Ottoman Sherbet - Turkish Fruit Drink

  • Ottoman Sherbet is a natural homemade drink made with plums, cherries, and spices. It is a very refreshing and intense flavored drink. You can experiment with a different mix of fruits too. Since I had grapes at hand I used some for this one. Sherbets (drinks) have a very important role in Ottoman cuisine. In the modern days of Turkey, it is most popular in the month of Ramadan, but nowadays begin to get more attention in other times too :)

    Ingredients For Ottoman Sherbet:
    500 gr. cherries (fresh or frozen)
    500 gr. plums or a mix of plum and dark grapes (I used 300gr. plums and 200 gr. grapes)
    3/4 cups sugar
    1 cinnamon stick
    3 cloves
    a slice of lemon
    1 liter of water + 1-liter cold water

    I love this recipe! My grandmother usually gets lots of plums from the trees during the summer, so she always prepares a similar drink in a more concentrated version and freezes it in smaller portions, and then she adds water and waits for it to melt ✨ this is the taste of my childhood summer 💕 (I'm Italian)

    In india and pakistan we have this sharbat named as ROOHAWZA, whish is so refreshing and you will find in each and every house of both the nations and i bet you once you will try it you will be amazed and will become addicted to it..

    I'll ask my mom to make this and drink this as I watch Ertugrul on Netflix. Love from India. In India we make a version of this called Rooh Afzah. Rose petals are also added in it. 😊😊

      Turkish Food Travel In Ertugrul series Halime serves this kind of red sherbet to Ertugrul. Sadettin Kopeck also drinks this type of red sherbet. Whenever those scenes come, my mouth fills with water 🤤🤤, I live in India and its hot in here so I always want to drink that Red Sherbet 🤗.     That looks delicious Aysenur... I've never seen that type of drink where fruits are cooked to make it... In America we don't cook fruits to make drinks, we "crush" or grind them to extract as much as we can... We cook them only when we make some types of desserts 💖

    I have made something very similar from one of my medieval cookbooks. The clove and cinnamon particularly add deliciousness :) I also make a vinegar and mint syrup that I cut with water. Everyone who tries it asks for the recipe. These are so refreshing in summer. Your pitcher and glasses are wonderful.

    It seems to me that you're growing more and more confident when you present your recipes, your voice is much more relaxed. I'm really happy if that's the case, I have never studied all the recipes of a channel like I do with yours. I think cherry season is over in Italy now, but I want to try it with berries.

    We do this in Poland 🇵🇱 too, using either plums, cherries, strawberries, rhubarb, apples, pears, apricots, peaches or currants. Yum!

    Hi. This seems refreshing. I believe in Eastern Europe and some Asian countries they have similar variations. After all, the Ottomans ruled many countries for many centuries, and I'm sure in the end, culinary cultures mix!

      @Fahim Hussain Probably not? Kompot is made the same way to start; boiling fruit and adding sugar, but the difference is that you keep the fruit in and consume it. It's perfectly good for you! The spices are a nice touch here and probably make it complex though.

    It looks delicious 😊 From a friend who is Peruvian, I learned to make a drink using the peel of a pineapple, apple chunks and lemon peel also using cinnamon and cloves. In this Peruvian recipe, they use purple corn (a variety they have) that gives the drink a purple color. They also drink this cold. It's called CHICHA MORADA

    I've been making Hibiscus flower sherbet the last days and my family has loved it, basically is the same procedure: boiling the hibiscus flowers with cloves, cinnamon, some lemon juice and then adding sugar. I´ll definitely try this one in shaa Allah.

      Hibiscus tea is really delicious and it’s known for its medicinal properties for lowering high blood pressure.

      @@FaadumoArdo Yes. You will need:
      2liters of water, a 2-4 tbsp of hibiscus dried flowers , 2-3 cinnamon sticks, some cloves, 1lemon's juice and 2 cups of sugar (it's up to you the quantity of sugar you want to put in it.
      The first step is to boil the water with cloves and cinnamon sticks for 5-10 minutes, then you'll add hibiscus flowers and lemon juice, after a while (maybe 2-3 min) add sugar and mix everything well, you will let everything cook for around 15-20 min and then you will let it cool.
      Once it's cool you will strain it two or three times and if you want you can press the hibiscus flowers with a spoon to get more flavor, then you will put it in the refrigerator and when its completely cold you can serve it with ice and decorate it with some lemon slices. I highly recommend it as a summer drink or also to break one's fast in the month of Ramadan.

    When we say sherbet , it is a great range , it is 300 kind of sherbet in Ottoman cuisine , this receipe is just one kind , you can do sherbet with many differnt things from differnt vegetables , flowers , fruits like popy , rose , basil , any kind of fruit like apricot , sour cherry , strawberry , raisins , orange , peach , hibiskus , raspberry , blackberry , lily , lotus , quince , lemon , tamarind , vinegar , cinnamon . ginger , asparagus , liquorice , cranberry , pomegranate , grape , sour grape , and many others.

    Thank you for sharing this lovely drink Aysenur it is something I remember from my childhood. My Turkish mama used to make another drink which was fizzy and tasted like orange blossom and smelled like neroli oiI.
    I can’t remember what it was. Does anyone Turkish on here know of a drink like this ? We lived in a small village and we drank it often whenever she made it?

    In indonesia, especially in north coast of java, we make it with pineapple, manggo and kedondong. Then we use palm sugar, chilli, salt and crashed ice😁😁

      @@babagama4232 just peel and slice the fruits. then boiling water with 1 litre of water, a half cup of palm sugar, a cup of sugar, sliced chilli as much as you want, and a half teaspoon of salt. After it boil, pour to those sliced fruit. And then, you should wait it to get room temp before you enjoy it with ice.
      it will be get perfect taste if we have mature pineapple and kedondong, and halfway mature of manggo.

    In the Caribbean & Latin America there is a spiced drink like this, but instead of fruits it is made with hibiscus flowers (a.k.a. roselle, Jamaica, karkade, sorrel, etc.). The spiced version is especially popular during Christmastime.
