The recipe I’ll be showing you today is mild in spice and full of flavor. You can make this recipe with cow’s feet or pig's trotter and the flavor although slightly different is guaranteed you have your Menudo lovers asking for seconds; You know how soft the foot gets amigos 😁. Just when you think this recipe can’t get any better, I’ll be showing you how to make a tasty bolillo (bread) toast that we all love to pair with our delicious soup. Now if you prefer menudo with a corn tortilla not to worry as you can always make it comfortable for your home. Make sure not to go to heavy on your chiles as Menudo has a light chile broth, not thick like as Pozole friends; Keep it light. Ingredients & Tips
4 liters of water (18 cups)
7 pounds of cow’s foot or Pork Feet (pig's trotter)- Cook time will be the same
2 pounds of menudo surtido
2 pounds menudo casita/ Beef honeycomb tripe
2 pounds beef tendon (optional)
10 Guajillo chiles
2 ancho chiles
1 medium onion (or half large onion)
6 green onions
7 medium bay leaves
2 garlic bulbs
Hoja santa or epazote/ Piper auritum (optional as its difficult to come by in the states)
2 tbsp salt (Himalayan)
To clean tripe
Water
1/2 Tbsp salt
2 limes
you can sub limes for 1/4 cup white vinegar + salt Make sure to rise thoroughly
To clean beef foot
Water
1 tablespoon salt
To clean tendon
Salt
Toppings& sides- finely chopped cilantro, white onion, limes, chiltepines, bolillo bread + butter or corn tortillas : )
1. Clean and remove all fat from tripe- let soak for 10 minutes -rinse thoroughly
clean beef foot and tripe rinse thoroughly
2. Add water to the pot and bring to a boil- continue boiling for 10 minutes- then remove impurities
3. Add salt, onion, garlic, and green onion-
-Place a lid-Continue to boil for 2 1/2 hours on a low heat
4. Roast guajillo and ancho chiles- remove seeds- Boil chiles in a pot of water for 8 minutes till soft- Add 3 cups of Menudo broth from your pot to the blender- Add chiles and blend till smooth
5. Stain blended chiles to your broth- Add tripe and bay leaves
Place a lid Continue boiling for 1 1/2 hours on low heat
6. If this is all the ingredients you enjoy in Menudo turn burner off- Add Oja Santa or Epazote (optional)- remove after 3 minutes
FOR HOMINY LOVERS WE HAVE A FEW MORE STEPS!
7. Rinse can of hominy and add to pot of boiling Menudo
Place a lid Continue boiling for 20 to 30 minutes until hominy is soft and tender
8. Turn your stovetop off and add Oja Santa or Epazote (optional)- remove after 3 minutes
9. Boom Done! Ready to serve amigos 🍲

This one by far from start to finish I’m going to make this Sunday and what I love about it the most is the paper on the lid of the pot my grandma used to do that she had the same pot. I have a feeling this will help bring back memories of her menudo. Love watching your videos
So, I actually bought the ingredients and made this today. It is soooo good. I had to add chicken bullion because I did not have cow feet. It is worth roasting the chili's and using the blender. It is so so so good. Thank you for detailed recipe and video. ☺️

Menudo is a weekly tradition at our house, because we raise cattle. "The butcher's cut" is not the most expensive pieces of meat. As a matter of fact, it's just the opposite. But over time, people have mastered how to make the most out of the less expensive portions. It's become an artform, a delicacy! For example, 30 years ago, they couldn't give away a brisket, now it brings more than a much more tender, easier to make roast. The process of a good brisket has been perfected, and an amazing, flavorful end product is the outcome.
We eat a lot of heart, tongue, and good old menudo! Thank you for your excellent video.
Let me also add, Menudo is a dish that celebrates the life of the animal. Nothing should ever be wasted when a beating heart is stopped to give one a meal! That's how the life of the animal is honored.

When I went to visit my mom, we both love Menudo so much, we would go to different places to eat it ALL day. Not just for Sundays! A true hangover cure, but I do not condone drinking in any way.
My comment was that FAT IS where the flavor is. Also the only thing we eat that is metabolized immediately. So bodys preferred FOOD.
And makes a somewhat creamier broth. Serious foodie here.

Ok, I've make your tortillas, chili powder and yesterday I make enchiladas using your recipe. There was a collective silence as everyone savored their first bites. Each person went back for seconds! I love menudo and so does my husband. I will be making this next. Although I may leave out the feet. Haha, my gram always added pigs feet and, well, I need to make it comfortable for my home. Lol!

Mother was a Master Chef with a chain of restaurants, folks would line up to eat everything she prepared, indeed menudo was literally hand selected from the local rastaria, fresh from the cow, to kitchen, unto your beautiful table setting for enjoyment. I couldn't stomach, no pun intended, I loved the hominy, and the pata, slurping on the "tetano" bone marrow..... literally, her menudo is unmatched! Everyone, will concur that their Mamas cooking is and was the finest, indeed, it is, our Queens have what it takes, "the sason", to produce nothing but the best, no shortcuts! OMG Stephanie!! That looks delicious!! Menudo was the first thing I learned how to cook when I was around 5yrs. old.. I haven’t made it in years.. I love to cook but now that I’m older I don’t cook as much as I used to.. I still make posole cause it’s easier than menudo, but just looking at this video makes me want to make some.

Anything ill do differently is add 3.5 lbs of the honey comb tripe.
Add 4-8 more cups of water
Cook very low over night
Add 4 tbl spoons of chile season

Looks so delicious. My daughter's friend gave her a bolio bread when she ate her menudo I thought it was strange but my daughter said it was so good when she soaked it in the soup. I am willing to try it like that. Love your shows

Forgot to mention: I use my instant pot to make my pata and then the pancita...and it makes it as if I cooked it for 5 hours! It cut the time to cook by over half the time. Imagine, in about 2 1/2 hours, you can make menudo. Thank you, ladies, for sharing your recipe. I love it.
