Years ago when my family was struggling with having enough food I would make these. When I was 15 my hispanic neighbors showed me how to make them with any meat type. 3 adults and 5 kids all boys tamales helped us get through scarcity. Only difference is we used ancho chilies and red ones . Would end up making like 300 at a time but we would freeze the extras . Am thankful for the knowledge they passed an we all still love homemade tamales!

Making them with my grandma and mom, grandma always added one penny to the bottom of the steamer. If you hear the penny rattle, you know that there is plenty of water. If you don't hear a rattle, it means it's getting dry, and time to add water. I make these every year for family and friends! Thanks for your tips!

    • @olgaharrell3176
      @olgaharrell3176 2 года назад +27

I was wondering how I'd know since you cant see the bottom. I think I'll see how many cups of water it takes to keep it Under the steamer thingy so they dont get wet.
Maybe I'll add a quarter for inflation 😉
      Hahaha 😂

I made these for the first time on Christmas Eve with my sisters. We made about 130 tamales which took us about 6 hours since it was only 3 of us preparing them. We made small balls of masa and used a tortillera to spread the masa on the corn husk. They turned out amazing! I definitely recommend this recipe. Thank you!

Your tamales look delicious ,I make mine using fresh masa . You should have mentioned , that you can freeze them raw , a dozen at a time and store them in a gallon size freezer baggie . So when you feel like eating tamales , just steam them frozen , it will take longer to cook , maybe a half hour more. They will taste like you just made them that day .😋

I grew up with the tamale tradition every holiday with my family and relatives. I live in a different city now and made them for the first time by MYSELF. It is a very long and exhausting process (no wonder we always had about 10 of us helping!). Homemade is totally worth it and so much better than store bought. I made this recipe yesterday am very pleased with the results. To get more corn flavor from the masa I added about a cup of frozen corn finely ground in the food processor. It really added some sweet corn flavor to the tamales that was missing from the last batch I made.

Of all the videos I have seen on RUclips you are the FIRST to show how to close Both ends of the Tamale like my grandmother taught me as a small boy. I have seen one maker of Tamales use a fold and tie method which is OK but so time-consuming compared to you and my Grandma which is the best and fastest still doing an excellent job. thank you for our video.

Gracias' for the pork tamales recipe, my mother used to sell hundreds of dozens. Very similar to yours, but she used to put the molcajete upside down on the bottom of the pot and stacked the tamales in a vertical angle leaning against the molcajete to cook evenly, and prevent flattening. Love your cooking!

I made these with my daughter for Christmas. I used to be part of the family tamale assembly line as a child, but this was my first time making tamales from beginning to end on my own. I am half Mexican (the half that has my heart!), but due to family situations the recipes did not always come down the line. My mom was so pleased that I was making them and my daughter told me that the house smelled like Christmas when she woke up and the corn masa was in the air. We were so happy we made another batch for New Year's Day! Thank you so much for sharing your talent and recipes. You have helped me restore a family tradition.

My wife (an excellent cook of several "world cuisines") had never made these before but did this weekend. She knows how much I like them and was a bit hesitant at the daunting task to say the least. Well, if I could upload the picture she took of the first one she "broke" in half like you do at the start of your Lesson, I know you'd be proud. They are the best I've ever tasted and she is so happy with them, too, (she's never been a big fan of Mexican cuisine, actually) she is promising to make them as our Neighborhood-Christmas-gifts next year! Bravo, Rossana! (Today she's going to make your Mexican Rice to go with the leftovers that we aren't freezing for later).

My home growns were a little hotter and not quite as smoky but still very good. I did not add the chiles de arbol since I had some heat already. I think the climate I am growing them in has a lot to do with it. It's a moist heat here in Kansas, not a dry one. I used half of a pork butt for the meat. I'm 50 now and last time I made Tamales all by myself was when I was age 19 - it has been a LONG time. This looks like what I did back then so I'll follow along. ONE step at a time. Tonight, I'll just cook the pork and have that ready! THANKS

I'm making these right now. Just got done making the masa. I'm from a very typical American white family and my husband is Latino. He requested homemade tamales, so I decided to take on the challenge. I've never made them before so thank you for making this recipe very easy to follow! I'm excited to see how they turn out.

I made these for Cinco de Mayo ‘23. HUGE hit. Wish I had those few hotter peppers, as the tamales were too mild for my taste. Yes, tedious. I understand why one would have a tamale making party 😅. I would make them again - maybe once a year, but I promised my brother that I would make them with his visit in September. Thank you. Easy to follow instructions. 💛

After watching several tamale-making videos, this one by far is the best demonstration I've seen. Thank you so much for this video! I'm not so intimidated now to try making these for my first time. I'm doing this by myself and have already prepared the meat in the sauce one day ahead. It was important for me to find a video that showed the consistency of the meat in the sauce (how thick or watery) and of the masa and I found it in this video. I'm very much a visual learner. Today I'll be making the masa and fill the husks ready for cooking thanks to your video. Merry Christmas and Feliz Navidad!

I made these last night and they were 🔥I did not make the garlic paste with whole cumin in the molcajete and it still came out delicious. I omitted the Chile de árbol (I made 2 different salsas for hot preference ). Also, I did have to add more cumin (I wanted a more powerful and stronger taste) and I also added chicken bouillon after the sauce was made (after the taste test).

BUMMER! I spent two days on my batch, and I would have been ABSOLUTELY HEARTBROKEN if I ruined them.
Do you know what you did wrong? I cooked mine in an electric pressure cooker for 30 minutes with a 10 minute natural steam release. No matter how you cook them they need to sit and cool so the lard/masa 'sets'.

Great video. Excellent editing, great shots. Great timing. The process reminds me of my aunt's tamales even the molcajete and the cumin garlic paste. Everything looks just right. My mom always makes that paste. We put a mug upside down at the bottom so the water doesn't get into the lower tamales to make them soggy. Ya me dieron ganas de hacer yo también. Me inspiraste! Thank you for this. ❤
