I don't think I've everrrr followed a recipe to a 'T'... I always have to throw in (or take out) the parts we dis/like and or mix 3+ recipes I came across cuz they all offered something I liked...
Sometimes it sucks cuz months ora few years later I be like 🤔🤔🤔 What was that one thing I cooked 🧐🤦🏼♀️🤷🏼♀️ n I can never remember or make it the same, cuz I just add whatever sounds right at the time 😅

I like the fact that you sear you meat. I’ve seen some videos where they don’t do that and it drives me nuts... searing the meat is an important step to this Recipe. Adding some color and crisp to the meat is important. 🐂🍅🧅♥️

The peppers you used are they very spicy 🥵 or medium spicy 🌶. Want to try making but my stomach cannot take super spicy.
I'm happy you said this is your version of Birria. Because this is NOT the traditional Birria flavor profile.
Birria
Has Guajillo, Pasilla, California and Cascabel chilies.
No tomatoes are used
Traditional seasoning
peppercorns
Bay leaves
Cinnamon stick
Whole cloves
Sesame seed
Everything mentioned above is toasted in a pan a bit of oil is added then,
Garlic
Onion
Mexican oregano, it's different than Italian.
Cumin
Granulated chicken bullion
Are added along with 1 beer and water to cover boil for a half hour until all are soft then Everything goes into a food processor to create the salsa. It is not strained and yes the bay leaf and Cinnamon stick goes in too. Don't strain no need many add Guajillo chocolate as well. Its important that the meat has a bone that develops the rich flavor. No beef bullion necessary.
Salt, pepper and garlic salt your meat then rub with the salsa put in a pot cover with chicken bone broth and simmer for 3 to 4 hpurs.

Don’t use olive oil to fry meat it doesn’t have a very high smoke point and if it’s heated to hike and real ease a toxic chemical avocado oil has a high smoke point tho :))
