My inbox has been filled with the request for a step-by-step recipe for the famous Birria, Consomme (broth), and Tacos. If this is your first time having this dish you are in for a treat. Birria is a flavorful stew. Traditionally Birria is made with goat or mutton. My family prefers beef and chicken unless we are in Mexico eating authentic Birria. Birria de Res/ Beef Ingredients
20- Cups of Water
2-Pounds of Beef Bone
5-Pounds of Chuck Roast (Diezmillo en troso or Chuck Steak)
1-Large Onion or 2-Medium
1-Whole Garlic
10-Medium Bay Leaves
10-Carrots ( add half the carrots first. This will help enhance the broth flavor. The carrots were my mother's special ingredient our family's Lil secret, and you will not see carrots in Birria sold at restaurants. Trust me you want to try)
10-Guajillo Chiles or California/ New Mexico
3- Tablespoons Chicken Boullion
1-Tablespoon Salt

Birria chili oil ingredients ™️
1 cup Canola oil or oil of choice
4 Guajillo chiles or 3 Tbs guajillo chili powder
2 medium bay leaves
1/2 Tbs Mexican oregano (1 Tbs if you love it!)
2 Tbs chicken bouillon
2 tsp black pepper
1/4 ground clove
2 tsp garlic powder
1/4 tsp sugar
For a spicy oil add suggested amount below
10 spicy chiles of choice such as chiltepin, pequin, puya, or Cheyanne
Toppings
1/2- Chopped White Onion
1/2-Bunch Chopped Cilantro
1/4-Finely Chopped Green Cabbage
Lemon or lime to taste
Birria Tacos Ingredients
1-Cup Mozzarella or your favorite melting cheese such as Munster and Oaxaca
The desired amount of Corn Tortillas

Just wanna say thank you! I’m here stationed in Korea and I made this for a grill out and everyone loved it!! It’s already hard enough to find Mexican food here so from hand making the tortilla to cooking the birria, this was the most rewarding meal I’ve made thus far! Will be making this often.

I made birria for the first time today. My husband doubted I could make it cuz he says it’s difficult, because not even his mother can make it. My husband grew up in Tijuana. Let’s just say thanks to your recipe he loves it. I proved him wrong 😏

Tijuana has amazing birria I get what he was saying lol If you have some leftover, you can freeze it. make sure to take the onions and the carrots our before freezing because when you defrost it, it won't be so sweet. I did use all the same ingredients but added some of my own. It came out amazing. It doesn’t taste gamey because I used the chuck roast. Usually if they use the deer meet then it has a gamey taste.

I made this last night and it was wonderful ! The chili oil was also AMAZING , I put that on warmed naan bread that I had on hand and it felt positively addictive. I couldn’t stop eating it . My husband raved about the entire meal as well . I also learned soooooo much watching the video. I’ve had a bit of insomnia lately and I’ve recently discovered this channel . Was raised in El Paso, the elder that taught me said the marrow bone made the richest. We just pull out the bay leaves and meat/bone. Then we would chop all veggys in blender or stick emulsifier. Add back pulled meat and enjoy! Thick, rich, and the aroma that fills the house,,, makes a house a home!!! Thank you for bringing back those good memory’s !

The first time I used this recipe, I never wanted to look at any other birra recipe! It is still my favorite birria recipe to date! Every time I make it, I always get told that it's way better than the taco trucks or restaurant! I always come back and watch this video when I'm in the mood for birria. I've bought dried Guajillo chilis from the grocery store and saved some seeds from it. Planted them the following spring and they germinated. Now I grow my own Guajillos. Tried with several other dried chilis from the store and all of them germinated except Arbols.

I am a gringa. my husband is a Guatemalan cook. I never had an abuela to teach me to cook latin food. Hubby had never tried birria nor had I but I wanted to cook him something he didn't know how to make 🤣 this recipe has made me famous with all my friends. First time viewer here. I love your style, your personalities, and how you keep it authentic to your family. I really loved how you stressed the importance of using the Beef Bones. And, I really loved (unlike most other channels) that you don't see the need to add music in the background. I love hearing the oil sizzle, the scraping of your grill or pot, It's like I'm standing next to you in the kitchen. So, anyone else reading this, make it a habit to ask your Butcher for bones, you'll come to understand the flavors they add. If you see your store has bones, just buy them, freeze them until needed. aaron acosta ok so I made it twice with the carne de res and couple days later with chicken because I’m not a fan of any res it was more for my husband he LOVED THEM. When I did the chicken one I boiled the garlic peeled not whole like the first time and blended the garlic with the chile because I was starving and said fuck it . 😂😂😂 I liked that one just a little bit more! But check for salt I had to add like one more teaspoon of the chicken bouillon but NOT much. Her recipe is pretty much on the money

@Steph - I made this last weekend & my family happily ate it up for 4 days (I doubled everything)! We did tacos, we did chilequiles (your recipe, of course), a stew where I added the carrots back in & added rice.... we did it all with the original dish. This is the best recipe I've ever made from YT ❤️
Prepared this recipe, and it is MONEY. Want to share that I took the leftovers and prepared Birria chimichangas, then the next day took the leftover consomme (with the beef, garlic, carrots and onion) and pureed it with a hand-held blender for a sauce for tacos. Thank you!

I spent the day in my kitchen, watching this video over and over again, making my homemade corn tortillas from your other recipe for those, and making my Birria- and I am now experiencing the food coma you speak of at the end of the video. It was sooooo worth it. With the homemade corn tortillas, the flavor with the Birria reminds me of really good beef tamales. The consommé is on point, girl!!! I could bathe in this stuff!!! I’ve made this multiple times now. I have to tell you, our mouths water the first 15 mins of cooking. It’s definitely a recipe that brings the family together- the immediate eye rolls to the back of the head and the satisfying moans (mmmm), and let’s not forget the compliments of how the food tastes. I grew up in California and Arizona, and my husband grew up in Texas. But when my husband joined the military 11 years ago it has taken us far, far away from the Mexican food that we love so much and grew up with. I made this and it’s AMAZING! Best birria I have ever had and this is counting the restaurant ones.
I only used 2.5lbs of meat but used the same broth ingredients and portions to use for soup. I cooked it for 2.5 hours total (after 1st hour took the chilies out and blended them then put it in for another hour and a half) and it came out so good. And so good as a soup too!
4 years later and this is still my go to! Last night on Valentines Day/ anniversary my husband and I went out for Mex y pues el, he ordered the birria tacos y condume and girl he said mine (yours) was waaayy better and that the restaurant's counldnt even compare y pues it's the day later and here I am again to get all the deets otra vez 😂😂 Thank You both for this delicious recipe!!!! I made this for our holiday meal today and my GOD I've never had such delicious tacos! 2 tacos and 1 bowl of consomme and I feel like I won't need to eat for days. It was so rich and tender. The only changes I made was to brown the meat first, then deglaze with garlic and onion before adding water and stock. Put the meat back in and followed the rest of the directions.
I made the chili oil a couple days in advance, it might be a new staple in our home!
Omg.. my family is relentlessly known for making birria on special occasion. My grandpa was the birria king (May he Rest In Peace) and he passed it on to his daughters.. I’m still waiting in line for the recipe.

After seeing these tacos on an LA food truck video I was obsessed with having one. After not being able to find a place that served them, I looked to RUclips and there you were. This recipe is AMAZING. Now, I have a place across the street from my house that serves them. But I don’t go there.. why would I when Steph taught me how to make them myself. And ten times better. Anyone on the fence about trying this recipe, DO IT. You will not regret it.

I made this Birria tonight. I've never used guajilla chiles before now. It certainly imparts a nice flavour and colour, but no heat. I'll remember that for next time. Definitely will make this again. It was an easy recipe to make. Thank you for making Mexican cooking look so easy!

Hey Stephanie and Cloud, I know this video is from 2 years ago, but I wanted to add my comment in case someone out there isn't sure if they should use this recipe. I watched all of your birria recipes and could not decide between this recipe or other ones (from other channels) that used way more ingredients. We were at the store trying to decide and my daughter asked Siri to decide for us and we went with this one. So glad I did! It was very easy, I had all the ingredients and I think the carrots are part of the reason the broth was delicious, and the meat was soft and tasty. Thank you for sharing your tips too, I love watching your videos and the relationship between you guys makes me wish my sisters and I were closer 😓

I have never had Birria de Res, I live just outside of NYC, and learned about these tacos during the pandemic from you! I found your channel after searching for a Tres Leches recipe video to make for my husband's birthday and I just kept the videos playing and BAM - Birria! I'm not sure if what I made last night is what they're supposed to taste like, but DAMN, they were good none the less. Anyway, thank you again! Awww I'm so glad you enjoyed the birria amiga. Traditional birria is goat and requires a different seasoning to cook. I have mad respect for beef and don't feel that it needs to be treated like goat. I just couldn't add the vinegar to the broth. But the chili oil will fool many once a few drops hit the broth, Oh yeah!!!!
