- Lebeniye Soup is a creamy Turkish yogurt soup that has tiny meatballs and chickpeas and rice in it and finished with a super delicious butter mint sauce. This soup is traditional mostly in the east side of Turkey and welcomed at all meals: breakfast, lunch or dinner. It is very healthy with combination of meat, chickpeas and yogurt.

Ingredients For Lebeniyah Soup (5-8 Serving size)
1 medium onion
250gr. ground beef
1/2 tsp salt
1/2 tsp ground black pepper
(Make a koftah with the ingredient and this yields for making two soups so you can shape and freze half of it for another time) or half the amount
3-4 tbsp olive oil or vegetable oil for frying the koftas
1/2 cup regular rice (type don't matter much but starchy is better)
4 cups hot boiling water and more as needed for the thickness
1 tsp salt
1 + 1/2 cups plain yogurt
2 tbsp plain all purpose flour
1 egg
about 1/2 to 3/4 cup boiled chickpeas
For the mint butter sauce:
1 tbsp butter
1 tbsp mint

I had this soup in 1995 in Turkey and I still remember eating it. It was the best soup I have ever had, unforgettable.

Again, this dish is found in lebanon too and is called Lebeniye (made-of-laban [yoghurt]). I am loving the connections between both these countries.

That is a really interesting recipe. I am surprised that a number of these recipes call for ground beef. I have lived with Middle Eastern people for whom lamb was the main meat source and beef was seldom used. I would think this soup would also be excellent with meatballs made of lamb.
In India where I come from , chevon as in goat meat , is the meat of choice . It too would be an excellent option .
Beef is more common in West of the turkey and lamb in the east of the Turkey

Hi, yes you should soak the raw chickpeas at night. Next morning drain the water and cook separately until soft and use the cooked chickpeas in the soup. You can cook big amounts and keep it in the freezer for other times

Wow, it looks so nice! I make the Greek Avgolemono, which has the same roots as Terbiye (Egg-Lemon-Stock) yet without flour or yoghurt. This recipe seems interesting so I will try it soon and show you how it goes!!! :)

We do this in Middle East too but we use cornstarch instead of flour ..
That is what I was thinkg of doing, starch instead of floue for lighter taste
I prepared this soup and indeed it is very healthy and delicious too... I also used grated garlic chilli flakes and dry mint for the tampering Jazaak Allah

I decided to make this dish because I was intrigued by the thought of using rice as a soup base. Normally that is some sort of meat stock or vegetable stock so to see another ingredient used was interesting. I love to experiment with cooking. Anyway, I'll be honest, this dish was pretty bland. It's a rice porridge/congee/jook with meat. You could get the same taste with regularly cooked rice, yogurt, and ground beef mixed together. No need to go through all the hassle of following the recipe. I'm not saying it's not good - I love rice and yogurt. I eat it on days when I'm lazy and don't want to cook, but as a main dish in a meal, I needed more. I ended up adding more salt, red pepper powder, and a random seasoning packet that I had lying around.

I am a vegetarian, so my “meatballs” were made from lentils, onion, and bulgur, but I fried them the same way you did and they were very good. I make a Syrian version of lebanyia. I use lamb and fresh mint from my garden when I have it. I cook the rice in vegetable or chicken stock.
I make the same recipe but I dont add meatballs and chickpeas. I also add semolina flour instead of regular flour. I eat it with bulgur salad that has chickpea too.
