pumpkin coming and would like to perhaps bottle those when the time comes, just in case power cuts happen.       Hello, and thanks for watching. I love Becky, I've been watching her since before she became huge. I haven't canned green beans as until recently, I hated them. I found I like them most when they are just cooked and still have a crunch texture. You would need to invest in a pressure canner. I will be doing my pumpkins this year once they start to come in. 😊

    Love your videos,I also hate big supermarkets and visit as little as possible,we are in Gippsland, Australia and are on a farm,we grow a lot of fruits and vegies and I store a lot for later in the year,we grow herbs,spring onions,beetroots,silverbeet,chard and lettuces nearly all year round and freeze alot of our other produce I grate big bags of zucchini chop onions,celery freeze all our tomatoes,jalapenos,bananas and berries...I also have a hard time growing celery..lol
    I make a lot of meals and put in the freezer as theres only the two of us now the kids have all moved out, hubby does shift work so there are always dozens of meals for him to choose from ..thanks for your great easy to watch videos..Cheers from Jo.

    Are you able to get dried corn husks (you say skins) to make Mexican tamales? If not, husk the corn to get whole husks and dry them in the sun until **completely** dry and store them in a plastic bag out on the counter or shelf. Do a search for red (or roja, Spanish word for red) pork tamales or chicken or beef or even a sweet type with a fruit filling. The red/roja sauce is made from dried peppers which I'd guess you could find similar ones at local markets or grow in the garden. The masa harina is the breading mixture that is spread on the dried corn husks which is then topped with a pork pot roast or whatever filling and rolled up. These are then steamed in a tall pot or can be laid sideways in a large round pot. Just don't let the water touch them and keep checking the water. They freeze well and can bet reheated in the over or microwave.
    Save the corn cobs to make corn cob jelly which takes a lot like honey. Also, the corn silks can be made into tea. No waste!

      Forgot to say, ignore the fancy bows tied around tamales and there is no need to fold up half the husk. That's too time consuming and wasteful. Just fill husks 95%, roll them up and get on with life.

      Let the husks dry naturally until at a yellow/tan stage and are stiff. Completely dried. Store in a plastic bag and they keep forever. When ready to use, soak them in a bowl of water so they're flexible enough to roll and bend. Spread them with masa harina dough (a cornmeal ground from hominy that has been treated with a lime solution (nixtamalized - yeah, no one knows that word but every Hispanic mama has a bag of Maseca brand in the pantry in the US) and fill with most any boiled and shredded meat.
