- Red chilaquiles is such a comforting Mexican breakfast that takes us on a trip to revisit childhood memories and times spent with family around the dining table. If this is the first time you try them you will taste and feel close to Mexico and get a feel of its rich and profound culture. Our ancestors left their print of creativity in each of their recipes by using ingredients at hand and available in their region. Love the process, enjoy the aromas and celebrate the flavors.

Once again a Flavor Masterpiece. I will try this on Sunday as we are having a Socially Distanced Brunch. I don't have a proper Comal yet so I will use my Irish Comal, the cast Iron skillet.
Show off your skills ☺️👍🏻🥳
Nice 👍 and delicious 👌🤗
I love chilaquiles. Thank you so much for your recipe.
They are mouthwatering, enjoy ❤️
I needed this recipe! Thanks! new subbie here. Your channel is 🧨 😋
Que rico 😍
Hi I love your cooking ty 👏🏼👏🏼👏🏼🌱💯😍
You are so welcome!
You have great recipes. You and others have been a big help with recipes during Covid. Thank you for sharing your recipes.
Glad to hear I can be of help during this time! ❤️
And we love heat. Living in New Mexico we have some HOT chile here.
@@nicoleh87505 Love it! Im guessing you are leaving in the seeds huh? 😄
I will. I might incorporate New Mexico red chiles too!! 😋😋😋
Yummy 😋
What a great and talented young lady and great Cook 💞
Thank you so much!
I put monterrey jack cheese on mine and let it melt super good.
My mom tried making these once but she baked the tortillas instead of frying. I remember they were pretty good with the sauce but I want to try a more authentic version like this 😊
You’re going to love it. It’s delicious!
Looks great! Can this be made with store-bought tortilla chips rather than going through the process of frying them yourself?
Uyi, que rico. Chilaquiles are the best. Do you have a suggestion for another oil as a substitute for canola?
I know this is late, but you can use rendered beef tallow or lard. Stay away from seed oils, such as canola and soy--they're very inflammatory, and bad for your heart.
Hi if u have epazote bits( my store didn’t have fresh) can I still use? How much tsp? Thank u🥰
❤
Love your videos! 😍 is there a blender that can make it that smooth that’s not 600?🧐
That’s what they make a strainer for! It only takes a second.
@@toddianuzzigreat idea. I've also used cheesecloth for stuff like that. Both are good ideas because blenders can get REALLY spendy, especially with the more high-powered professional grade ones.
However I would recommend the Equipment Review of Cook's Country Test Kitchen. They do some excellent reviews and heavily test every piece of equipment they show
I'm shopping blenders Rossana. What brand is yours? Recipe looks amazing. Can't wait to try it this weekend.
Thank you and yes you can find a link to the blender I’m using in the description area. 😊
@@VillaCocina thank you! did not see that. Vita-Mix was one of my top 3 and I think you helped seal the seal. : )
If I don’t want to make this dish spicy, what is other chiles can I substitute for the guajillo chiles?
Delicioso yo los ago no me quedare con las ganas yes
Estoy segura te quedaran deliciosos!!!!
I fried the tortilla in bacon grease and OMG
looks delicious but at the end that serving is too small for me.. i'll need seconds and maybe thirds!
Why do you toast the chilies before u wash them? Washing them first would makes more senes. Thanks for the video.
Hi there! By washing first the chili will start to rehydrate slowly. We don’t want that. By toasting when dried we get a much better result in flavor. Hope this answers your question.
I don't even rinse them at all ha ha! Unless they are really dirty. If so, I would rinse them Before (like you said). Then, let them dry before roasting them. Anyway, these are good Chilaquiles. ; ) The Puya chiles add that picantito!!
Can you explain the differences between green and red pozole, and the chicken and pork please? I'm Mexican and it confuses me even.
I wonder if this sauce comes in a jar lol
I think you will actually have to come to my house and show me how to make it. I keep messing up.
I'M USED TO USING SCRAMBLED EGGS & CHEDDAR CHEESE??!!
My store doesn't have Chile's puyas.😕
You can use all guajillos or if you like spicy chiles árbol would work as well.
@@VillaCocina Awesome. Thanks for the helpful tip. God bless you and your husband! 💕
Salsa milpera y pollo a la naranja cuando
oh my goodness I have been making them all wrong
Let me know if you give this a try 😊
That is not the way my mom makes them. 🙈
Looks good. Canola oil tastes fishy to me.
I like your channel. Yet I feel that the best cooking channels give precise measurements. For example the onion you show would be considered huge around here. Giving measurements in grams, even with things that doesn't really have to be that precise puts us all in the ballpark.
I hope that you add this valuable step to your channel.
Chilaquiles should not be crunchy EVER. They should be soft and easy to cut with the side of your fork. You can also add shredded chicken or use a salsa verde instead of red chili sauce.
I'm a big fan of the channel, I am not a fan of the new HD camera. Fyi
