2.5 lb Chuck Roast (or boneless short ribs)
8 Arbol Chilis
2 Ancho Chilis
1 can chipotle chilis in Adobo Sauce
2 tbps Tomato Paste
2 tbsp brown sugar
1 cinnamon stick
1 white onion
2 cups beef stock
2 tbsp garlic paste
salt, pepper, garlic, onion powder, marjoram, thyme, cumin, chipotle chile powder
Corn Tortillas
2 bay leaves
8oz Queso Melt Shredded cheese
Cilantro
Directions:
Begin by allowing your meat to come up to room temperature. Remove seeds and stem from chilis and rehydrate by adding them to boiling water and letting them simmer for 10-15 minutes. Remove from water and add to blender along with 1 can of chipotle chiles in adobo. Add about 1/2 to 1 cup of the water from the chiles to the blender as well. Next, add brown sugar, marjoram, thyme, chipotle chili powder, salt, and cumin. Blend mixture until it forms a paste/sauce consistency. Taste and adjust flavor to your preference. (Dice onion)
Cut chuck roast into equal size pieces and season heavily with kosher salt. Heat dutch oven or skillet to high with avocado oil. Sear meat on all sides until a nice crust develops. Remove meat and turn heat to low. Add diced onion and cook until tender. Add garlic and tomato paste and mix to incorporate. Next, add in 1 cup beef stock and combine. Add meat back to the pot and then cover with your sauce. Stir to combine. Season with salt, pepper, garlic, onion powder as needed. Add cinnamon stick and bay leaves. Cover and place in the oven at 325 for 3-4 hours (time will vary depending on size and cut of meat and temp used. 350 will cook faster - meat is done when it shreds easily with a fork)
Once meat is for tender, remove from sauce and fish out cinnamon stick and bay leaves. Add more beef stock to thin the sauce and make your consomme. Simmer for 10 minutes or so and skim the fat off as needed. next, shred your cheese and get your skillet hot. Add some cooking oil to the hot skillet. Dip your tortilla into the sauce on both sides and place onto hot skillet. Cook for 30-60 seconds and flip (looking for color). Add cheese, beef, and more cheese and then fold tortilla over and press down. Flip once and cook for an additional 30-60 seconds and remove. Serve with consomme for dipping and top with cilantro.

I'm a gringo delivery driver and I always wondered why I saw lines of 20+ at a food truck at one of my stops. I saw men stand around dipping tacos into styrofoam cups and tried it one day. Almost life changing. Such intense satisfying flavor! Can't wait to try your hints and take on this dish!

Made these today for my husband’s birthday! Only difference is that I shaved some time off and pressure cooked the meat. Everything turned out great and we are in a food coma as I type this 😂 we’ve made a few other recipes of yours and they are wonderful.
What setting did you use the pressure cooker on?

I tried it once. The flavor was on point. I had a problem with the tortillas breaking apart while attempting to brown them. I dont think i cooked them long enough to crisp up b4 i flipped them. Gonna try again tomorrow and im gonna double up on the tortillas and put some cheese between them and build from there. Glad i found this recipe. It made me seek a Mexican grocery store. And i found a gem in my city, they have EVERYTHING a person would need for mexican cuisine. They even have a restaurant within the store. I havent tried it yet
I learned the strategy is to wet the tortillas with meat sauce and a little oil. They won't brake.

Just tried birria tacos for the first time recently from a local food truck that had been recommended. They were pretty good, but honestly I was expecting them to be better. But yours look incredible. I have no doubt they taste better than the ones I had. I guess I need to give this a try myself.
Theres a ton of different versions of these. You can find people using several different kinds of chili and combinations of spices. Worth trying a few variations that sound interesting to you and seeing what your preferred style is.
This recipe is an absolute banger ! Tried it this afternoon, and it's definitely going down as my favourite.

I have been searching for a Mexican restaurant in Miami that makes these tacos and have not found one near me. This came up in my recommendations as a gift, I am going to watch this multiple times, write down the exact ingredients, and do this myself. Pray mine looks as delicious as this!

Brother, thanks for sharing this recipe. I have watched literally dozens of Birria taco videos on RUclips and decided to try yours this weekend. It turned out fabulous! I don't understand the people that boil the beef. They are losing so much flavor by doing that. The sear adds so much to this recipe. I followed your recipe exactly, however, I did add the onions and cilantro to the top of the taco while frying before flipping it. Worked great. I also like the fact that your consommé is thicker; some are like water and it doesn't cling to the taco like yours. Thanks again!, SO GOOD!!!

Lemme tell you something SIR. I made this and it was exponentially better than the one time I’ve had it a restaurant. I didn’t have marjoram so I left it out and it was still great. I made quite a bit, so I’ve eaten it 2 days in a row as tacos and now nachos. Opted to add a chimchurri on top as well and that just elevated it for me! You’re 2/2 so far (also made your candied yams-torch!) so imma stick beside you 😂 Thank you!

The sauce turned out wonderful though I didn't get the brown crust on my beef at all. Just something I have to work on. I'll like to blame it on the stove but maybe not. By the way I'm subscribed! FYI queso means cheese. Mexico has Oaxaca cheese that melts great (ex. used in quesadillas), Panela, Queso Fresco, Manchego, etc.
