      Chicken piccata is a favourite in my house too .
      Canning be carful not to over fill. As the lids be come corrosive with the high acidity .

    I have what was my Mum's Edmonds Cookbook from 1955 so it's a bit worse for wear but, very special to me. I bought a lemon tree a couple of months ago but have since learnt that it won't fruit the first year so I'll come back and watch this again next year to follow your ideas when I actually have lemons to play with.     Oh my, your Lemon Meringue Pie looks so delicious, my mouth was watering when you took it out of the oven. A New Zealand friend of mine told me that when she got married, she was given a Edmonds Cook book as a wedding present and still uses it now. Thank you Stacey for bringing us into your kitchen, I am picking up so many tips and ideas from you. Have a great weekend.

    I am so envious of your citrus trees, especially the lemons. Lemon pepper is so good on so many foods. I don't like the bottled juice with sulfites so I get mine from Sicily.

    Oh, I love lemons! I do have lemons growing in the garden but I can always use more.
    Like you, I also have a Biochef dehydrator, and I highly recommend it. I originally bought a cheap one to learn on (and to see if I would actually use it) then moved up to my current one. So glad I did.

    My other half has a house in Portugal called Casa Limao because, you guessed it, of the massive lemon tree in the front garden. The number of times we've been out shopping and I've said something daft like "Do we need any lemons?" is ludicrous. See also figs, olives, chillis and all the herbs. We made a really good mosquito repellent with lemon leaves and olive oil. Put on the skin and we smelt like a restaurant, burned in a diffuser and the whole house did. Absolutely wonderful stuff. We preserve them in salt, Arabic style, too, which is brilliant for meaty stews. Limoncello is always a winner. Just eating the buggers straight from the tree is such a privilege for someone from northern Europe too.

    I tried zesting the peel this year and then dehydrated them. I think that’s how I will do it from now on. I made lemon juice for lemonade it is so good having fresh lemonade.

    Lovely homegrown lemons. I raided my friends tree the other week. Been sitting on bench ripening up before I could deal with them.
    Only got 400ml out but in the ice cube tray they go.
    PERFECT for a hot toddy at night. Lemon peels in the little over at 50c for 4hrs. See how it goes.
    Oranges next on the list.

    after seeing this video i dug out the tattered edmonds cookbook to make the pie for pudding Saturday night! it was so delicious that i'm making it again for next weekend haha! funny thing, our edmonds cookbook version doesn't say 1/2 C lemon juice.... just says juice and rind of 2 medium lemons, even the pastry measurements are different, however, the pie was amazing. my meringue did weep, but it was still yum. thank you for the inspirational videos.

    You are SO LUCKY to have those lemon trees, how very special! I have been juicing 5-7 lemons every week as I have a lemonade problem LOL. I have a 46oz "thermos" and add four Tbspn fresh lemon juice, 5 Tbspn raw honey (or to taste), stir well. Fill halfway with ice, then the rest of the way with filtered water. Seal tightly, shake to mix, and enjoy. Husband is very fortunate to be spoiled by you! Love & BIG HUGS to you & Husband!

    Just remembered. If you boil your lemon rind, rinse and boil again then dehydrate. The boiling removes the bitterness but retains the beautiful lemon flavour.😮

    I've never thought of making lemon pepper, I will give it a try! We use the top of our wood burner to dehydrate in the winter. Not always exact, but no electricity either! Bless you from Tauranga!

    Ohh, who doesn't love a good lemon pie. It gets just a little too cold where we are in the US for citrus trees. So, no big bunches of lemons so I zest all citrus one at a time and leave it to air dry on a saucer. It sure helps add flavor to dishes.

      This sounds so much like in American every house should have a Betty Crocker Cookbook. The younger generation doesn't though. I have my grandmother's from the 1950s and it is well worn. She kept her home canned chili recipe paper clipped in it. That's the only chili hubby wants and still has to ask every time before he takes a bite if it is grandma's recipe.

    I love dehydating I have the 9 tray Excalibur. I like to cut thin slices and dehyrate these ans us in my iced tea or water. I use my Deis Zester to make lemon zest and add to the trays with parchment paper and top withanother netting this keeps ihe fan from spilling it all over the inside. I put in my panter when I need a bit of zest to cook with. or if i have a lot i'll powder it. Neve though of canning the juice. Cool! Thank you.     Love lemon meringue pie! Lucky hubby! You could boil the leftover lemons to make lemon syrup or lemon cordial. Adding dehydrated lemon into salt is good as well! Our chicken love lemons, though we are in the bush, not a great deal of greens etc yet!

    I live in the high desert with rabbits mice and pack rats 😢so what you do manage to grow the wildlife often manages to destroy

    I do the exact process as you to peel the lemons for peel but instead of going back over them to take the pith off with a knife, I just take it a little slower with the peeler and if you’re careful you can get the skin without pith. (80% probably 😉) so in the end, as I always said in my profession kitchens; slow down and you’ll go faster! Haha! Have a great day my friend! ❤️🇨🇦❤️

    That would kill my arthritic hands, so I always use my purple lemon squeezer that I have owned for many, many years, couldn't do without it. I did try an electric one once but the fruit slips out of my fingers when doing them so I went back to my old faithful.
    that is probably why I have had a couple of my pie plates & bowls crack in half over the years! I never thought of that & they don't mention it on the boxes. So I guess over the years they get stressed out!!
    That is one of the things I quickly learnt in my early years as a housewife, always double the mix in pies or slices etc as they never make enough of the recipe. Well, that I didn't know!! So many times I overbeat the meringue - well it always tasted yummy & lemons are one of my favourite things to cook with & eat. I found some cornflour that is actually processed from corn & not wheat as most of the cheap cornflour is in Australia. So I shall be able to make some more lemon meringue for myself the next time I get some ripe lemons on the tree providing the fruit fly, yes, you heard correctly don't get them first.
    My son gave me a box load of lemons of his tree in August 2016 & they had been attacked by fruit fly because people don't pick up rotten fruit from crab apple trees or the fruit that drops from the date palms they grow. So now western Sydney has fruit fly all year round by the looks of it. My son ended up getting rid of his lemon tree as it was a useless battle trying to stop the fruit fly. I still have mine but it is only small but gets attacked by the stink bugs.

    I have frozen some of my lemon juice so thankyou for the info about the water content in frozen juice, saves me wasting ingredients. Xxx I made tiny tart shells and made lemon curd tarts no meringue cos hubby doesn’t like it and I do (too much lol) I also bought a very fine lemon peeler which doesn’t touch the pith which wasn’t expensive and well worth it. Xxxxxxx

    Another trick: if you don’t have a juicer and your hands aren’t strong enough for juicing, use a for as an ‘auger’, it worker very well.

      Morning, the best advice as far as power use is to get a decent one. The ones with the motor in the back give a more even flow and dry much faster. These lemon peels took 3 hours and in my old cheaper machine would have taken several more hours. I hope that helps :)

      I dehydrate naturally. Have done lemon peel naturally in the summer. Works very well as does apple. I am in central Otago

    Here in US we have the Meyer Lemon which is a cross between a lemon and an orange. It mostly taste of lemin, but sweeter; it also has a brighter juice color. Do you have a Meyer Lemon equivalent in your corner of the world??

      When you held up the cup of lemon juice, I thought of this pie. I guarantee you'll love it.

    No, don’t knock on the door of your older neighbours. I have this happen to me every week. I have many citrus trees, and fruit trees, and people think they can just come and ask for the fruit. I grew the trees. I fertilised the trees. If I have too much fruit I will give it to whom ever I want. I live on a main street. It’s a nightmare having people coming asking for your. fruit. I absolutely hate it. I preserve my fruit. I dehydrate the fine peel and make citrus pepper . I donate through the Salvation Army.
    Many people who ask me for fruit from my trees are making preserves for their own profit, whether financial, or at Show Level. I had a woman who owns a vineyard asking me for my oranges ( because they are on the ground). We had a storm the night before. I gave her 2 dozen Valencia’s but I’m pretty sure she won’t be asking for more. Salvation Army for sure. Even if the staff take them home. They’re always so grateful. The pub is too. Lemons,limes,oranges,grapefruit.
