    Ingredients For Stuffed Eggplant / Karniyarık:
    For the stuffing:
    400gr. ground meat (beef or half mutton)
    2 medium onions
    3 tomatoes
    3 sweet green peppers
    handful of parsley
    1 tbsp each tomato and red pepper paste
    olive oil
    salt, ground black pepper, and red pepper flakes to taste
    For the eggplants
    10-11 medium same size, thin eggplants (about 1 kg or more)
    salt to rub
    paper towels
    vegetable oil to fry
    For the sauce:
    1 tbsp tomato paste
    3-4 tbsp olive oil
    about 2 cups boiling water
    (I used 40 cm round baking tray to cook, it is OK to use a regular tray or even you can cook it in a shallow wide pan on the stovetop)

    This is my husbands and mine favourite dish...... my husband is Turkish so when I got married 30 years ago I learned to make it. I make mine exactly like you do.... Afiyet Olson!!!!

      6:55 I think they will taste differently.
      The purpose of this stage is partly to soften the eggplants enough to be able to stuff them.
      That's my opinion after trying this recipe...
      Frying them seems a bit messy but it adds its flavor.

      My mother in law is Lebanese and they have the same exact dish called sheikh el mehchi but she adds pine kernel to the stuffing ,yummy, no need for green pepper, they are jammed one next to the other not necessarily arranged that way, but it's beautiful to see this flower shape dish

    Salaams sister, I tried this Karniyarik recipe for the first time today with your rice and orzo pilaf recipe. I had to cook everything without tasting because of Ramadhan. I was worried because it was my first attempt, but Alhamdulillah, everything came out perfectly from just following your instructions. My family absolutely loves it. You get 5 stars (if I could give them to you on RUclips), a thumbs up and a subscription. We finished off everything with some fresh pistachio lokum, btw.     Any dish with eggplants and meat is delicious! In Greece we have the same dish but instead of tomatoe sauce, we add bechamel cream on the top of the eggplants 🙂 It is called παπουτσάκια (papoutsakia) which means "little shoes".
    Then, we have a dish with eggplants and tomatoe sauce, but instead of meat, we fill them with an onion-garlic stuffing (I think you have the same in Turkey, we even call it in Greece with its Turkish name which is "imam baildi") 😁

      @Allen Iekanjika I don't think I needed your reply, but thank you 😂 it's not a correct thing to say, that food is "plagiarized", especially when there are centuries of domination and culture melting pots. Of course some dishes will be very similar, I'm Italian and I've encountered dishes that are similar to ours in Turkish cuisine, and I'm sure I'd find some in the Greek one too. Same goes for China, Korea and Japan: all of them share some dishes, but they got personalized in time, so the sushi is not the same as gimbap, while still very similar. It's hard to say where a dish comes from when its recipe got lost in the night of time, so unless you were born centuries ago and you know for sure, which I doubt, I invite you to reconsider your opinion.

    This is just so beautiful! I’m Palestinian, we eat very very similar (for obvious reasons). Definitely will be making this for my family! We have a pretty similar dish but we stuff the eggplant with the rice and meat. We also don’t typically use red pepper paste but I just bought some and can’t wait to use it. Thank you for this!       I think what you described is dolma and we make it in turkey too it is stuffed vegetables with seasoned meat and rice. This is a different dice.

    This dish was the one i liked the most when i traveled to Turkey. I have made this recipe today! It is really good, i have used regular green pepper, since where i live we don't have the turkish sweet green peppers. Also changed de red pepper paste for a little bit more tomato paste. Really good!! Thank you a lot for sharing you recipe!! Next time i will make your red pepper paste recipe and try the recipe with it!

      Our familiy always makes it with domates salcasi aka tomato paste. It is a preference some turks use biber salcasi aka red pepper paste but I like the taste of tomato paste more.

      @@zuzu.fonseca you have different ones you can have sweet red pepper paste, and the normal one everyone else uses red pepper paste and that one is spicey.

      hocus pocus Yes I went to turkey in December and sometimes you have to go online for the spices. I bought some sumac, mint and pomegranate molasses And I use them all the time now!

    The recipe was very good...but plz upload some vegetarian dishes of Turkey...I'm an indian and big fan of Turkey... I wanna come to your country..but think there is not too much food options for vegetarians...if you have any recipe for vegetarians plz upload!..love from India❣️

      My mother always mixes red pepper and tomato pastes for this recipe. If you like you can use red pepper paste with some grated tomatoes, all you need to remember is adding less water then.

    We're making this for dinner for the second time, we followed your recipe and the food turns out delicious. We don't have anything that comes to mind to replace the pepper paste so we took roasted red peppers in olive oil from a jar and mushed it up into our own paste. I'd love to try it prepared in its authentic form but for now we're all very happy with how it comes out! Thanks for sharing!

    I am going to start living in Fethiye from end of February 2020. And as a person who loves to cook and eat, I am looking forward to being in Turkey again. One thing is sure, Turkish food has a lot of Low and No carb delicious keto dishes. Something I specialise on.
