If this is the first time you try them you will taste and feel close to Mexico and get a feel of its rich and profound culture.     Chilaquiles Recipe 📝
    For the fried tortillas
    8 oz or 10 ea corn tortillas
    1’’ canola oil
    For the sauce
    1/2 ea medium white onion
    2 ea garlic cloves
    1 ea tomato
    Chiles (red dried chilis)
    3 large guajillos
    2 chiles puya
    4 ea epazote leafs
    2 cups of chicken stock- if needed you can add more when blending the sauce as explained in the video.
    3 TBSP olive oil
    Salt to taste
    - Accompany with fried eggs
    For the toppings
    Sour cream
    Queso fresco- Mexican style cheese
    White onion (sliced)
    Avocado (additional)(sliced)

    Once again a Flavor Masterpiece. I will try this on Sunday as we are having a Socially Distanced Brunch. I don't have a proper Comal yet so I will use my Irish Comal, the cast Iron skillet.

    My mom tried making these once but she baked the tortillas instead of frying. I remember they were pretty good with the sauce but I want to try a more authentic version like this 😊

      I know this is late, but you can use rendered beef tallow or lard. Stay away from seed oils, such as canola and soy--they're very inflammatory, and bad for your heart.

      That’s what they make a strainer for! It only takes a second.

      ​@@toddianuzzigreat idea. I've also used cheesecloth for stuff like that. Both are good ideas because blenders can get REALLY spendy, especially with the more high-powered professional grade ones.
      However I would recommend the Equipment Review of Cook's Country Test Kitchen. They do some excellent reviews and heavily test every piece of equipment they show

    Why do you toast the chilies before u wash them? Washing them first would makes more senes. Thanks for the video.

      Hi there! By washing first the chili will start to rehydrate slowly. We don’t want that. By toasting when dried we get a much better result in flavor. Hope this answers your question.

      I don't even rinse them at all ha ha! Unless they are really dirty. If so, I would rinse them Before (like you said). Then, let them dry before roasting them. Anyway, these are good Chilaquiles. ; ) The Puya chiles add that picantito!!

      You can use all guajillos or if you like spicy chiles árbol would work as well.

    I like your channel. Yet I feel that the best cooking channels give precise measurements. For example the onion you show would be considered huge around here. Giving measurements in grams, even with things that doesn't really have to be that precise puts us all in the ballpark.
    I hope that you add this valuable step to your channel.

    Chilaquiles should not be crunchy EVER. They should be soft and easy to cut with the side of your fork. You can also add shredded chicken or use a salsa verde instead of red chili sauce.
