MENUDO Rojo | Perfect Step By Step ❤

  • This MENUDO Rojo is one of my favorite mexican dishes, I was brought up having this amazing dish atleast 3 times a month. I season it well just like I have been doing for years, the unique flavor of this wonderful dish is like no other. I use Beef tripe (pancita) and beef feet which is a winner! I use as many fresh ingredients as possible like guajillo chiles, Ancho chiles and New Mexico dry chiles and I season it with oregano, cumin, coriander and lots of garlic and onions along with cloves, and allspice making it the 5 star dish that it is.
    INGREDIENTS-----------------------------
    3 & 3/4 LB. BEEF TRIPE (Pancita)
    4 beef feet
    2 garlic heads (cloves peeled and blended)
    4 large garlic cloves (for blender)
    2 tsp whole cumin (ground in molcajete)
    1 tsp peppercorns (ground in molcajete divided
    Salt (as needed)
    3 Bay leaves
    5 whole Allspice (ground in molcajete)
    3 cloves (ground in molcajete)
    2 tsp ground coriander
    1 & 1/2 Tbsp Mexican oregano
    3 tsp onion powder
    3 tsp garlic powder
    9 dried guajillo chiles
    3 dried Ancho chiles
    2 New Mexico dried chiles (you can substitute guajillo)
    1 & 1/4 large onion (divided)
    2- 30oz. cans white hominy drained
    14 C. water
    1 C. chile water (for blender)
    YOU CAN USE POWDER FORM INGREDIENTS IN PLACE OF GRINDING IN MOLCAJETE
    BLENDER INGREDIENTS------------------
    SOFT CHILES
    1 tsp cumin
    1/2 tsp peppercorns
    5 whole Allspice
    3 cloves
    1 & 1/4 Tbsp Mexican oregano
    2 tsp Coriander (ground)
    3 tsp garlic powder (provides stronger presence than fresh)
    3 tsp onion powder (provides stronger presence than fresh)
    Salt (as needed)
    1 C. chile water
    ■ YOU CAN ADD CHICKEN BOUILLON IF YOU LIKE FOR DELICIOUS ADDED FLAVOR, MY RON LOVES IT. ADD AS NEEDED IF YOU DECIDE TO TRY IT.

    Raised in Houston but now in Rio Grande Valley n I use your receipe to cook for my mom. I'm retired n came to Valley to care for my mom. N mom said can't you cook tex mex 😳 but now w your help I can. Thank you soooooo much Ann

      Your Bread Pudding looks scrumptious. I'm going to make it for our Christmas breakfast and wondering if it's fine without using the sauce. Does that make it very very sweet?     Never had it. I'm from South Africa. My mother-in-law always made it for my husband. I hit the road till it was done. Was expecting my Son at the time. 🤣 She always used Curry, cumin & tumeric as well. Thank you for sharing 💐🇺🇲

I prefer honeycomb better 😍 and much tender to me, I do appreciate the ideal of using vinegar to calm the smell 🤗 ❤🙏🌺 p.s. my Mamasita taught me to cook the way her mother taught her from scratch to flour and corn tortillas etc I love cooking for my family and friends! I only wish my children would follow in my steps but have been writing a family cook book for them to have and cherish! Looking at you make yours is so close to mine! You are truly appreciated and a blessing by those that don't know how. Just want to share my thoughts much love and hugs

      great recipe, but honeycomb tripe is definitely best, and never use canned hominy (only use dried hominy) and I also add a generous amount of pig feet...been making Menudo for 30 + years...I am Caucasian but learned how to make Menudo while my wife and I lived in Rockport Texas: many Mexicans used to ask us to make Menudo for them, which we proudly did at least once a month ... yum yum. And by the way, Menudo is traditionally sold in the Mexican restaurants only on Sunday, mainly for breakfast, because it is a great cure for a hangover,

      I'd love to know your Italian version. I have some tripe in freezer just for menudo I use my ex's mom recipe she's from Mexico and delicious but wanna try Rachael's my next time. I gotta find a butcher. The only tripe I use is honeycomb bc that's the one they sell and another one not sure what it was. I made notes to look. I miss having a Mexican store close.       I like to make my menudo with half tripe and half honeycomb. I always get compliments and when I blend the chili with the spices and add one package of menudo mix

    I loooooove menudo! If cooked well with plenty of ingredients (tripe/hominy, etc.), it's to die for! I also love it with corn tortillas, butter, and salt. If there isn't any butter, I squeeze and rub the lime on the inner side of the tortilla with a little salt. Then, I rock and "roll" it!     WOW!!! I used to LOVE Tripe made from an Italian Restaurant in Brooklyn Crisis! The restaurant is long closed and I've tried it a few times and so disappointed that I just stopped!! Haven't had this in ages!! This looks amazing and soooooo healthy!!!!

    Hi Rachel, thank you for posting your menudo recipe! I grew up eating menudo every Sunday at my grandma’s house every Sunday in SoCal. With hot corn tortillas and butter!! Such great memories, I will definitely try to make your menudo recipe.

    I made this recipe yesterday, for my husband’s BD & he loved it! He said he would love it, if I made this recipe every time!❤️ I used all Guajillo peppers, reduced the coriander to 1/2, omitted the hominy, & added chicken bullion. I served with fresh parsley, freshly grated Parmesan & Italian bread to suit my husband’s taste. But, I really like the way Rachel served it. I like a little heat & the toppings she used, including corn tortillas. But, I found a recipe for Bolillo rolls & am going to try it. Thank you, Rachel!! I cannot tell you how much I appreciate you & your cooking❤️ I never grew up eating tripe & had to teach myself how to make it several years ago. We’re Italian, so I never used peppers, I used purée & Italian seasonings, including Oregano & my husband liked it very much, but he liked your recipe best! That is because, you teach all the special details that are so important & the difference between a good cook & a great cook! In this recipe, I especially liked learning how to prepare the peppers & add to the sauce & to add the white vinegar to reduce the strong odor of tripe! I wouldn’t have tried it without knowing that it doesn’t change the flavor of the recipe. So thankful for you🥰
    P.S. I usually cut the tripe into smaller pieces, but I cut it like you did & my husband loved the bigger pieces:) Also, have you seen the price of tripe today? It’s over $7 p/#😳fortunately, I had two packages in the freezer-1 on sale $1.35 p/# & 1 reg. price $2.48 p/#! Thank God! So, what has always been an inexpensive meal, is now very expensive!!

    I am not used to eating menudo but my Husband is from Houston and loves it. I'm going to make this for him and freeze the leftovers. He likes to have menudo for breakfast on the weekends. TY for sharing your delicious recipe. I cant wait to make it for him.

      @@junedeluccio6100 yes, beef feet. Some people use pig's feet , too. Totally up to you. Or, some people don't use feet at all (I made some Sat night and didn't use feet) if you click on description you can see the recipe.

    I use to eat it for a hangover😂😂. I had a friend in my younger years that brought me a container of it. After that I loved it.

    Rachel I love how you clean your food before preparation, Lol and I remember when you said your husband told you that you say a certain word a lot, I can't remember what the word was but I've noticed that you do say "see" a lot, keep showing us how to cook these delicious Mexican foods.

    My goodness, my mouth is watering. In Sonora we eat more of the white menudo with the buttered bolio but I love them both. I make it similar and everyone likes it but I think I will try it with all these little Tweeks. The Tweeks make sense, i like that you explained why you do things a certain way. Thank you so much for this fabulous recipe. Does anyone know what type of blender she uses for blending the Chiles? I'm in need of investing in a new one. 🐕🎉🎄🎊

    That looks really good I'm Hispanic but I just can't do the tripe... I've tried for years 🤣🤣.... I have to say the sound of your clock is the same one my grandmother had in her house, she just passed away on 11/28 & it just reminds me of her so much the sound is joyful to my ears....     I LOVE the smell lol my mama taught me to use pigs feet and honeycomb tripe I’ve never tried the beef feet but I may try it. Have to have onion lime and oregano for sure on top!!! I love it!! Much more than posole and this time of the year it’s the best!!!! Thank you sweet Rachel!!!

    Looks delicious. I have never seen it eaten with butter in any way, that's new for me. My mom would make it for breakfast on Sunday mornings during the Winter. We all looked forward to it.
