Very lean meat will get too chewy, whereas very fat meat will still have unpleasant fatty chuncks. Make sure to look up a the Belgian beef stew known as 'Stoverij'. It's a similar recipe to this, but with beer instead of cream :-) Also serve with Belgian Fries and mayonaise!

That looks very good. But, I think I would substitute broth or stock for the water.
Agreed. Everything else looks really good together but the stock would add so much flavor to the meat as it's braising.

The tomato paste wasn't cooked off so it wouldn't taste nice and it looked curdled from the cream being too hot.
