I think the secret that the Chinese use to make rump steaks or gravy steaks soft and tender is mainly a few things. Cutting the beef into 2 millimeter strips, at a diagonal angle and against the grain. Marinading the strips with a combination of baking soda, cornflower or cornstarch, Chinese Shoaxin wine and soy sauce mixed together and leaving aside for 20 minutes. I'm dubious that the beef in your video is tender because the strips are too big, and the only thing added as a marinade was baking soda which isn't really a 'marinading' but more of a brine solution . Washing the beef with water gets rid of the baking soda but it also washes away the flavor of the meat as well. That's why when the Chinese pour the tenderized marinaded beef into the stir fry pan, they counter-act the bitterness of baking soda with oyster sauce, white vinegar along with soy sauce and shaoxin wine rather than water to wash and rinse the beef. But the biggest takeaway from this video is the beef strips are too large (looks like 10 millimeter strips or more). The smaller the strips are, the more tender the beef will be.

This week I moved in with my daughter and I am now surrounded by my adult grandsons and their children. There will never be a dull moment now. I have an 8-year old granddaughter and two great-grandsons under the age of two. One is close to entering the “terrible twos.” 😝

My husband was very physically fit for a man in his 70s and he only mentioned a couple of times that he was tired. During a routine yearly visit to his doctor it was discovered that he only had 28,000 platelets and was 3-5 weeks from death. The doctor gave him six months if he took chemo. We were blessed that he lived 16 months but there was no hope for beating the disease-it is a death sentence. He passed more than four years ago

Made this tonight with beef stew meat, mushroom, zucchini strips, red bell pepper and red onion and it was divine!! The meat was so tender and flavorful with basic salt and pepper and that sauce was excellent!! thank you for the showing the correct way to tenderize meat using baking soda!!

I've been doing this for a while with eye of round steaks, it's a lot of work but I swear they're better than ribeye. Cover the steak visibly with baking soda, leave in fridge at least 2 hours, rinse in sink then put it in a bowl of water with a splash of vinegar for a few mins to neutralize the b.soda taste.

I noticed that the meat that you are using is very lean and indicative of the lack of fat.. Meat like flank, Chuck, Top bottom of the round are chewy types of meat. let me take you to my spot of HUNTING this time of year. I am in the woods attempting to harvest a Whitetail deer which I have just done thank you. This is my meat for the next year. It works and tastes way better with a cornstarch, sugar and soja sauce marinade. I marinade the beef 1hour before I cook it. Because then it has more time to soften up. Also the sugar gives a nice glace when roasting while the meat inside stays very moist and tender. I never have witnessed an asians using only baking soda as a softener. But each there own I guess.

Yo lo hago pero con la carne rebanada finamente y antes de colocar el bicarbonato la aplastó con un mazo ( entre papel film) la dejo no más de 12 o 15 minutos para que no cambie el sabor de la carne luego de enjuagarla muy bien por lo menos tres veces le agrego un ablandador de carne comercial sin agregar sal o adobo s gusto agregando la sal justo antes de freir

I noticed that the meat that you are using is very lean and indicative of the lack of fat.. Meat like flank, Chuck, Top bottom of the round are chewy types of meat. let me take you to my spot of HUNTING this time of year. I am in the woods attempting to harvest a Whitetail deer which I have just done thank you. This is my meat for the next year. The areas of tough meat are comparable to a domestic steer, but very difficult to tenderize, I am very excited about your baking soda approach.. to be able to convert a top of the round roast in the rear leg quarter either side to a tender morsel is the is the dream of every hunter ..This means that this cut of meat could be used as steaks..🥩 I can’t wait to try this out.. thank you very much for sharing… You have a very pleasant site to visit.. It works and tastes way better with a cornstarch, sugar and soja sauce marinade. I marinade the beef 1hour before I cook it. Because then it has more time to soften up. Also the sugar gives a nice glace when roasting while the meat inside stays very moist and tender. I never have witnessed an asians using only baking soda as a softener. But each there own I guess.

Yo lo hago pero con la carne rebanada finamente y antes de
colocar el bicarbonato la aplastó con un mazo ( entre papel film) la dejo no más de 12 o 15 minutos para que no cambie el sabor de la carne luego de enjuagarla muy bien por lo menos tres veces le agrego un ablandador de carne comercial sin agregar sal o adobo s gusto agregando la sal justo antes de freir
