I use to make something similar to this, but instead of tomato paste, I used chargrilled red capsicum, plus a sprinkle of Italian herbs, or fresh oregano and thyme, along with the bacon and cheese. All of my son's mates use to love having them.

I wanted to see how cooked the bacon was. I can’t believe it would cook completely in that short a time at that low of a temperature. All that earlier prep time wasted and not get to see the inside of the completed food. Looks like it could be good but I’m not willing to take a chance and have them come out with partially cooked bacon inside. Please show the inside!

I would also pre-cook the bacon. Can’t believe it’s fully cooked. Also, the prep time is a bit much.
I would add some rehydrated minced onion and some garlic powder and Italian Seasoning to mine.
